    "Hu tieu" 是南方人对 pho 的回应——清甜的猪骨汤底配上劲道的米粉,铺上猪肉末、虾仁、鹌鹑蛋和炸葱酥。与 pho 不同的是,它至少有三种值得了解的独特风格:My Tho(汤底较清,面条较细)、Nam Vang(口味更浓郁,配有猪肝和鱿鱼)以及 kho(干拌,汤另附)。在 Saigon,价格并不总是与质量成正比,但它确实能让你预判即将获得怎样的用餐体验。

    30,000–50,000 VND 价位:街头小摊与市场档口

    这是大多数当地人真正吃 Hu Tieu 的地方。你坐在塑料小板凳上,摊位早上 6 点摆出来,10 点就收摊了,而汤底在你起床前就已经熬制好了。这并非抱怨——早起意味着骨头有足够的时间熬出精华。

    了解这一价位的一个可靠地点是第四郡 Vinh Khanh 街沿线的 Hu Tieu 摊位群,营业时间约为早上 6 点到 9 点。每碗价格在 35,000–45,000 VND 之间。你会得到一小盘豆芽、新鲜辣椒和一片青柠——自己动手调味即可。

    你不会得到:鹌鹑蛋、虾仁或桌上的调料盘。但这没关系,这是早餐能量补给,而不是一场盛宴。

    55,000–90,000 VND 价位:店面老字号

    走进有固定店面的餐馆,碗里的内容就丰富起来了。这是中端价位,也是在西贡(Saigon)流行的 Nam Vang 风格(受柬埔寨影响的版本)的聚集地。期待在碗里看到猪肉、虾仁、猪肝,有时还有鱿鱼,汤底更浓郁,口感略微偏甜。

    位于第五郡 Nguyen Trai 街的 Hu Tieu Nam Vang Thanh Xuan(营业时间约为早上 6 点至下午 2 点)根据配料不同,价格约为 65,000–80,000 VND。这里的汤底是真功夫:深邃、清澈,且明显比你在 My Tho 风格店里喝到的更甜。你也可以在这里点 kho(干拌)——配料相同,面条干拌,另附一小碗汤供蘸食。如果你还没试过,值得一尝。

    第五郡通常是这种风格的最佳去处。Chau Van Liem 和 Nguyen Trai 周边聚集了许多经营了几十年的 Hu Tieu 店,有些由潮州华裔家庭经营——这也是为什么这一带的汤底味道与第三郡等地有所不同的原因。

    100,000–160,000 VND 价位:餐厅正餐

    在这个价位,你支付的是空调环境、更丰富的调料选择、更高品质的虾仁,有时还有手工制作的面条。碗更大,摆盘更讲究,汤底可能经过更长时间的熬制,并加入干鱿鱼或虾酱来增加层次感。

    第一郡的 Hu Tieu My Tho Thanh Cong(Nguyen Cu Trinh 街,早上 7 点营业)是一个很好的参考基准。一碗配有虾仁、猪肉和鹌鹑蛋的完整餐点价格在 120,000–145,000 VND 左右。这里的 My Tho 风格明显比 Nam Vang 版本更清淡、更精致——面条更细,甜味更少,回味更干净。这是一种不同的菜品,没有好坏之分。

    在这个价位,kho(干拌)选项通常值得额外关注。面条拌入猪油和鱼露,汤则作为两口之间的清口之用,而不是作为底汤。如果你只吃过汤的 Hu Tieu,一定要试一次干拌的。

    价格到底买到了什么

    老实说,从街头摊位到中端店面的跨越带来的差异最大——更多的蛋白质、更均衡的汤底,以及舒适的座位。从中端到餐厅级的跨越更多是关于舒适度和仪式感,而非口味本身。一家经营得当的第四郡小摊,完全可以轻松胜过第一郡一家平庸的店面。

    如果你在西贡待几天想好好吃顿 Hu Tieu,建议吃两次:一次是在早上 8 点前的街头小摊,另一次是在第五郡的中端 Nam Vang 店面。这样既能体验全貌,又不会超支。

    实用小贴士

    Hu Tieu 店开门早,下午很早就关门了——请提前规划。准备好现金;无论哪个价位的店,几乎都不接受刷卡。如果你想点干拌,请清晰地说出 "hu tieu kho";有些店默认提供汤面,除非你特别说明。
