    “Men men”——即蒸玉米粉,有时会混合木薯,配上一勺肉汤或慢炖肉食——是北部高地赫蒙族社区的日常主食。在Sapa,你可以吃到它,但前提是你得知道去哪找。游客聚集区帮不了你。

    什么是Men men

    这道菜描述起来很简单,但想做得地道却很难。粗玉米粉经过分层蒸制,形成一种颗粒感强、质地紧实的口感——与其说是蓬松的食物,不如说更接近粗玉米糊(polenta)。它像优质面包一样容易吸收汤汁。单吃时,它带有干玉米和木烟的味道。配上一碗猪骨汤或野菜猪油炖菜,在1月份海拔1500米的高山上,它就成了既饱腹又暖身的佳肴。

    当地人通常把它当作早餐和午餐。玉米通常种植在Sa Pa镇上方的山坡地块上——这些品种比低地玉米淀粉含量更高,甜度更低。根据收获季节和研磨程度的不同,颜色从浅黄色到近乎灰色不等。不要指望不同摊位之间味道完全一致。

    去哪找它

    Cho Sapa早市 — 室内区

    Sapa的中心市场(Cho Sapa,位于Fansipan路旁,距离主广场约500米)在05:30左右开市,Men men摊位在06:00前就会摆好。前往带顶棚的室内区域——不是卖围巾的外圈——寻找那些带着大型铝制蒸锅的妇女。根据当天的不同,会有两到三名摊主轮流在此工作。

    一碗标准的配汤Men men价格在15,000–20,000 VND。你坐在塑料凳上吃,动作要快,因为她们是为市场工人准备的,而不是为游客。这里不说英语,想吃什么直接指一下。最佳时间:周二和周六,此时市场规模最大。

    Chi Hmong Kitchen — Muong Hoa山谷路

    这是最稳定的Men men专门店,位于前往Muong Hoa山谷的路上,距离镇中心约3公里(留意一个红色的手绘招牌,过了Cat Cat村路口约300米处)。店主是一位名叫Chi的女士,她的家人在店后的山坡上种植自己的玉米。

    她做的版本比市场摊位用的玉米粉更粗,配上猪肉辣椒炖菜,油脂丰富,裹满碗底。一份完整分量为25,000–30,000 VND。营业时间大致为每天07:00–13:00,不定期休息——如果你到的时候火没生起来,那就说明当天已经卖完了。仅限现金。

    Ta Phin村 — 公共烹饪区

    如果你步行或骑摩托车前往Ta Phin(距离Sapa镇约12公里),村里在织布合作社附近有一个非正式的用餐区,年长的妇女们会为自己烹饪Men men,如果游客礼貌询问,她们也会卖给游客。没有招牌,没有固定时间——取决于那天早上是谁在做饭。

    这是你体验这道菜最正宗的环境。这里的炖菜通常包含“rau cai”(当地芥菜)和干猪肉。价格由她们说了算,通常是10,000–15,000 VND,她们会很感激你的光顾。在付钱买食物之前,不要直接冲进去拍照。

    赫蒙族民宿餐桌 — Lao Chai

    一些Lao Chai的民宿(距离Sapa 15公里,可通过Muong Hoa山谷徒步路线到达)如果提前几小时预订,可以将Men men作为晚餐的一部分。并非所有民宿都提供此服务——预订时请特别询问。这里的制作过程比市场版本更讲究,因为主人有充足的时间。有些人会搭配烤猪肉和腌菜一起食用。

    餐费不等,通常包含Men men、肉类和蔬菜的完整晚餐价格为80,000–120,000 VND。单就环境而言就非常值得——在长屋里一边烤火一边听着窗外的雨声用餐,这与任何餐厅的体验都截然不同。

    Bac Ha集市日(一日游选项)

    如果你的行程正好赶上Bac Ha的周日集市(距离Sapa公路约80公里——路途较远但一日游可行),牲畜围栏附近的食品区拥有该地区最集中的Men men摊位。多位赫蒙族和花赫蒙族妇女同时烹饪和售卖,这意味着你可以并排比较不同摊位的质地和炖菜风味。每份10,000–20,000 VND。市场营业时间大致为06:00–12:00,随后很快就会收摊。

    避雷指南

    在Sapa市中心的Cau May街上有一家餐厅——招牌上写着“传统赫蒙美食”——在英文菜单上列出了Men men,价格为95,000 VND。端上来的是速溶玉米粥,质地顺滑且略带甜味,上面装饰着一颗辣椒。它与真正的Men men毫无关系。价格几乎是市场价的五倍。完全避开它。如果一家餐厅有塑封菜单和二维码,那它就不是吃Men men的地方。

    实用贴士
