    Eating Your Way Down Vietnam on the SE3 Sleeper Train

    在顺化的用餐体验与越南其他任何地方都截然不同。这座城市曾作为帝国都城长达150多年,这段历史塑造了一种极其讲究细节的饮食文化——数十道精致小菜、精准的调味,将饮食提升到了仪式感的高度。如果你以美食为中心进行规划,在这里待上两天足以让你领略其精髓。

    第一天:皇家餐桌与东巴市场

    上午:Banh Mi 与市场早餐

    早上8点前出发,前往位于陈兴道街(Tran Hung Dao Street)的东巴市场。这是顺化最大的生鲜市场,也是了解这座城市真实饮食的最佳去处。一楼是农产品和香料区——寻找那些装在陶罐里的虾酱("mam ruoc"),这是顺化大多数菜肴的灵魂。楼上及周边则是熟食摊位。

    点一份“banh uot”(新鲜蒸米卷),配上烤猪肉和一份“cha Hue”(当地猪肉香肠)。整盘价格约为25,000–35,000 VND。这与你在河内或西贡吃到的版本不同——顺化的 banh uot 更薄、更丝滑,配上更甜的蘸酱,体现了中部地区的口味偏好。

    上午晚些时候:Tinh Gia Vien

    从市场出来,乘坐 xe om(摩托出租车)或 GrabBike(约2公里)前往定天黄街(Dinh Tien Hoang Street)7号的 Tinh Gia Vien。这是一座修复后的皇家园林宅邸,现作为餐厅供应“com cung”——宫廷御膳。午餐供应从上午11点开始,周末建议提前预订。

    这里的套餐价格为每人150,000–250,000 VND,包含八到十二道小菜:莲子汤、香蕉叶包蒸猪肉、虾饼、发酵虾酱炒空心菜等。这里没有浮夸的装饰,重点在于克制与平衡。分量设计得很小,因为宫廷菜从来不是为了填饱肚子,而是为了品味。

    如果 Tinh Gia Vien 客满,位于阮福源街(Nguyen Phuc Nguyen Street)的 Y Thao Garden 是一个不错的替代选择。

    下午:顺化皇城与咖啡时光

    步行或骑车前往顺化皇城区域(距离 Tinh Gia Vien 约1.5公里)。你来这里的主要目的不是参观(尽管如果你没去过,皇城也值得花一小时游览),而是为了城墙外阮廷沼街(Nguyen Dinh Chieu)和黎直街(Le Truc)附近的咖啡馆。顺化有着深厚的咖啡文化。点一杯“ca phe sua da”,坐下来休息。下午2点到3点气温最高,没必要匆忙赶路。

    晚上:寻味 Com Hen

    “Com hen”——将小蛤蜊、花生、酥脆猪皮、薄荷和一勺蛤蜊清汤浇在米饭上——是顺化最具代表性的菜肴之一,在当地以外几乎鲜为人知。Com hen 的发源地是香江(Huong River)上的一个小岛 Con Hen,距离皇城约3公里。

    穿过富春桥(Phu Xuan Bridge),左转沿河岸走。这里的摊位从下午5点左右开始营业。一碗售价20,000–30,000 VND。蛤蜊是当地产的小蛤蜊,汤头微酸,整道菜的味道比看起来要复杂得多。“Bun hen”(用米粉代替米饭,配料相同)在同一摊位也有供应。

    第二天:Bun Bo Hue 之旅与甜品漫步

    上午:面食巡礼

    第二天的主题是“bun bo Hue”——这座城市的招牌面汤,对许多常客来说,这是造访顺化的主要原因。这是一种用香茅和虾酱熬制的汤底,因胭脂树红而呈现砖红色,配以粗圆米粉、切片牛腱、猪蹄,有时还会加入凝固的猪血块。它比 pho(越南河粉)口感更浓郁、更辛辣。

    最地道的面碗藏在小型家庭作坊里,而不是游客餐厅。两个可靠的地址:

    • Bun Bo Ba Tuyet,李常杰街(Ly Thuong Kiet Street)11号——早上6点开门,卖完即止(通常在9点前)。每碗:45,000 VND。
    • Bun Bo O Giao,靠近知朗街(Chi Lang Street)——营业时间稍长,开到上午11点。每碗:40,000 VND。

    去其中一家吃早餐,散步二十分钟消消食,然后再去另一家尝尝。这并不夸张——这叫“调研”。

    上午晚些时候:Truong Tien 桥畔的 Banh Khoai

    “Banh khoai”是顺化版的“banh xeo(越南煎饼)”——一种更小、更厚、更酥脆的米饼,内馅有虾、猪肉和豆芽,吃的时候用芥菜叶和米纸包裹,蘸上发酵的花生芝麻酱。这种酱料是顺化特有的,与别处使用的 nuoc cham(鱼露蘸水)完全不同。

    位于定天黄街(Dinh Tien Hoang)6号(靠近 Truong Tien 桥)的 Lac Thien 餐厅经营此菜已有数十年。三块煎饼一盘,价格约60,000 VND。店主一家是聋哑人,交流只需指菜单即可——完全没有障碍。

    下午:甜品小巷

    顺化的“che”文化——甜汤和布丁——值得专门花时间探索。前往阮秉谦街(Nguyen Binh Khiem Street),当地人有时称其为“Che街”。这是一条靠近安旧市场(An Cuu market)区域的小巷,从中午开始,十几家摊位只卖各种 che。

    如果看到的话,一定要尝尝“che bap”(甜玉米布丁)、“che dau van”(绿豆椰奶)和“banh it tran”(绿豆馅糯米团)。分量小且便宜——每份15,000–25,000 VND——连吃三四种完全没问题。

    晚上:以“Banh Canh”和当地啤酒收尾

    行程的最后,来一碗“banh canh(粗米粉汤)”——将粗木薯粉面条放在浓郁的蟹肉猪骨汤中,介于汤和炖菜之间。位于阮公著街(Nguyen Cong Tru Street)的 Quan Banh Canh 是当地的标准,40,000 VND,无英文菜单,下午3点开门。

    之后,在望景山(Vong Canh Hill)路附近找一个 bia hoi(鲜啤)摊位,来一杯冰镇扎啤,配上一盘炸物。这一趟,你圆满了。

    实用贴士

    顺化的大多数街头美食店开门很早,上午晚些时候就关门了——请务必在两天里都调整到早上6-7点出发,否则会错过最棒的面汤。GrabBike 是往返于上述地点最快的方式;城市紧凑,大部分距离都在3公里以内。请准备好小额钞票(10,000和20,000 VND面额),方便在市场摊位和街头小贩处消费。
