    Long An 位于 Saigon 以西的湄公河三角洲 (메콩 델타 / 湄公河三角洲 / メコンデルタ),大多数游客在前往 Can Tho 或 Chau Doc 的途中都会跳过这里。这绝对是个遗憾。这个省份孕育了独具特色的饮食文化——精致的河鱼食谱、来自江心岛的农产品,以及真正未受旅游业侵染的早餐市场文化。

    鱼类:黑鱼、鲶鱼和河虾

    Long An 的招牌蛋白质来源是“ca lang”(黑鱼),这种淡水鱼以其紧实细嫩的肉质备受青睐。你可以找到整条烤制、与香草同蒸的做法,或者切成生鱼片做成“ca cay”(酸味生鱼)。最美味的做法是炖汤——当地人称之为“canh ca lang”,这是一种以罗望子或青柠为底的清汤,里面加入了莳萝和根茎类蔬菜。

    在 Cho Tan Phu Market(Tan An 市 Tan Phu 坊),你能买到最新鲜、最便宜的黑鱼。这是全省最大的鱼市场,营业时间为早上 5–8 点。新鲜的全鱼根据大小,价格在 60,000–100,000 VND/kg 不等。附近的餐厅会直接从市场采购并现点现做。

    “鲶鱼”(ca tra)更便宜且分量更足——价格为 40,000–60,000 VND/kg。烹饪方法通常相同:烤、蒸或炖汤。当地的鲶鱼养殖场沿着 Vam Co Dong 和 Vam Co Tay 河(这两条 Vam Co 河是该省的标志)分布。

    河虾(“tom canh”)是季节性食材(10月至次年3月),价格不菲——300,000–500,000 VND/kg——但如果你正好在当季前往,绝对值得品尝一次。它们通常被做成咖喱、爆炒或整只烧烤。

    当地人去哪吃早餐

    清晨是 Long An 饮食文化焕发活力的时刻。别在酒店吃了,去市场吧。

    Cho Tan An Central Market(Tan An 市中心 Ly Thai To 街)是核心地带。早上 5–7 点是高峰期。你会看到摊位在售卖:

    • 夹着肉酱和猪头肉的“Banh mi (반미 / 越式法包 / バインミー)”:15,000–18,000 VND。Banh Mi Tan An(27号摊位)是当地人排队购买的那家。
    • 配有猪肉和内脏的“Hu tieu”(清汤木薯粉):20,000–25,000 VND。汤头经过了彻夜熬制。
    • 搭配炸红葱头、鸡蛋和烤猪肉的“Com tam (껌땀 / 碎米饭 / コムタム)”:18,000–22,000 VND。碎米来自 Chau Thanh 附近的碾米厂。
    • 米纸包烤鱼饼(“[cha ca](/posts/cha-ca-la-vong-hanoi (하노이 / 河内 / ハノイ)-grilled-fish)”):25,000–30,000 VND。

    一顿丰盛的早餐(汤粉 + banh mi + 咖啡)只需 45,000–60,000 VND,足够为你提供直到下午的能量。

    前文提到的 Cho Tan Phu Market 也有很棒的早餐摊贩,而且比 Tan An 人少。这里的鱼饼非常出色——是用早晨刚捕获的鲜鱼现做的。

    在别处找不到的招牌菜

    “Banh xeo (반세오 / 越南煎饼 / バインセオ)”(越式煎饼) 在整个三角洲地区都很常见,但 Long An 的版本在面糊中使用了更多的猪油,并加入了大量的河畔香草。Banh Xeo Ngan(Tan An 市 Hung Vuong 街,约上午 9 点至下午 1 点,每份 25,000 VND)的煎饼比 Saigon 那些迎合游客的版本更轻薄酥脆。用生菜包起来,蘸着鱼露吃。

    “Canh ca lang chua”(酸汤黑鱼) 是一道地方特色菜。它的酸味来自罗望子水而非醋,汤底还带有鱼肉本身的清甜。在中心市场周围的休闲面馆和餐厅里都能看到这道菜。一大碗只要 30,000–40,000 VND。市场附近 Ly Thai To 街的 Com Va Canh 做的这道菜非常地道。

    “Goi ca lang”(黑鱼沙拉) 是将生鱼片或稍微焯水的鱼肉与香草、碎花生以及青柠鱼露酱汁混合而成。这道菜通常在当地的高档餐厅和家庭经营的小餐馆(“nhà hàng”)供应。虽然不如 banh xeo 常见,但绝对值得一寻。价格为 50,000–70,000 VND。

    清炒河畔香草——Long An 在 Vam Co 河的江心岛上种植“rau muong”(空心菜)、“rau thom”(刺芫荽)和“rau dang”(苋菜)。它们通常与大蒜和发酵虾膏(“tom cot”)一起爆炒。街边摊的价格为 20,000–30,000 VND。口感清脆,略带矿物质的风味。

    游客去哪吃(以及为什么你可能要避开)

    Tan An 的主干道(Ly Thai To 街和 Tran Hieu 街)有几家小旅馆和几家“游客餐厅”——它们味道还可以,但你要为那些口感更软烂、味道更平淡的改良版当地菜多付 30–50% 的钱。直接跳过它们吧。

    避开市场广场附近任何提供带照片的塑封英文菜单的餐厅。那些挤满了当地蓝领工人且没有英文菜单的餐馆,才是你找对地方的标志。

    去哪吃(真正的推荐)

    吃鱼推荐:“Nha hang ca lang Tan Phu”(Tan Phu 坊 Phuong Trang 街)。这是一个摆着塑料椅子的简易敞篷大棚。他们早上 6 点从市场买回黑鱼,到午餐时整条烤制。点单时可以说要“nuong”(烤)。一条 1.5 公斤的整鱼价格为 120,000–180,000 VND,够 2–3 人食用。不接受预订,请在中午前到达。

    吃碎米饭推荐:“Com tam Ben Tre”(市场附近的 Tran Hung Dao 街)。店面很小,只有七张塑料桌子,每天早上 6 点至下午 1 点营业。大米来自 Chau Thanh(Long An 的一个水稻种植区)。炸红葱头非常酥脆。价格 18,000–25,000 VND。老板对说英语的游客很友好。

    吃粉面推荐:“Hu tieu (후띠우 / 粿条 / フーティウ) My Tho”(Ly Thai To 街,距 Cho Tan An 步行 2 分钟)。这个摊位是市场的一部分,不是独立的餐厅。早上 5 点开门,卖完即止(通常是上午 11 点)。汤底喝起来像是熬制了 12 个小时以上的猪骨浓汤。22,000 VND。绝对值得你早起。

    吃河畔香草和鱼饼推荐:“Nha hang Sai Gon”(Ly Thai To 街,一栋类似小旅馆建筑的底楼)。比街边摊高档一些,但食客依然以当地人为主。鱼饼是现点现烤的。空心菜爆炒得火候十足。人均 60,000–100,000 VND。营业时间为上午 10 点至晚上 9 点。

    • 街头早餐(banh mi + 咖啡):30,000–40,000 VND
    • 堂食午餐(米饭、肉类、两道蔬菜、汤):50,000–80,000 VND

    在 Long An,你只需花 Saigon (사이공 / 西贡 / サイゴン) 一半的价钱就能吃得非常好。

    实用提示

    Long An 的首府是 Tan An,位于 Saigon 以西约 50 公里处(乘坐小巴或私家车需 1–1.5 小时)。中心市场(Cho Tan An)是核心枢纽;大多数小吃摊都在步行 5 分钟的范围内。市场在早上 5–9 点最为热闹;餐厅通常营业到晚上 8–9 点。请携带现金——许多摊位不接受刷卡。如果你感到没把握,可以向酒店或出租车司机询问餐厅推荐;当地人对路过的游客早已习以为常。
