    为什么街头小贩如此重要

    越南的饮食经济靠的是推车和塑料凳子。卖"pho"的师傅、卖"banh mi"的小贩、肩挑竹担叫卖"goi cuon"的大姐——这些人每天早晚养活着Hanoi和Saigon无数上班族。他们不是想坑你的骗子,而是在微薄利润下辛苦讨生活的劳动者(通常加价20–30%,有时更低)。先从尊重开始,整个互动就会截然不同。

    停下来之前:先读懂眼前的情况

    观察摊主是否正在忙碌。 如果小贩正在包食物、收款或与其他顾客交谈,不要打断询问价格或食材。等候轮到你,或者换一家。每位顾客通常需要30秒到2分钟。

    找找价目表。 许多街头小贩会用越南语手写一块牌子,列出菜品和价格。看不懂的话,就问"Co mon gi?"(有什么菜?),而不是随便乱指。他们会给你介绍选项。

    留意是否有英语提示。 如果小贩备有带英文翻译的塑封菜单,说明他们欢迎外国游客光顾。如果所有标识都是越南语,也没有任何英文,先礼貌地问一句:"Ban noi tieng Anh khong?"(你会说英语吗?)。不要想当然地认为对方能听懂你说的话。

    如何点餐:一步一步来

    第一步:目光接触,面带微笑。 说声"Chao!"或点点头。这一步不能省。你不是在自动贩卖机买零食,而是在请人家为你服务、为你做食物。

    第二步:问问他们推荐什么。 "Co gi ngon?"(有什么好吃的?)让对方回答。小贩对自己做的东西是有自豪感的。如果他们指向某道菜或点头示意,就点那个。这样你得到的食物会比你随口要的更新鲜、更用心。

    第三步:清楚地说出你的点单,说一次就够。 "Mot tia pho, khong dong"(一碗pho,不要香菜)或"Hai banh mi thit"(两个猪肉banh mi)。用手指比划数量。不要反复重复,也不要在制作过程中不停追问——除非是真正重要的情况(比如过敏、辣度要求,这些是合理的)。

    第四步:如有疑问,事先问好价格。 "Bao nhieu?"(多少钱?)有些小贩会主动报价,有些不说你不问。问价格不失礼。失礼的是点完餐再对总价一脸惊讶。

    价格预期与议价

    2024年实际参考价格:

    • Pho:每碗25,000–50,000 VND(约1–2美元),因肉类和地点而异
    • Banh mi:15,000–35,000 VND(约0.60–1.40美元)
    • Goi cuon(鲜春卷):每个10,000–20,000 VND(约0.40–0.80美元)
    • Bun cha:30,000–80,000 VND(约1.20–3.20美元)
    • 街头咖啡:15,000–25,000 VND(约0.60–1美元)

    不要为了5,000 VND讨价还价。 那不过是0.20美元。小贩对外国人定价稍高,不是因为贪心,而是按照当地生活成本来定的。如果一个banh mi卖30,000 VND,你觉得应该是25,000,那是你对当地经济的误解,而不是小贩的问题。

    批量购买时可以议价。 买10个春卷或5碗pho?可以问"Co giam gia khong?"(能优惠吗?)讲道理的小贩会给你打个九折或八五折。当然也可能直接拒绝——双方都不必尴尬。

    大多数摊位价格固定。 与集市不同,街头小贩不期望你对单件商品讨价还价。他们有摊位租金(或许可证费)、食材和燃气成本。你看到的价格就是价格。

    常见错误及如何避免

    错误一:强行要求对方说英语。 对着一位在街角卖pho的六十岁大妈大声问"Do you speak English?",只会让她感到被冒犯。先用越南语轻声问。如果她不会英语,就放慢语速、用手指、用手机翻译,或者换一家。她没有义务说你的语言。

    错误二:未经允许拍照。 街头小贩不是旅游景点的道具。想拍摄摊位或食物,请先问:"Anh/chi cho toi chup anh duoc khong?"(大哥/大姐,我可以拍张照吗?)很多人会同意,也有人不愿意。无论哪种答案,都要尊重。

    错误三:点完餐再抱怨食物不新鲜。 眼看着对方用文火熬了12小时的高汤、新鲜米粉和鲜草药做成一碗pho,事后却批评温度或口味,这说不过去。街头小贩不是米其林餐厅,拼的是速度和出餐量,口味每天都会有差异。随遇而安吧。

    错误四:退食物。 除非食物确实已经变质,或者含有危险异物(头发、虫子、不能吃的杂物),否则不要退。这很伤人,会让小贩在其他顾客面前丢脸。如果真的吃不下,付钱离开就好,以后别再来。小贩的记性很好。

    错误五:含糊地说有过敏。 如果你对花生、贝类或鸡蛋过敏,请清楚且反复说明:"Toi di ung voi dau phong"(我对花生过敏)。指着菜单上的选项,如果不放心,就看着他们制作。不要以为对方光凭"allergy"这个英语单词就能明白你的意思。

    小费与付款

    不必给小费。 越南街头饮食没有给小费的习惯。小贩靠的是销售额,不是服务费。留下5,000 VND是一种好意,但并非必须,也不会让你和小贩的关系更好。如果想表达感谢,明天再来点一次就是最好的回报。

    带好零钱。 大多数街头小贩不收刷卡。把100,000 VND的大钞换成10,000和20,000 VND的小票。如果你钱不够凑整,他们通常会抹去零头,或者给你一颗糖代替找零。攒零钱是常规操作。

    移动支付正在普及。 在Hanoi和Saigon,越来越多的年轻小贩接受Momo或越南QR码支付。可以问:"Thanh toan bang Momo duoc khong?"(可以用Momo付款吗?)不要假设,永远先问清楚。

    读懂肢体语言

    如果你走近时,小贩把目光移开、在收拾摊位或不与你对视,可能是他们累了、快要收摊了,或者暂时不想接单。这和你没关系。过10分钟再来,或者试试旁边的摊位。

    如果他们点头、微笑,并拿出干净的餐具,那就是在欢迎你。这是你点餐的信号。

    如果他们看起来没听懂你点的东西,不要提高音量重复。简化你的表达,用更少的词,指着旁边其他人正在吃的东西,或者用动作比划。小贩通常很机灵,给他们一点时间,他们自然会弄明白你想要什么。

    建立熟客关系

    如果你找到了一家喜欢的摊位(尤其是在同一个街区住上一周以上),回头去2–3次。他们会认出你。价格可能还是一样,但分量可能会悄悄大一点,或者多给你一把香草、多加一勺酱汁。这不是你花钱买来的,而是你作为一张熟悉又有礼貌的面孔所获得的回馈。这就是街头小贩经济的运作方式。

    摸清他们的营业时间。许多卖pho的摊主只在早上6点到10点营业;卖banh mi的通常下午3点前就收摊了。在他们实际开门的时间段出现,本身就是一种小小的尊重。
