    Quan Bun Ken 30/4

    因其位于岛南端 An Thoi 镇的 30/4 大街而得名。如果你计划在渡轮码头附近度过一天,或者准备前往南部群岛,这家店是首选。经营这家店的是高棉族家庭,你能尝出其中的不同——汤底里姜黄味更重,香草层次更丰富,而且他们还会搭配别家没有的炸虾片。如果你已经在南部,特地从 Duong Dong 开车 30 公里过来也是值得的。

    Co Hai Bun Ken

    以岛上的标准来看,这是一家较新的店——大概开了八年左右——但 Co Hai 已经在 Bai Vong 码头附近工作的当地人中悄悄积累了口碑。她的汤底是这几家中鲜味最浓郁的,可能是因为她使用了比例更高的发酵虾酱。如果你是第一次尝试这道菜,可能不适合从这家开始,但它绝对值得你再次光顾。只收现金,没有英文菜单。

    Bun Ken Phuong Linh

    这家店出现在一些民宿的推荐名单上,味道还可以——稳定、一致,汤底也算不错。但它也是这几家中“游客化”最严重的一家:口味较温和,香草是预先摆盘好的而不是现切的,价格也无缘无故涨到了 50,000–60,000 VND。如果你住在 Long Beach 的度假区,且无法在摊位关门前赶到 Duong Dong,那这家店可以作为备选。否则,它不应该是你品尝这道菜的首选地。

    • 价格: 50,000–60,000 VND

    避雷建议: 在 Bach Dang 夜市附近有一个摊位,招牌上写着“bun ken”专门招揽游客。那里的汤底其实更像普通的椰奶咖喱汤——稀薄、偏甜,没有发酵虾酱带来的深度。那根本不是 bun ken,直接路过就好。

    值得了解的几点

    Bun ken 是一道早餐料理。到了中午,正宗的摊位要么卖完了汤底,要么已经准备收摊了。请围绕这一点安排你的行程——不要指望下午 1 点还能在 Ba Lua 吃上一碗。

    这道菜本质上属于鱼素(pescatarian),但并非纯素——大多数食谱中发酵虾酱是必不可少的,有些店还会撒上猪油渣。如果你有饮食禁忌,请提前询问。

    Phu Quoc 也是品尝其他南部主食的好地方——当 bun ken 摊位关门后,不妨寻找那些用当地海鲜制作的 "hu tieu"。
