    以下是推荐的品尝地点,以及关于避雷的一点忠告。

    Hung Ben — 众口皆碑的地址(名副其实)

    25 Nguyen Khac Hieu, Truc Bach, Ba Dinh 营业时间:每天约 9:00–21:00 价格:每份 50,000–65,000 VND

    Hung Ben 是大多数 Hanoi 人首先提到的名字,这一次,它的名声确实名副其实。这里的河粉皮全天在店内现做——有时你还能看到后厨在蒸粉皮——牛肉用蒜炒过,带有一点点焦香。一份有六到八个卷。如果你最近没吃东西,建议点两份。蘸料 nuoc cham 装在小金属碟里,酸爽且甜度极低。

    Pho Cuon Huong Mai

    Huong Mai 是这一带营业时间最长且开门最早的店,如果你想把 pho cuon 当作早午餐(这在 Hanoi 是完全合理的选择),这一点很重要。出品很稳定,虽然比 Hung Ben 或 Ba Thin 少了一点惊喜感——牛肉有时会炒得过老,口感偏硬。话虽如此,它的价格是这一带最低的,而且店主对第一次尝试、需要时间研究蘸酱技巧的顾客非常有耐心。

    Quan Pho Cuon 52

    52 To Ngoc Van, Tay Ho 营业时间:每天约 10:00–21:00 价格:每份 55,000–70,000 VND

    如果你下午已经在 Tay Ho 游玩——在 Ho Tay 湖边散步或前往 Tran Quoc Pagoda——那么这家店值得一去。To Ngoc Van 有好几家 pho cuon 摊位,52 号是最可靠的一家。这里的卷比 Truc Bach 标准版稍大,而且在牛肉馅里加入了一层薄薄的猪油渣,这让口感更丰富。不是每个人都喜欢这样,但我很喜欢。

    晚上会有较多外籍人士光顾,但厨房不会因为客群不同而改变食材来源。

    Hang Than 市场摊位(无固定店名)

    Hang Than Street, 靠近市场入口, Nguyen Trung Truc ward 营业时间:每天约 06:30–12:00(卖完即止) 价格:每份 35,000–45,000 VND

    这是最难找也最地道的一家。每天早上,一位女士会在 Hang Than 市场门口摆摊,带着一盘卷好的河粉皮和一个炒牛肉用的燃气灶。她通常 11:00 前就卖完了。卷更小,价格更便宜,nuoc cham 的辣椒辣度比 Truc Bach 的版本更高。如果你早上恰好在巴亭市场区域,值得绕道去尝尝。

    没有招牌。问问附近的摊贩“pho cuon”,会有人为你指路。

    避雷指南:Hoan Kiem 附近的游客向摊位

    Hoan Kiem 地区的一些餐厅为了迎合游客,在菜单中加入了 pho cuon。这些卷是预先做好的,在保鲜膜里放了几个小时,河粉皮变得粘糊糊的,一碰就破。你会花 80,000–100,000 VND 买到一份明显不如 Truc Bach 50,000 VND 那种品质的东西。如果菜单上有八种不同的选项,并且还有带英文图片的二维码,直接走过去就好。

    Pho cuon 值得你专门去对的地方品尝。从 Hoan Kiem 到 Nguyen Khac Hieu 的距离大约 3.5 公里——Grab 约 20 分钟,摩的 (xe om) 约 15 分钟。

    实用小贴士

    大多数 Truc Bach 的摊位不接受刷卡;请准备好小额现金。一份通常只够当零食,不算正餐——大多数常客如果把它当午餐吃,会额外点一份“banh mi”或一份炸红葱头。Nguyen Khac Hieu 整条街步行走完不到五分钟,所以你可以在坐下前先逛逛看看。
