    为什么 Da Lat 的 nem nuong 如此出众

    “Nem nuong”是一道简单的菜肴:将猪肉碎与鱼露、红葱头和香料混合,用米纸紧紧包裹,然后在炭火上烤至外皮微焦,而内里的肉依然鲜嫩。听起来很简单。但在 Da Lat,情况却有所不同。

    Da Lat (달랏 / 大叻 / ダラット) 海拔 1,500 米,凉爽的空气使得烤制过程更慢、更均匀。猪肉不会像在 Hanoi 或 Saigon 的炎热天气里那样迅速变干。米纸也不会被烤成焦炭,而是变成棕色,口感劲道,几乎有种焦糖化的质感,咬下去依然柔软。此外,由于 Da Lat 的猪肉供应更新鲜(凉爽的天气能保存更长时间),馅料的味道更纯粹,不像那些在 Hanoi 交通拥堵中放置了几个小时的肉做出来的版本那样混浊。

    Nem Nuong Nha Trang(Phan Dinh Phung 街)

    Nem Nuong Tran Phu(Tran Phu 街)

    Nem Nuong Hang Be(Hang Be 街)

    Da Lat 市场(Cho Da Lat)的 Nem Nuong

    主市场的后面有一个美食广场,在蔬菜摊贩之间散落着 2–3 个 nem nuong 摊位。它们的味道即使算不上惊艳,但也发挥稳定。一盘 4 卷售价 30,000–35,000 VND。优势在于:你可以直接从市场买些香草、绿叶菜和米纸,随心所欲地定制你的肉卷。虽然不如街边摊有氛围,但如果你赶时间,这里既实在又快捷。

    如何点餐与食用

    Da Lat 的大多数 nem nuong 摊位都没有菜单。你只需指着烤架,或者说“mot dia nem nuong”——一盘烤猪肉卷。如果你想指定数量,可以说“nam cai”(5 卷)、“bon cai”(4 卷)等。

    你会得到一盘 nem,配有一小碗 nuoc cham、一篮新鲜香草(通常是薄荷、香菜和莳萝),以及一叠米纸。享用的仪式是:撕下一片米纸,平铺在手掌上,放上一根 nem、一撮香草,如果有的话再加点胡萝卜丝或黄瓜丝,然后把它紧紧卷成一包,蘸上酱汁。赶紧咬一口——整个卷趁热吃最美味。

    有些摊位还会给你一小杯“蘸料香草”:由蒜末、辣椒和青柠混合而成。这是可选的,但当地人通常会在包裹前直接将其挤在 nem 上。

    在 Da Lat 吃 nem nuong 的最佳时间

    午餐(上午 11 点–下午 1:30):大多数摊位在上午 10 点左右生火烤肉,一直供应到猪肉卖完为止。午餐时段你会看到最长的队伍,也能吃到最热乎的 nem。这是最理想的用餐时间。

    晚餐(下午 5 点–晚上 7 点):少数摊位(主要在 Tran Phu 和 Hang Be 街)会重新备货,为晚餐烤制第二批。质量通常是一样的,但人会少一些。如果你喜欢更安静的用餐环境,可以在下午 5:30 过来。

    避开早餐和深夜:大多数 nem nuong 摊位要到上午 10 点才开门,而且没有一家会营业到晚上 7 点以后。与街头的 [pho](/posts/pho-vietnam (베트남 / 越南 / ベトナム)-noodle-soup-guide) 不同,nem nuong 并不是早餐或宵夜食物。

    价格与季节性

    预计每盘花费 30,000–50,000 VND(约合 1.25–2.10 USD)。一盘通常有 4–5 卷,搭配额外的香草和米纸,就是一顿令人满足的午餐或晚餐。

    Da Lat 凉爽的气候意味着 nem nuong 全年供应,但秋季(9 月至 10 月)和冬季(12 月至 2 月)是当地需求的高峰期。夏季(6 月至 8 月)可能比较潮湿,摊位有时会减少产量。如果你在夏天来访,发现某个摊位生意清淡,可以问问他们是否做了新的一批——他们可能会应要求现烤一份。

    实用提示

    请携带现金;大多数摊位不接受刷卡。在午餐时间去能有最好的选择。不要指望有英文菜单或解释——指一指,微笑,然后相信坐在你旁边当地人正在吃的美食。
