    Phu Quoc 的东海岸没有落日余晖下的拥挤人群,也没有度假村的奢华气息。这里有的是“ghe Ham Ninh”——从 Ham Ninh 渔村周边浅滩捕捞上来的小蓝蟹。烹饪方式极其简单:仅用盐、一片青柠和现磨胡椒调味。这就是整道菜的全部。这也是你在岛上能吃到的最棒的美食之一。

    这种螃蟹有何不同

    Ghe Ham Ninh 并非你在 Duong Dong 沿岸游客海鲜餐厅里堆成山的肥美青蟹。它们个头很小,大概只有手掌大小,壳很薄,用手就能轻松掰开。蟹肉清甜,带有淡淡的海水气息,蟹黄(母蟹在产季时)口感浓郁,风味十足。由于这些螃蟹产自咸淡水交汇的河口滩涂,而非深海,因此其咸度与众不同:更加鲜明、纯净。

    标准的做法是“hap muoi”——用岩盐清蒸,有时底部会垫上几片香茅。食用时蘸取青柠汁、盐和白胡椒粉混合的调料。没有黄油,没有奶油蒜酱,没有花哨的噱头。Ham Ninh 码头的餐厅几十年来一直保持着这种做法,且没有改变的打算。

    Ham Ninh 码头:源头所在

    村庄位于 Duong Dong 镇以东约 12 公里处,沿途经过胡椒农场和橡胶树林。码头本身是一条狭窄的木栈道,两旁排列着高脚海鲜棚屋——大多数是家庭经营,营业时间取决于渔船归港的时间。

    最佳的就餐窗口是晚上 6 点到 9 点。傍晚时分,当天的渔获已经分拣完毕,厨房也已开火。到了晚上 10 点,大多数地方开始收摊,库存也所剩无几——ghe 卖光了,不是因为餐厅关门,而是因为螃蟹的数量确实有限。

    Quan Bich(没有正式的英文名;寻找码头尽头漆成蓝色的栏杆)是码头餐厅中库存最稳定的。一公斤 ghe Ham Ninh 的价格约为 150,000–180,000 VND,具体取决于季节和个头。如果你还点了“bun”(米粉)或烤鱿鱼作为配菜,一公斤足够两个人吃得很满足。这里的鱿鱼——烤前经过轻微风干——非常值得一试。

    位于码头中段的 Quan Thanh Thuy 价格稍便宜,环境也稍微混乱一些。老板会在你面前用挂秤称重;如果你在意这些,记得留意皮重。价格区间和烹饪方式相同。

    请带现金。这两家店都不接受刷卡,也没有可靠的 Wi-Fi。两家店都有塑料凳、日光灯和对着漆黑海水的景观。

    如果不想开车,Duong Dong 也有选择

    如果觉得去 Ham Ninh 太远——从 Duong Dong 市中心骑摩托车需要 20 分钟,或者打车单程需要 300,000–350,000 VND——镇上也有几家店能供应同样的螃蟹,且营业至深夜。

    Cho Dem Duong Dong(Duong Dong 夜市)沿 Bach Dang 街从晚上 6 点营业到 11 点,拥有许多轮换的海鲜摊位。请特别留意那些用低矮篮子盛放小螃蟹的摊贩,而不是那些摆满虎虾和龙虾的大水箱。这里的 ghe 价格约为每公斤 160,000–200,000 VND——比码头稍贵,但省去了交通费。

    Tran Hung Dao 街上的一些固定海鲜餐厅也有供应,但供货不稳定。建议提前致电询问,或者直接到店询问——问一句“co ghe Ham Ninh khong?”(有 Ham Ninh 螃蟹吗?)就能得到明确的答复。

    一些值得了解的事

    Ghe Ham Ninh 在** 11 月至次年 4 月**期间最为丰盛,这与旱季重合。在季风季节(5 月至 10 月),供应量会下降,出现的螃蟹往往个头较小。不要因此放弃雨季的旅行,但要降低预期。

    螃蟹很小,吃起来比较费劲。要预留时间,而不仅仅是预算。两个人吃完一公斤螃蟹,轻轻松松就要 45 分钟。点上一杯冰镇“bia hoi”或一瓶当地的 Saigon 啤酒,坐下来,慢慢享用。

    如果你是从 Phu Quoc 主渡轮码头或机场抵达,Ham Ninh 码头是第一晚晚餐的合理选择——如果你行程灵活,它大致在顺路的方位。在看到度假区之前先在这里用餐,能为接下来的旅程定下合适的基调。

    实用提示

    Ham Ninh 码头餐厅每天大约在上午 10 点至晚上 10 点营业,晚上 6 点至 9 点是 ghe 库存最充足的时段。从 Duong Dong 骑摩托车前往路线直接;道路平坦且照明良好。每人预算 150,000–200,000 VND 即可享用螃蟹、一份配菜和一杯饮料。
