    "Com ga Hoi An"(会安鸡肉饭)——用姜黄腌制的鸡丝铺在鸡汤焖饭上,再配以腌青木瓜和一抹辣椒酱——这道菜是区分“真正深度游览过Hoi An的人”与“只是在灯笼街逛了一小时就离开的游客”的试金石。它并不花哨,也绝非海南鸡饭,如果你这么说,当地人会温和地纠正你。

    Hoi An版鸡肉饭的独特之处

    米饭是精髓所在。它用鸡汤、少量姜黄和鸡油焖煮,呈现出淡淡的黄色,并拥有普通白米饭无法比拟的浓郁口感。鸡肉经过水煮后手工撕成条,拌上青柠汁、鱼露和新鲜香草——通常是越南香菜(“rau ram”)和洋葱丝。配菜中的腌青木瓜能有效中和油腻感。辣椒酱因摊位而异,有的发酵味浓郁,有的则鲜辣刺激。要将这两者完美结合并不容易,这就是为什么劣质的鸡肉饭吃起来就像食堂里的黄米饭配鸡肉。

    按越南标准,分量通常较小。大多数当地人在上午7点至9点之间,或午餐时分吃一小碗。虽然也有晚餐供应,但通常是加热后的。

    去哪里吃:推荐摊位与小店

    Ba Buoi — 行业标杆

    22 Phan Chu Trinh | 营业时间:约早上6点至售罄(通常在上午11点前) | 每碗35,000–45,000 VND

    每当问起Hoi An当地人去哪吃Com ga,这个名字总是第一个被提起。Ba Buoi在这个地址经营了数十年。鸡肉调味始终如一,米饭的油脂与米粒比例恰到好处,腌木瓜比大多数店更爽口。摊位卖得很快——如果你在周末上午10点半才到,可能只能赶上最后几碗,甚至售罄。店里没有英文菜单,但直接用手指点餐即可。建议先点一碗,吃完后再决定是否再来一碗。

    Bong Hong Com Ga

    Tran Phu Street,靠近Hoang Van Thu路口 | 营业时间:早上6点–下午1点 | 30,000–40,000 VND

    规模较小,路边摆着塑料凳。这里的鸡肉比Ba Buoi稍微干一点,但辣椒酱是老城区所有摊位中最好的——发酵味浓郁、独特且非常够味。值得额外加一份辣椒酱。这家店上午营业时间稍长,游客也相对较少。

    Com Ga A Hai

    6 Nguyen Hue | 营业时间:早上7点–下午2点 | 40,000–55,000 VND

    这家店常被旅游指南推荐,导致价格上涨且排队时间较长。话虽如此,味道确实很好。A Hai的版本在米饭中加入了更多的姜黄,色泽更鲜亮,他们还提供一份扎实的鸡汤,这是大多数摊位所没有的。单是那碗清澈、调味适中且热腾腾的鸡汤,就让整顿饭显得更完整。上午8点到10点之间座位很快坐满;建议早点去,或者中午过后人潮散去时再去。

    Quan Com Ga Mama

    26 Thai Phien | 营业时间:上午10点–晚上8点 | 45,000–60,000 VND

    如果你错过了早上的营业窗口,Mama是少数几家全天营业且品质稳定的店之一。鸡肉不如Ba Buoi那么细腻,但很新鲜——他们是分批准备,而不是使用早上的剩菜。这里的rau ram特别香。这也是对外国人最友好的一家店,有简单的英文菜单,店员也习惯于向游客解释这道菜。

    Phuong Com Ga

    Nguyen Thai Hoc Street(靠近市场尽头) | 营业时间:早上6:30–中午12点 | 30,000–35,000 VND

    这是一家大多数旅游指南都不会提到的社区摊位。环境非常接地气——你旁边坐的可能是建筑工人和放学的孩子——价格也相当亲民。米饭比Ba Buoi稍显粗糙,但分量更大,腌木瓜给得非常慷慨。当Ba Buoi售罄时,这是个不错的备选方案。

    避雷指南

    避开Nguyen Phuc Tan路或河边主干道上任何专门针对游客的餐厅里的Com ga。这些地方提供鸡肉饭是因为游客有需求,而不是因为厨师用心烹饪。米饭通常是白米饭(有时用食用色素染成黄色,而非姜黄),鸡肉是预先撕好放在托盘里的,辣椒酱则是瓶装的。你得花70,000–90,000 VND买到一碗品质明显更差的饭。辨别方法是看是否有带照片的英越中韩四语菜单,上面印着十二种不同的菜品。真正做Com ga的店通常只专注于一两样菜品。

    如何点餐

    走进去,说“mot com ga”(一份鸡肉饭),或者用手指表示数量。如果想要额外的辣椒酱:“them tuong ot”。如果想要鸡汤:“cho toi them nuoc dung”。大多数摊位提供冰茶或白开水;不要指望有饮料菜单。

    通常是吃完后结账,只收现金。准备50,000 VND的纸币足以应付上述任何一家店。

    实用小贴士

    早晨(6:30–10am)是Hoi An鸡肉饭品质最好的时候——米饭新鲜、鸡肉现撕、摊位热闹。如果你计划逛Hoi An老城区或前往Thu Bon河,建议先吃完饭再出发。大多数优质摊位距离主要的游客中心步行仅需10–15分钟。
