    "Bun mam" 是湄公河三角洲最具争议的一道面食。发酵鱼酱、丝滑的米粉、炖五花肉、茄子、秋葵,再加上一堆新鲜生草本植物——它散发着浓郁的河鲜气息,味道在越南南部独树一帜。Can Tho 是品尝这道美食最地道的地方。

    这座城市的 Bun Mam 有两种截然不同的形式:早上 7 点前开张、卖完即止的塑料凳路边摊,以及营业至午后的正式店面。它们各有千秋,无法相互替代。以下是它们的区别。

    路边摊版本

    路边摊速度更快、价格更便宜,而且往往味道更好。摊主将一口大锅放在手推车上,在人行道上摆放四五张矮凳,在大多数人喝完早咖啡之前,就能卖出五十多碗。

    这种形式的汤底通常更浓郁——没有空间或时间来稀释汤头以延长营业时间。发酵鱼酱(通常是三角洲产的 "ca linh" 或 "ca loc" 鱼酱)的味道扑面而来。配料很简单:几片五花肉、一块炸鱼柳、炖得软烂的茄子、两三根秋葵,以及一盘配菜——豆芽、香蕉花、空心菜。

    价格范围为每碗 25,000–35,000 VND。

    去哪里找: 在靠近 Ninh Kieu 夜市区域的 Nguyen Trai 街路段,大约早上 6:00 到 9:30 之间会有两三家路边 Bun Mam 摊位。它们没有招牌。寻找大铝锅里深色、气味浓郁的汤底,以及一群在上班前匆忙用餐的当地人。另一个可靠的地点是靠近中央市场的 Hai Ba Trung 街——营业时间和形式类似。

    在这种摊位,坐下即点。摊主会问你是否要 "them thit"(加肉)或 "them ca"(加鱼)。建议选其中一种,不要全加——因为原本的分量已经很扎实了。

    店面餐厅版本

    店面式 Bun Mam 营业时间较长(通常从早上 7 点到下午 1 点),提供的汤面稍显精致。汤底依然带有发酵鱼酱的独特风味,但通常会清淡一些——在大锅中烹制,加了更多的水,有时还会加入一点椰奶或菠萝来中和鱼酱的刺激感。

    这里的最大优势在于配菜丰富。正规店面会提供更齐全的草本配菜盘,将炸鱼柳单独盛放以保持酥脆,并允许你单独添加配料。通常可以加虾(额外 10,000–15,000 VND)。有桌椅、风扇,还会自动送上一杯冰茶——如果你想悠闲地用餐,这里更舒适。

    价格范围为每碗 40,000–60,000 VND,具体取决于配料。

    去哪里找: 位于 Ly Tu Trong 街的 Quan Bun Mam Co Ut 是当地人最常推荐的地址——它在同一个地方经营了十多年,早上 7 点开门,周末通常中午就卖完了。那里的汤底偏向清淡的椰香风味。另一个可靠的选择是在 Ben Ninh Kieu 水岸附近:De Tham 街上几家成熟的店面在午餐时间供应 Bun Mam,吸引了当地人和游客。

    如果你在 Can Tho 的短途旅行中只想吃一碗,请在早上选择路边摊。汤底更直接,价格更低,早上 7 点坐在运河边的塑料凳上吃这碗面,才是这道菜的灵魂所在。发酵鱼酱的味道并不含蓄——它就是为了唤醒你的味蕾而设计的。

    如果你在城市里待上几天,想吃不止一次 Bun Mam,那就两种都试试。加了虾和全套草本配菜的店面版本确实不同——这是一顿更长、更慢的餐点。搭配一杯隔壁咖啡馆的 "ca phe sua da",这就是一个两小时的惬意早晨。

    一点提示:草本配菜盘比大多数人预想的更重要。千万别跳过。将生香蕉花和空心菜撕碎拌入汤中,可以改变口感并中和五花肉的油腻感。像当地人一样吃吧——把所有东西拌在一起。
