    如果你知道去哪里找,Sapa 其实有着非常地道的早餐文化,而“com lam”(竹筒饭)就是其中最纯粹的体现。将糯米装入青竹筒中,在木火上烘烤,直到外层焦黑,内部变得软糯香甜。这绝非针对游客的噱头,Sapa周边的山地社区几代人以来一直用这种方式烹饪米饭。在海拔1500米寒冷的清晨,吃上一口热气腾腾的竹筒饭再合适不过了。

    什么是真正的 Com Lam

    竹筒的作用不仅仅是盛放米饭。在加热过程中,青竹会释放出水分和淡淡的草本清香,渗透进米粒中。剥去焦黑的外层后,会露出一层紧贴米饭的薄竹膜——这部分是可以食用的,不要扔掉。摊主会用利落的手法敲开竹筒,直接递给你,此时米饭还冒着热气。

    米饭本身是糯米(“gao nep”),标准的搭配是“muoi vung”(芝麻盐),你可以将米饭蘸着吃,或者搭配在同一火炉上烤制的猪肉串“thit nuong”。有些摊位还会额外提供一小份“ruoc”(肉松)。这种组合简单而有效:烟熏味的米饭、咸香的芝麻和油脂丰腴的猪肉。

    在 Sapa 去哪里吃

    最稳定的地点是 Duong Xuan Vien 沿街的摊位,这条路与镇上靠近老教堂、面向山谷的一侧平行。每天早上6:00到9:30左右,会有四五家摊主在这里摆摊,配备便携式烤架、成堆的竹筒和炭火。你还没看到摊位,就能先闻到那股香气。

    一根 com lam 的价格在 10,000–15,000 VND 之间。搭配一串烤猪肉的价格根据大小约为 10,000–20,000 VND。两人份的早餐加饮料总共不到 100,000 VND。

    如果你住在 Nguyen Chi Thanh 街的 Sapa (사파 / 沙坝 / サパ) Market 附近,通常会有摊主从早上6:30左右开始在市场的下层台阶摆摊。这里的供应量较少,卖得也快,建议在8:00之前到达。

    如果你想要环境更舒适一点,Ham Rong 街的 Nha Hang Hmong Sisters 提供包含 com lam 的早餐套餐(每人约 45,000–60,000 VND),那里有更好的座位和英文菜单。在下大雨时,这是一个不错的备选方案。

    如何点餐

    直接用手指点并比划数量。“Mot”是1,“hai”是2。摊主会问你是否要肉——“thit khong?”(要不要肉?)。点头表示要,他们就会加一串烤肉。Muoi vung 通常是默认提供的。

    你可以站着吃,也可以坐在摊主附近堆放的低矮塑料凳上。竹筒就是你的餐盘。当米饭吃到剩下最后三分之一时,通常可以倒入一点热茶或肉汤,像吃粥一样享用——摊主有时会主动提供这个服务。

    什么时候去

    Com lam 绝对是早餐食品。早上6:00出摊的摊主通常在10:00前就会收摊,工作日人流较少时甚至会更早。周末早晨摊位更多,营业时间也会稍微延长,但原则是一样的:一定要早去。

    按越南的标准,Sapa 全年都很冷,但在10月至次年3月期间,吃 com lam 感觉是必须的,而不仅仅是选择。当你站在高海拔的雾气中,手指冰凉时,那根温热的竹筒会显得格外贴心。在较温暖的月份(5月至8月),它依然美味,只是那种温暖的慰藉感没那么强烈。

    烤架上还有什么

    同样的摊位通常还会出售“banh ngo”(烤玉米饼),有时还有“khoai nuong”(烤红薯)。这些价格在 5,000–10,000 VND 之间,如果摊位有的话,非常值得一试。特别是烤玉米饼,这是北部高地的特色,一旦回到 Hanoi 就很难找到了。

    如果你想让早晨更完美,步行五分钟到教堂附近的任何一家小型咖啡摊,点一杯 ca phe sua da(越南冰咖啡)或热的 vietnamese coffee ——在竹筒饭早餐后,感受寒冷空气与热咖啡的碰撞,是开启山间一天的可靠方式。

    实用贴士

    Com lam 摊位只收现金,没有例外。请准备好小额钞票——10,000 和 20,000 VND 的纸币。不要指望有菜单或收据;交易过程大约只需三十秒,大家买完就走。如果你打算在上午晚些时候去徒步,建议多买一两根带在路上——com lam 的保温效果出奇地好,放在背包里一小时甚至更久依然温热。
