    Sapa 海拔约1500米,Hoang Lien Son山脉流下的清冷溪水,为养殖“ca hoi”(虹鳟和三文鱼品种,在Lao Cai省广泛养殖)创造了近乎理想的条件。这是越南为数不多能让食客吃到真正新鲜、且风味源自天然环境而非长途运输的鱼类产地之一。如果您在Sapa停留,品尝一次ca hoi是绝对值得的体验。

    Sapa三文鱼有何不同

    市场上销售的ca hoi Sapa主要是虹鳟(Oncorhynchus mykiss),它们在O Quy Ho山口和Muong Hoa山谷周围的冷水网箱中养殖。来自Lao Cai镇养殖场的大西洋三文鱼供应量较少,价格也更贵。这些鱼类受益于常年不超过18°C的水温,这使得鱼肉紧实、脂肪含量高,且没有任何异味。与湄公河三角洲地区养殖的三文鱼相比,Sapa的鱼明显没有泥腥味。当地的吃法通常是“lau ca hoi”(火锅),或者切成薄片作为刺身,配上芥末和酱油——这是一种在2010年代中期随着国内旅游业发展而兴起的、虽奇特但行之有效的融合吃法。

    去哪里吃

    Quan Ca Hoi Thanh Huong

    地址: 20 Muong Hoa Street, Sapa镇 营业时间: 每天 10:00–21:00 价格范围: 每份 180,000–320,000 VND

    这是镇上吃正宗ca hoi火锅最稳定的地方。汤底以香茅和南姜为基础,清淡而不掩盖鱼肉本身的鲜味。建议点组合套餐——除了切好的鱼片外,还包括鱼头和鱼腩,这些油脂丰富的部位非常值得一尝。一份足够两人享用。餐厅环境朴素但干净,工作人员也习惯了为非越南语顾客解释菜单。

    Nha Hang Ca Hoi O Quy Ho

    地址: Km 15, O Quy Ho Pass road (4D国道),距离Sapa镇约15公里,往Lai Chau方向 营业时间: 每天 07:00–18:00 价格范围: 150,000–280,000 VND

    这家家庭经营的餐厅位置就在鱼塘旁边,这一点至关重要——这里的鱼从出水到上桌只需几分钟,而不是几小时。刺身拼盘是驱车前往的理由:厚切鱼片,口感冰凉,除了标准的芥末外,还配有店家自制的姜味蘸酱。实际上这里只供应午餐,因为无论营业时间写到几点,厨房通常在17:00左右就会结束营业。建议将此行与Thac Bac瀑布区的游览结合起来。

    Sapa市场鱼摊 — Cho Sapa

    地址: Nguyen Chi Thanh Street, Sapa中心(室内市场建筑) 营业时间: 每天 05:00–12:00;鱼摊高峰期 06:00–09:00 价格范围: 每公斤整鱼 90,000–140,000 VND

    如果您是自炊,或者只是想买鱼带回家,早市是最直接的选择。大约有八个摊位出售从水箱或冷藏箱中现杀的ca hoi。讨价还价很常见,但利润空间很小——整条虹鳟的价格通常在每公斤110,000–130,000 VND左右。一些摊位可以支付少量额外费用现场清理并切片。这不是堂食选择,但它能为您在餐厅点餐前提供一个清晰的价格参考。

    Hmong Sisters Restaurant

    地址: 8 Muong Hoa Street, Sapa镇 营业时间: 09:00–22:00 价格范围: 200,000–350,000 VND

    比Thanh Huong更精致,主要面向国际游客,这反映在价格上。这里的ca hoi刺身确实准备得很好——切片均匀,温度适宜,而且使用的是真芥末,而不是廉价餐厅里那种绿色的辣根膏。火锅(lau)味道扎实,虽然不如专门的鱼餐厅那样有特色。如果您与想要更多样化菜单的同伴一起用餐,这是一个不错的选择。

    Ca Hoi Muong Hoa — Quan Nho

    地址: 35B Dong Loi Street, Sapa镇 营业时间: 10:30–20:30,周二休息 价格范围: 120,000–200,000 VND

    这是一家规模较小、环境更接地气的餐厅,当地人平时午餐常去这里。这里的火锅不是共用炉灶,而是以单人陶锅形式供应,非常适合独自用餐的食客。鱼肉品质可靠,分量实在,价格也不会让您的钱包感到压力。英文菜单有一些翻译错误,但用手指点餐完全没问题。

    避雷指南

    Cat Cat村入口处周围的一群旅游餐厅——尤其是那些面向Ham Rong Street、挂着覆膜照片菜单的大型餐厅——经常供应在冷藏箱里存放过久的ca hoi。特别是刺身,问题很大:切片不均匀,有时为了掩盖新鲜度不足而呈半冷冻状态,而且价格(小份通常为280,000–380,000 VND)远高于您在其他地方吃到的更好品质的鱼。为了便利而选择这里并不值得。

    关于鳟鱼与三文鱼的说明

    Sapa的菜单中常将虹鳟和三文鱼统称为ca hoi。如果火锅份量的价格低于180,000 VND,那几乎肯定是虹鳟——这并不代表品质差,只是品种不同。真正的大西洋三文鱼价格在250,000 VND及以上。两者都值得一试。这种区别主要在您支付三文鱼价格时,了解自己买到的是什么才显得重要。

    实用贴士

    Sapa镇距离Lao Cai市约38公里,大多数游客通过从Hanoi出发的夜间火车抵达。周末晚上国内旅游团在镇上时,最好的鱼餐厅会非常繁忙——请在18:30之前或20:00之后到达以避开高峰。如果您之后计划前往更北部的Ha Giang,请注意Dong Van高原地区也有养殖ca hoi,但Sapa的产品品质更稳定,且供应更广泛。
