    这就是以菜名命名的餐厅,自 19 世纪 70 年代起由 Doan 家族经营。几十年来,店内的陈设几乎没有变过:深色木质家具、老旧的家庭照片,菜单上也只有这一道菜。员工的态度非常冷淡,只有那些完全不需要讨好任何人的店才会有这种底气。鱼的味道很好。但它值 220,000 VND 吗?这取决于你有多看重在一家拥有正统历史渊源的店就餐。许多当地人认为它溢价过高,会选择去别处。他们说得没错,但他们也不是那种执着于“寻根”的人。去一次就好,尝尝基准味道。

    Cha Ca Thang Long

    地址: 19–21 Duong Thanh, Hoan Kiem(距离 Cha Ca 街步行 5 分钟) 营业时间: 10am–9:30pm 价格: 每人 130,000–160,000 VND

    这是更务实的选择。店面更大,上菜更快,菜品一样,价格更低。鱼的品质稳定,不用反复催促就会送上 mam tom,米粉也很新鲜。Thang Long 将自己定位为 La Vong 的竞争对手——招牌上写得明明白白——两家店多年来一直争夺“正宗”的头衔。诚实的回答是,它们作为 Cha Ca 餐厅都是正宗的。点一份全套(鱼、米粉、花生、香草、蘸料),不到 160,000 VND 就能吃得很好。

    Cha Ca Anh Vu

    地址: 120 Hang Gai, Hoan Kiem 营业时间: 9am–9pm 价格: 每人 120,000–150,000 VND

    名气不如上面两家,但这反而是它的优势。餐厅环境更安静,鱼肉腌制时高良姜的味道明显更浓郁,炭火炉的火力也更足——当你想要把鱼煎脆而不是仅仅把它蒸熟时,这一点至关重要。如果 Duong Thanh 那家店排长队,这家店非常值得考虑。

    Cha Ca 1946

    地址: 6 Le Van Huu, Hai Ba Trung(距离老城区以南约 1.5 公里) 营业时间: 10am–2pm, 5pm–9:30pm 价格: 每人 110,000–140,000 VND

    名字里的年份是营销手段——听听就好——但菜品本身确实值得上榜。这里的鱼用的是黑鱼而非鲶鱼,肉质稍微紧实一些,在热锅里翻炒五分钟后依然能保持口感。位于 Hai Ba Trung 区意味着游客较少,更多是午休的上班族,这通常是一个可靠的信号。这里的米粉也特别好——细滑、新鲜,不是那种放了一整天的。

    避坑指南

    Cha Ca Pho (쌀국수 / 越南河粉 / フォー) Co(老城区内有许多挂着类似招牌的分店)

    如果你在老城区散步,看到一家 Cha Ca 餐厅挂着满是英文的菜单板、贴着塑封的菜品照片,且门口站着招揽客人的店员,请直接走开。在还剑湖(Hoan Kiem Lake)附近的小巷里,有几家这样的店,专门靠地理位置蹭游客流量。鱼肉是预先煮好的,炭火炉只是装饰,每人 200,000–250,000 VND 的价格,你付出了 La Vong 的钱,却没吃到历史底蕴,鱼的品质还更差。判断标准永远是:塑封的照片菜单,以及在你还没停下脚步时就凑上来的店员。

    实用贴士

    Cha Ca 是午餐或晚餐菜肴——不要指望在早餐时吃到。大多数店在晚上 9 点前就会卖光鱼肉,所以如果你打算晚上去,尽量在 7:30 前到达。Mam tom(发酵虾酱)是正宗的调味品;桌上的普通鱼露是为那些不敢尝试的人准备的妥协方案。一定要试试虾酱。这道菜的最佳搭配是河内(하노이 / 河内 / ハノイ)的“bia hoi”文化——在 Ta Hien 或 Luong Ngoc Quyen 的街角小店喝一杯冰镇扎啤,价格只需 5,000–10,000 VND,是你在坐下来享用炭火烤鱼前非常棒的开胃酒。
