    为什么 Sapa 的 ca hoi sapa 与众不同

    Bun Oc Hang Manh(螺肉与鱼酱店)

    在靠近市场的主路上,这家没有招牌的店面由同一个家族经营了 20 多年。柜台后的老板娘 Manh 用从市场买来的鱼亲手制作“ca hoi sapa (사파 / 沙坝 / サパ)”。点一碗糯米饭(5,000 VND)和一小瓷碟鱼酱(10,000 VND),再配上一盘生菜(空心菜、薄荷、生卷心菜),这就是一顿饭。把它们拌在一起吃。大多数当地人在早上 6:30 前就会吃完离开。营业时间为早上 5 点至 10 点,周一休息。

    Restaurant H'Mong(对游客友好,依然地道)

    石教堂附近的小店

    在古老石教堂和邮局之间的狭窄小巷里,一位 70 多岁的老大爷经营着一家只有一张桌子的小店。他家的“ca hoi sapa”是我们尝过味道最浓烈的——几乎完全发酵。他将其与米纸、生香草和醋辣椒蘸酱一起端上桌。一顿饭 20,000–30,000 VND。营业时间不固定;可以向你的酒店询问路线和时间。这里绝对值得走一趟,尤其是在冬天,发酵的气味像灯塔一样沿着街道飘散。

    H'Mong 家庭(民宿晚餐)

    Sapa 及周边地区的几家民宿提供以当地菜肴为特色的家庭晚餐,其中就包括“ca hoi sapa”。民宿老板通常会告诉你这不适合游客,但其实不然——你只需要亲自去体验。一顿包含糯米饭、蔬菜、汤和鱼酱的丰盛晚餐,价格在每人 150,000–250,000 VND 之间。请至少提前一天通过你的住宿方预订。这种亲密感和语言障碍让这里比任何餐厅都感觉更地道。

    价格与期待

    一份正宗的鱼酱(足够一人或两人分享)价格在 15,000–45,000 VND 之间,具体取决于地点。街头小贩和市场摊位最便宜;面向游客的餐厅价格较高,但分量更大,配菜也更多。大多数当地人在早餐或午餐时吃“ca hoi sapa”,很少在晚餐时吃。

    除非店家提供特定的凉菜,否则不要点冷的。加热能让气味变得柔和,并释放出风味。糯米饭不是可有可无的配菜——它是承载鱼酱的载体。单吃鱼酱味道会过于浓烈。

    什么时候吃

    早上 6 点至 8 点的早餐时间是高峰期。这时你会看到当地人——农民、摩托车出租车司机、市场摊贩——在上班前狼吞虎咽。午餐(上午 11 点至下午 1 点)次之;晚餐则很少见。餐厅为了迎合游客会营业到很晚,但当地人早就吃完散去了。

    冬季(10 月至次年 4 月)是品尝的最佳时节。寒冷会加重发酵的气味,这听起来不太妙,但实际上能让味觉体验更加敏锐。夏季(5 月至 9 月)天气较热,气味较平淡,鱼酱的层次感也会稍弱。雨季(6 月至 8 月)是旅游淡季;当地人全年都吃,但你的餐厅选择会变少。

    如何点单

    学习以下短语:

    • "Com nep va ca hoi sapa" = 糯米饭和鱼酱(基础点单)。
    • "Them rau song" = 加生香草(空心菜、薄荷、卷心菜)。
    • "Nong" = 热 / "lanh" = 冷。

    大多数地方没有英文菜单。可以指着其他食客的盘子,或者用手指比划数量。摊贩通常只收现金。Bun Oc Hang Manh 和市场摊位不能刷卡。如果你主动询问,Restaurant H'Mong 可以接受通过 Vietcombank 转账。

    如果你讨厌这个味道,什么也别说。把食物吐出来是非常冒犯的行为。礼貌地吃上一两口,说声“cam on”(谢谢),然后去吃 [pho](/posts/pho-vietnam (베트남 / 越南 / ベトナム)-noodle-soup-guide) 吧。

    实用提示

    Sapa 海拔 1,600 m;全年空气凉爽,这减缓了变质速度并塑造了独特的发酵过程。不要在游客区的纪念品商店购买罐装的“ca hoi sapa”——它们通常不新鲜或被稀释过。最好在市场购买或在店里直接吃。如果你的肠胃比较敏感,请备好止泻药(Imodium);发酵鱼酱的威力不容小觑。大多数游客要么爱死它,要么避之不及;没有中间地带。
