    Sapa 海拔约 1,500 米,从 Hoang Lien Son 山脉流下的寒冷湍急溪流,使其成为越南(Vietnam)为数不多适合养殖三文鱼(当地称为“ca hoi”)的地方。这里的鱼肉比进口大西洋三文鱼更瘦、更紧实,脂肪含量较少,但味道更纯净。你付出的价格很大程度上决定了这条鱼最终以何种方式呈现在你的餐桌上。

    Sapa三文鱼有何不同

    大多数 Sapa 三文鱼(ca hoi Sapa)产自 Ta Van 和 Muong Hoa 山谷周围溪流中的网箱养殖场,距离 Sapa 镇东南约 8–12 公里。常年保持在 15–18°C 的冷水减缓了鱼类的生长速度,使肉质更加紧实。你吃到的不是挪威三文鱼,这里的鱼片较小,颜色有时较浅,风味也明显更清淡。这并非缺点,只是意味着浓重的酱汁很容易掩盖其原味。在这里,新鲜度比脂肪含量高的进口鱼类更为重要。

    当地人和游客食用它的两种主要方式是:“lau ca hoi”(三文鱼火锅)和刺身风格的薄切生鱼片。少数几家店两者兼备。

    经济实惠型:市场摊位与街头火锅(每人 80,000–150,000 VND)

    最经济可靠的选择是 Sapa 市场大楼附近 Cau May 街沿线的摊位。寻找那些将整条鱼放在冰块上展示的摊贩——这是鱼货周转率高的标志。这里一份基本的 lau ca hoi 套餐每人约 120,000–150,000 VND:包含一个小型便携式炉灶、用香茅和番茄熬制的清汤、一盘切好的三文鱼,以及一些配菜(空心菜、蘑菇、粉丝)。汤底清淡但味道纯正,三文鱼切得很厚,这意味着它们在加热时不会散开。

    不要指望有餐桌服务或英文菜单。直接指着你想要的菜品,入座前确认价格,并检查盘子里的鱼是否与冰上展示的一致。这个价位的品质因日期和摊贩而异——最好在上午 11:30 之前或下午 5 点之后到达,此时鱼肉最新鲜,周转率最高。

    至于这个价位的生食,建议避开。露天摊位的卫生条件并不适合制作刺身,而且有些摊贩提供的鱼肉存放时间过长。

    适合人群: 想要随意用餐的团体、在越南各地吃过街头小吃且肠胃无碍的游客、午餐或早晚餐。

    中端品质:当地餐厅(每人 200,000–350,000 VND)

    这是性价比最高的选择。Muong Hoa 街沿线以及 Fansipan 公路附近的多家餐厅以合理的价格提供更完整的三文鱼体验。位于 Muong Hoa 的 Nha Hang Ca Hoi Sapa(寻找带有鱼类插图的招牌;从邮局下坡走约 300 米)提供的双人 lau ca hoi 套餐总价约 380,000–420,000 VND,包含米饭和蔬菜,人均约 200,000 VND。这里的汤底使用了当地采集的草药,比市场版本更有层次感。

    在这个档次,你还会看到 ca hoi cuon(三文鱼米纸卷)以及盐烤三文鱼,如果你想吃得比火锅清淡,点这些菜非常值得。一份大约 90,000–120,000 VND。

    刺身风格的 ca hoi 在这里开始变得物有所值。询问鱼是否是当天早上送达的;大多数餐厅会诚实告知。配上酱油、芥末酱(当地近似品)和腌姜,一份 130,000–160,000 VND 的刺身是非常体面的选择。

    适合人群: 大多数游客。你可以享用到新鲜的鱼肉、正规的厨房以及你能看懂的菜单。

    高端奢华:酒店餐厅与专业三文鱼馆(每人 500,000 VND 以上)

    Sapa 的高端餐厅(其中几家位于镇边缘的精品酒店内,享有山谷景观)价格昂贵,但其中几家确实物有所值。这个档次的三文鱼通常直接采购自 Muong Hoa 山谷中特定的养殖场,可追溯性更好。份量更大,烹饪更考究,你还能找到低端餐厅没有的选择:ca hoi ap chao(黄油莳萝煎三文鱼排)、包含多种部位的精致刺身拼盘,以及汤底更复杂的慢炖火锅。

    刺身前菜预计花费 180,000–250,000 VND,煎三文鱼排 220,000–300,000 VND,双人火锅套餐则在 600,000–800,000 VND 以上。用餐体验舒适得多——有正规的座位、周到的服务,以及在 Sapa 11 月至 3 月期间非常重要的室内供暖环境。

    如果你在 Sapa 停留几天并想享用一顿高质量的晚餐,这个档次值得一试。如果你只是进行一日游,中端餐厅的选择已经绰绰有余。

    适合人群: 情侣、停留多晚并想享用一顿正式晚餐的游客、注重食材来源和烹饪品质的食客。

    实用建议

    避免在 Ham Rong 山附近向那些向过往游客兜售的摊贩购买整条三文鱼——鱼通常不是当地产的,而且价格虚高。无论选择哪个档次,都要直接询问鱼是来自 Muong Hoa 山谷还是进口的;大多数诚实的商家会告诉你。Sapa 的三文鱼全年都有,但在 10 月至 3 月的寒冷月份品质达到巅峰,此时水温下降,鱼肉最为紧实。
