    你到底在吃什么

    这些河蚬来自香江(Perfume River)上的一个小岛——Cu Lao Kien Vung,距离市中心约3公里。当地人称之为Con Hen(蚬岛),几代以来,它一直为Hue(顺化)的厨房提供食材。这些蚬子非常小,直径不到一厘米,经过快速焯水后保持了微韧的口感。烹饪蚬子的汤水会被保留下来作为配汤,称为“nuoc hen”,这是整道菜鲜味(umami)的来源。

    米饭本身是隔夜饭,在室温或更低温度下供应。如果你习惯了吃热米饭,起初可能会觉得这很奇怪。但其实不然,这种温度对比是刻意为之的——冷米饭能吸收咸、酸、辣的配料,而不会变得软烂。

    上桌时,碗里堆满了配料:蚬肉、香蕉花丝、薄荷、越南香菜(“rau ram”)、炸猪皮、碎花生、芝麻米饼(“banh trang me”)、辣椒油,旁边还会附上一小碟mam ruoc。你需要自己动手将它们搅拌均匀。

    如何从容地点餐

    走进店里,找个位子坐下,说一句“cho em mot com hen”(请给我来一份com hen)。这就够了。店主可能会问你是否要辣——“cay khong?”——你可以回答“it cay”(少辣)或“khong cay”(不要辣椒)。几乎不会再有其他问题了。

    Mam ruoc装在一个小碟子里。你应该先舀少量——从半茶匙开始——拌入nuoc hen汤中,然后将少许汤汁淋在米饭上。千万不要把整碟mam ruoc直接倒在饭里,那种错误是显而易见且无法挽回的。

    从碗底开始搅拌。最后再把芝麻脆饼捏碎撒在上面,这样它们至少能保持几口酥脆的口感。

    在吃的时候,可以搭配碗边的nuoc hen汤一起喝。它咸鲜适口,带着淡淡的海味,味道极佳。

    在Hue去哪里吃

    Quan Com Hen Ba Do — Con Hen岛

    最地道的体验是亲自前往Con Hen岛。乘坐xe om(摩托车出租车)或Grab摩托车到达Phan Chu Trinh桥头,然后寻找小型轮渡(约5,000 VND)。Ba Do的店是岛上众多摊位之一,大约早上6点开门,通常9点就卖光了。一碗售价15,000–18,000 VND。那种塑料凳、江景和蚬汤香气交织的环境,在其他任何地方都难以复制。

    Com Hen Ba Tuoi — 11 Truong Dinh, Hue

    如果你不想折腾轮渡,位于Truong Dinh街的Ba Tuoi是城内最受推荐的店铺。早上6点开门,卖完即止(周末通常10点前就卖光了)。价格约为20,000–25,000 VND。店面小、人多,上菜速度快。这里的mam ruoc味道相对温和,适合初次尝试的人。

    早市 — Cho An Cuu 和 Cho Dong Ba

    这两个市场在生鲜食品区都有com hen摊位。Dong Ba位置更中心,更容易找到。质量因摊位而异,但价格极低,且烟火气十足。如果你去过北方,Dong Xuan Market 在Hanoi也有类似的混乱市场美食氛围,但com hen是Hue独有的菜肴——你在其他任何地方都找不到同样的味道。

    容易踩坑的地方

    冷米饭。 它本来就是冷的。不要要求加热。

    Mam ruoc。 味道非常浓烈。第一次尝试时,用量要比你想象的少。不够的话随时可以再加。

    汤的比例。 Nuoc hen不是汤饭——你只需要加一点来润湿米饭,而不是把碗淹没。

    时间。 Com hen是早餐和清晨的食物。大多数地方过了早上10点就卖完了。城内有些店可能会营业到中午,但不要指望。

    香蕉花。 那种看起来像卷心菜的白色丝状物。它略带苦味和涩味,能平衡其他配料的味道。把它拌进去吃,不要挑出来。

    为什么值得一试

    Hue的饮食文化比大多数同等规模的城市都要深厚——bun bo hue、banh khoai、nem lui和com hen,都体现了一个经过数百年沉淀的烹饪体系。尤其是com hen,是当地人在早上6点上班前吃的食物,价格仅相当于一瓶水。这不是为了迎合外国游客而包装的菜肴。点得对,拌得好,这将是你在这趟越南之行中花得最值的20,000 VND之一。

    实用小贴士

    准备好小面额钞票——20,000 VND的纸币最理想,大多数摊位找不开200,000 VND的大钞。如果你住在Hue Imperial Citadel 附近,骑自行车去Con Hen岛大约需要10分钟。早点去,吃得快,尽情享受那碗汤带来的鲜美吧。
