    Sapa 的“thang co”与你在 Hanoi 找到的截然不同。这里的汤汁颜色更深、味道更浓郁,里面放满了内脏(猪肝、猪心、猪肚)以及城里见不到的高山绿叶菜。在寒冷的天气里,这样一顿早餐能让你浑身暖和、充满能量。

    Sapa 的 thang co 有何不同

    平原版本的汤底通常比较清澈——是可以一眼见底的清汤。而在山上,高汤是用当地的猪内脏,加上赫蒙族(H'Mong)摊贩当天早上在市场上买到的各种香草熬制数小时而成的。你可以期待一种质朴的泥土气息。里面放的蔬菜不是菠菜或空心菜,而是从梯田里采摘的当地野菜。内脏也更加新鲜——通常是前一天晚上宰杀的,有时甚至是当天清晨宰杀的。

    这里的份量比你在 Hanoi (하노이 / 河内 / ハノイ) 吃到的要大得多。一碗汤足够两个人吃,或者能喂饱一个饥肠辘辘的人。大多数摊位还会配上一份外皮酥脆的面包或糯米饭,具体取决于摊贩。

    当地人真正去吃的地方

    Com Pho 37(Cau May Street)

    这家店早上 6 点准时营业,到 8:30 thang co 就会卖光。炭炉上架着一口单锅,由一位妇女经营。汤底喝起来就像熬了三天三夜——可能确实如此。她会加入自家花园种的薄荷,给内脏也毫不吝啬。一大碗价格在 35,000–40,000 VND 之间。你得站着吃,或者坐在塑料小板凳上吃。这里没有英文菜单,甚至没有真正的招牌。只需寻找升腾的热气和排队的当地人就行了。

    Thang Co Hang Khoai(Hang Khoai Street)

    这家店稍微正规一些——有桌子和椅子。经营这家店的妇女从镇边缘的一个特定农场采购猪肉,你能吃出那种优质的口感。这里的汤底草本味没那么重,更加鲜香。她提供两种份量:30,000 VND 的小碗(游客份量),45,000 VND 的标准大碗。营业时间为早上 6:30 到 10 点,下午休息。在冬季(11 月至 2 月),她有时会加入姜黄根,使汤的颜色更深,喝起来也更暖和。

    Banh Mi & Thang Co(Sapa 市场对面)

    店名很直白——他们两样都卖。这里的 thang co 摊主是一位 60 多岁的大爷,他每天早上 5 点亲自烤制猪骨。你在两个街区外就能闻到香味。他做的版本猪肝放得比较多,其他配料相对较少。有人说这是最好吃的;也有人觉得太腻了。一碗 40,000 VND。你在柜台点餐,然后在外面摇摇晃晃的桌子上吃。仅限早晨营业,时间为 6 a.m.–9:30 a.m.。

    Pho Hoa(Thac Bac Street,靠近瀑布路)

    这家不是专门卖 thang co 的店——他们也做 [Pho](/posts/pho-vietnam (베트남 / 越南 / ベトナム)-noodle-soup-guide) 和 Bun Cha。但他们的 thang co(仅在早上 7 点至 11 点供应)使用了混合内脏,汤底保持清澈爽口。价格:35,000 VND。这个地方比街边摊安静,你可以坐在室内的正规餐桌旁。如果你想多待一会儿,或者想坐下来慢慢吃而不觉得匆忙,这里是个不错的选择。

    没有店名,也没有标明营业时间。大多数日子里,一位老妇人会在早上 6:30 左右推着一辆小推车出摊,停在通往天主教堂的交叉口附近。她主要做早高峰的生意(6:30–9 a.m.)。她的 thang co 口感清淡芳香——放了很多新鲜的香菜和薄荷。30,000 VND。这就是那种当地人会指着说“去那家”的地方,但游客却很少能找到。

    如何点餐

    走进去说“thang co lon”(大碗)或“thang co nho”(小碗)。如果你想额外加面包,可以竖起手指或指一下。如果你不会说越南语,指着别人的碗点餐也完全没问题——他们早就习惯了。大多数地方没有菜单。只收现金,有时他们会给常客抹零。

    如果天气非常冷(12 月至 1 月),可以点“thang co nong”(热的 thang co)——东西是一样的,只是强调你想要滚烫的。他们会给你多加点汤。

    什么时候去

    Thang co 是一种早餐和极早的午餐食品。所有摊位最迟在上午 10 点或 11 点就会收摊。这道汤在寒冷的月份(9 月至次年 3 月)味道最好,此时内脏的脂肪最丰富,香草也正当季。夏季(5 月至 8 月)摊贩们依然会做,但品质会有所下降,吃的人也更少。

    尽量早点去。早上 6:30–8 a.m. 是最佳时间。你会看到当地人,喝到新鲜出锅的汤,而且没有游客。到了上午 9 点,锅里的汤就剩得不多了。

    实用提示

    如果你不习惯吃内脏,Thang co 的味道可能需要慢慢适应。猪肝口感软糯,如果你平时只吃瘦肉,可能会觉得味道有些冲。去吃之前要有心理准备。大多数游客要么一口爱上,要么需要多尝试几次才能接受。另外:它非常丰盛。一大碗就是一顿正餐。搭配酥脆的面包,或者饭后喝杯咖啡是标准吃法;当地人吃这道菜时不会搭配其他菜肴。

    带上现金,尽早到达,不要指望能用英语沟通。体验本身才是最重要的。
