    大多数摊贩会用白糖或稀糖浆来调味,但甜度差异很大。如果你想少糖,可以说 it duong(少糖)。如果你想喝完全无糖的,可以说 khong duong(无糖)。摊贩们不会介意,他们早就听惯了这种要求。

    热饮还是冰饮

    这是你在摊位前要做的第一个决定。“Nong”意为热;“da”意为冰。

    热的 sua dau nanh 是更传统的选择,尤其是在北部。在 12 月寒冷的早晨,身处 Hanoi,手里捧着一杯温热的豆浆,搭配一个“banh mi”或一碗“banh cuon”,是一顿非常实在的早餐——不是那种旅游文学里描写的浪漫,而是实实在在的满足感。温暖、淡淡的甜味,还有蛋白质。

    冰的 sua dau nanh (sua dau nanh da) 在南部占据主导地位,Saigon 的炎热使得从 3 月到 11 月,冰饮成了理所当然的首选。冰饮版本会倒入碎冰中,随着冰块融化,口感会稍微稀释一些,许多人更喜欢这种感觉。它有一种清爽感,这是像“ca phe sua da”那种浓郁甜味所不具备的。

    这两个版本都值得一试。它们的口感差异很大,尝试不同的版本绝对不会让你觉得重复。

    变体:花生奶与黑豆奶

    当你开始留意时,你会发现摊位上通常不止有一个锅。

    Sua dau phong(花生奶)的制作方法与豆浆相同,但用的是浸泡过的花生。它口感更浓郁、油脂感稍强,且明显更有饱腹感。颜色是浅奶油色,而不是豆浆那种近乎白色。它非常适合搭配一根油条(“quay”),撕开蘸着吃——这种早餐组合在 Hanoi 的老城区和 Dong Xuan Market 周边尤为常见。

    Sua dau den(黑豆浆)使用黑豆代替黄豆,使饮品呈现出深灰紫色,味道更醇厚,甜度稍低。它有一种标准版豆浆所缺乏的淡淡坚果味。在越南民间传说中,黑豆浆被认为对肾脏和头发有益——这是否经得起科学推敲是另一回事,但这意味着你不仅能在街头摊位,也能在健康食品店和传统市场找到它。

    有些摊贩会轮流供应这三种饮品,他们会在手写的牌子上标注,或者在你走近时直接指向对应的锅。

    路边摊体验

    经典的 sua dau nanh 摊位通常是改装的自行车或摩托车,上面架着两三个铝锅,用燃气灶保持温热。你可以在农贸市场、学校门口、办公楼和公交车站附近找到这些摊位——任何人们需要在早上 9 点前快速解决便宜早餐的地方都有它们的身影。大多数摊位在上午过半时就会收摊。

    在 Saigon,你也会在 Ben Thanh Market 周边街道以及第 3、5 和 10 区的居民区找到固定的摊位。在 Hanoi,早晨的摊位主要集中在还剑湖(Hoan Kiem Lake)北侧,以及 Hang Gai 街和 Bat Dan 街的巷弄里。

    你不需要多说什么。伸出一根或两根手指,指向你想要的锅,指指冰桶或者摆摆手表示不要冰。摊贩会处理剩下的事。饮品通常会装在带吸管的小塑料袋里,或者纸杯中,如果摊位有座位,有时也会提供玻璃杯。

    价格

    在街头摊位,预计花费 5,000–8,000 VND。将 sua dau nanh 作为越南早餐菜单一部分的坐式咖啡馆,价格通常在 15,000–25,000 VND 左右。Hanoi 和 Saigon 的健康食品店和有机咖啡馆有时会卖到 35,000–45,000 VND,通常会打出“无防腐剂”的招牌。但街头摊位的版本确实更新鲜。

    它在越南早餐文化中的地位

    Sua dau nanh 不会与越南咖啡争夺关注度。它没有那么深厚的文化内涵,在美食文章中谈论得也不多,也不会出现在美食纪录片里。但它扮演着不同的角色:对于那些想要热乎乎、微甜且不含咖啡因的饮品,或者清晨肠胃需要温和食物,又或者预算只有 7,000 VND 的人来说,它是最好的选择。

    从这个意义上说,它是一种非常纯粹的饮品。它从不试图成为它本身之外的东西。

    总结

    Sua dau nanh 绝对值得至少在真正的街头摊位买一次尝试,而不是去便利店买包装好的版本。热花生奶搭配油条是性价比最高的饱腹组合。如果你想尝试比标准豆浆更有趣的味道,冰黑豆浆是最佳选择。
