    Can Tho 的清晨不会让你有任何缓冲。早上 6 点,Hai Ba Trung 沿街的人行道和 Ninh Kieu 码头后方的小巷里,人们已经蹲在摊位前吃着面条,塑料袋装的冰咖啡在热气中凝结出水珠。如果你睡过了头,就错过了这座城市最精彩的一面。

    第一碗:Hu Tieu

    在湄公河三角洲,早餐的首选汤面不是 pho,而是 "hu tieu"。Can Tho 的版本通常比 Saigon 风格的更清淡,猪肉和干鱿鱼熬制的汤底清澈且带有淡淡的甜味。你会得到一碗细米粉,配上几片猪肉,运气好的话还有一颗鹌鹑蛋,以及一盘生豆芽和香草,供你自行添加。

    去 Phan Dinh Phung 街或 Nguyen Trai 旁的小巷里寻找摊位。一碗的价格在 25,000–35,000 VND 之间。寻找木板上手写的 "Hu Tieu" 招牌,有时下面会写着 "Nam Vang"(金边风格),这意味着汤底会更浓郁——也值得一试。

    Banh Mi 与流动摊位

    Can Tho 有着非常地道的 "banh mi" 文化,几乎全靠流动摊位支撑。停在 Tay Do 市场附近的摊位早上 6 点前就会开张,且生意火爆。这里的标准馅料包括肉酱、猪头肉冻、一层黄油、腌萝卜丝和胡萝卜丝、黄瓜以及几片辣椒。有些摊位还可以根据要求加一个煎蛋。

    价格为 15,000–25,000 VND。这是最棒的快餐——买到手,用纸包好,边走边吃,或者坐在停着的摩托车后座上享用。

    糯米饭:"Xoi" 的选择

    "Xoi" 作为早餐被低估了,当地人吃它的频率远超游客的想象。在 Can Tho,你会看到摊贩摆着一叠叠铝制托盘——黄色(用姜黄烹制)、紫色(用木鳖果或食用色素染色)或纯白色的糯米饭。配料才是关键:炸葱酥、绿豆泥、椰丝,或者来上一大勺 "cha lua"(越南扎肉)。

    用香蕉叶包裹的一份糯米饭价格在 10,000–20,000 VND 之间。市场是寻找它的最佳地点——城市南侧的 Xuan Khanh 市场有一个很棒的 xoi 区域,从早上 5:30 开始营业。

    Banh Canh 与更扎实的选择

    对于想吃得饱一点的人来说,"banh canh"——用浓郁猪肉或蟹汤熬制的粗木薯粉条——出现在少数固定的摊位而非流动摊车上。这种面条口感略带嚼劲,评价两极分化,但汤底总是调味极佳。一碗价格为 30,000–40,000 VND。

    Cai Khe 运河周边有几家经营多年的可靠 banh canh 摊位。虽然距离河岸有十分钟车程,但如果你想喝汤,且已经吃过两次 hu tieu,这里非常值得绕道前往。

    咖啡:不可或缺的仪式

    Can Tho 的咖啡文化建立在 "ca phe sua da" 之上——将炼乳通过小型金属过滤器滴入装满冰块的玻璃杯中。比例比品牌更重要。在好的咖啡店,咖啡浓度极高,即使冰块融化也不会冲淡味道。

    Ngo Quyen 沿街和夜市附近的老式咖啡店从早上 5 点就开始营业。这些店不是那种网红咖啡馆,而是光线昏暗、有电风扇、摆着塑料椅的房间,常客们会对着同一杯咖啡坐上一个小时。一杯 ca phe sua da 的价格为 15,000–20,000 VND。这种越南咖啡不适合匆忙饮用。

    如果你想要一个安静且能看到河景的地方,Ninh Kieu 步行街沿线有一些小咖啡馆开门较早,不过它们更多面向游客,价格也相应较高——接近 30,000–40,000 VND。

    如何开启 Can Tho 的清晨

    最实用的方法是早上 6 点左右从河岸出发,向侧街探索。Ninh Kieu 码头可以帮你定位——船只已经开始穿梭,摊贩们沿着堤岸摆开阵势——但更好的美食往往隐藏在后方一两条街区。

    没有哪条街能包揽所有美食。Can Tho 的早餐分布在各个街区,这也是为什么比起直接去某个知名地点,步行探索往往会有更多惊喜。跟着那些看起来要去上班的当地人走,而不是跟着地图找景点的游客。

    如果你住在市中心附近,一个合理的路线是:先从流动摊位买一份 xoi 或 banh mi,然后找一家排队的摊位吃 hu tieu,最后找个地方坐下来喝杯咖啡。整个过程大约两小时,总花费不到 80,000 VND。

    实用小贴士

    Can Tho 的大多数早餐摊位营业时间约为早上 5:30 到 9:00,之后就会收摊或更换菜单。这个时间段到处都只收现金——请准备好零钱。会几句越南语很有帮助("mot to" 意为一碗),但指着旁边人点的食物也是完全没问题的。
