    Phu Quoc 从来不缺让人津津乐道的美味海鲜,但“bun ken”——一种浇在圆米粉上的浓郁椰奶鱼咖喱——才是当地人真正的早餐首选,也是大多数游客会直接忽略的美味。

    什么是 Bun Ken?

    这碗面的构成看似简单。浓郁的橙色汤底由捣碎的鱼肉(通常是黑鱼或鲭鱼)、椰奶、香茅、姜黄和发酵虾酱熬制而成,盛在软糯的圆米粉上——这种米粉比 pho 的面条更粗,更接近“banh canh”所用的面条。配料包括几片炸豆腐、切丝的香蕉花,如果厨师当天心情好,还会加一颗水煮鹌鹑蛋。

    它与南方其他面食最大的区别在于口感。汤底并不稀,而是浓稠到可以挂在勺背上。鱼肉被完全融入汤汁中,而不是以鱼片的形式单独呈现,因此每一口都能感受到均匀而浓郁的风味。从精神内核上讲,它更接近柬埔寨的“nom banh chok”咖喱,而非越南本土的任何面食——考虑到Phu Quoc作为湄公河三角洲与高棉社区之间文化十字路口的历史,这一点也就不足为奇了。

    为什么它在 Phu Quoc 之外几乎绝迹?

    你或许能在一些高棉-湄公河城镇(如Kien Giang省和An Giang省的部分地区)找到bun ken的“远房亲戚”,但Phu Quoc (富国岛) 的版本有着独特的个性,足以自成一派。岛上的鱼露(世代传承的酿造工艺)为汤底增添了深度,这是大陆版本无法复制的。这里的椰奶更新鲜——通常是当天早上现榨的——而且香蕉花配菜是生的,而不是焯过水的,这为整碗面带来了一种清新且微苦的脆爽感,完美中和了椰奶的浓郁。

    在 Saigon,你偶尔会在南方移民聚居区的菜单上看到bun ken,但那里的汤底通常更稀,发酵虾酱也常被替换,很少能尝到正宗的味道。如果你想吃bun ken,就必须来Phu Quoc。

    岛上哪里可以吃到?

    Quan Bun Ken Co Ut — Duong Dong 镇

    这是标杆级的店铺。Co Ut 在 Tran Hung Dao 街(靠近中心市场)的同一间店面卖了二十多年的bun ken。她通常在早上6:30开门,10:00左右就会售罄,周末有时会更早。一碗面价格在35,000–40,000 VND之间。这里的汤底比大多数地方颜色更深、味道更浓郁——她使用了比例更高的发酵虾酱,且毫不吝啬姜黄的使用。坐在路边的塑料凳上,点一杯隔壁摊位的 越南冰咖啡,你就会明白为什么岛上的渔民在出海前都要吃上一碗。

    Quan Bun Ken Hoa — Ham Ninh 村

    Ham Ninh 距离 Duong Dong 以东约 12 km,单是为了那里的高脚屋渔村就值得一游,而村口附近的bun ken摊位则是你前往那里的另一个充分理由。Hoa 的版本口味稍甜——椰奶更多,虾酱较少——如果你是第一次尝试,这个版本更容易接受。大约早上7:00开门,卖完即止(通常在中午左右)。价格同样是每碗35,000 VND。

    Cho Duong Dong 早市

    Duong Dong 的中心早市有两三家轮流出摊的bun ken摊贩,通常在早上6:00到9:00之间出现在 Bach Dang 街的湿货市场入口附近。质量因摊贩和日期而异,但价格是岛上最低的——约25,000–30,000 VND——而且无论如何,体验一下那个时段的市场喧嚣本身就很有趣。

    如何享用

    不要一次性把所有配菜都加进去。建议分次放入香蕉花和香草,以免它们在热汤中变软。挤一点青柠汁可以提升椰奶的鲜味。大多数摊位桌上都会放一小碟新鲜辣椒——建议最后再加,不要太早。汤底中的发酵虾酱本身已经有咸味,所以加鱼露之前先尝尝味道。

    Bun ken 是一道早餐。如果在晚餐时点它,就像在牛排馆里要粥喝一样——虽然理论上可行,但会显得与岛上的生活节奏格格不入。

    实用提示

    上述三家店均只收现金;请准备好小额钞票(20,000–50,000 VND面额)。如果你住在 Long Beach 沿线的度假区,骑摩托车前往 Duong Dong 镇只需10–15分钟,或者打车(Grab)约200,000 VND——非常值得。一定要早去:bun ken 不等人。
