    河内的饮酒文化既便宜又早。工作日的下午5点,人行道上已经摆满了塑料凳,玻璃杯上挂着水珠,半个街区的人都已经喝了两轮了。在这里,啤酒不是夜生活的点缀,而是生活的基础设施。

    Bia Hoi:真正的河内之饮

    “Bia hoi”是现酿的生啤,未经巴氏杀菌,酒精含量低(约3%),且当天酿造当天售罄。根据地段不同,每杯价格在5,000到15,000越南盾之间。这可不是笔误。

    最著名的交叉路口是位于老城区Luong Ngoc Quyen和Dinh Liet交汇处的Bia Hoi角——这里喧闹、游客众多,作为第一站倒也合适。但真正的Bia Hoi体验是在主干道旁的小巷里:一张塑料桌,一位戴着棒球帽的女士在打酒,还有一群在这里喝了二十年的老主顾。

    去Dong Xuan Market附近的街角、Tay Ho区的Au Co沿线,或者Long Bien区的侧街找找看。当菜单是用记号笔写在纸板上,且周围没人说英语时,你就找对地方了。

    Bia Hoi与周边的零食文化是绝配。水煮花生、烤鱿鱼干、腌制蔬菜,以及一小盘“nem chua”——这种发酵猪肉口感酸爽独特——都会在你不经意间摆上桌。喊一声“mot, hai, ba, yo”(一、二、三,干杯),你很快就能结交到新朋友。

    精酿啤酒的崛起

    精酿啤酒大约在2015年进入河内(하노이 / 河内 / ハノイ),如今已不再是昙花一现的潮流,而是形成了一种真正的文化。以下几个地方值得一去。

    Pasteur Street Brewing在Ly Quoc Su街有一家酒馆,吸引了外籍人士和当地年轻人。他们的茉莉花IPA(Jasmine IPA)和Cyclo淡色艾尔(Cyclo Pale Ale)品质稳定。每品脱价格约为70,000–90,000越南盾。这里环境舒适,有不错的下酒菜,氛围自然不做作。

    位于Tay Ho的Hanoi Rock City更像是一个现场音乐表演场地,同时也提供很棒的精酿啤酒。演出通常在周四到周六举行。这里的客人很混杂——有越南音乐迷、长期居住的外籍人士,以及偶尔来东南亚巡演的乐队。

    位于Tay Ho区Xuan Dieu街的BiaCraft Artisan Ales专注于本地食材:青米、柚子、罗望子。虽然有些口味实验见仁见智,但青米赛松(green rice saison)确实非常出色。周末晚上,这里的露台总是座无虚席。

    如果想找个更低调的地方,Ta Hien和Bao Khanh沿线的一系列小型瓶装店和站立式酒吧提供各种国产精酿和进口罐装啤酒。虽然没有座位,只能站在路边喝,但价格合理,在40,000–60,000越南盾之间。

    本地人与外国人的区别

    这种区别确实存在,我们有必要坦诚面对。旅游区的多数Bia Hoi角有两种价格——一种给当地人,另一种给看起来像刚下车的游客。差价通常不大(5,000–10,000越南盾),但这反映了一种值得了解的现象。

    你离老城区越远,这种界限就越模糊。在河内的居民区——如Ba Dinh、Dong Da、Hoang Mai——你只是坐在凳子上的普通一员,没人会为了表演而刻意迎合你。那才是值得体验的河内饮酒方式。

    精酿啤酒吧则属于中立地带。它们的价格定位是为所有消费得起精酿啤酒的人准备的,这是一种基于消费能力的筛选,与国籍无关。

    啤酒与美食的搭配

    河内的啤酒文化中,喝酒与吃饭是分不开的。两者同时进行,一旦尝试过,你就会发现这种搭配是多么直观。

    “Bun cha”——将烤猪肉饼浸入酸甜清汤中,配上米粉和香草——是河内最经典的下酒菜。猪肉的油脂、蘸汤的酸度,再配上一杯冰镇Bia Hoi,简直是完美的味觉平衡。2016年,安东尼·波登(Anthony Bourdain)与巴拉克·奥巴马(Barack Obama)在Bun Cha Huong Lien品尝了这道菜,使其在国际上名声大噪,但当地人在此之前早已这样搭配了。

    “Banh mi”适合深夜,当Bia Hoi卖光了而你需要一点扎实的食物时。“Cha gio”——酥脆的炸春卷——比大多数零食更适合搭配冰啤酒,尤其是河内风味的春卷,里面包裹着粉丝和木耳。

    如果想喝得久一点,可以找一家供应“banh cuon(반꾸온 / 蒸米卷 / バインクオン)”的店——蒸米卷内馅为碎猪肉和蘑菇,配上鱼露。口感清爽,吃完一整盘还想再来一杯。

    实用提示

    大多数街角的Bia Hoi在晚上就会卖光——请在晚上8点前到达,否则可能只能看到空桶。精酿酒吧通常营业至午夜或更晚。在Tay Ho喝完酒后,使用网约车软件(Grab、Xanh SM)回家最方便;下单前请务必确认地址,因为老城区的定位通常不够精确。
