    Hu tieu(후띠우 / 粿条 / フーティウ),也拼作 hu tiu,是越南南方首选的早餐。从早上 5 点到中午,你都能在早餐菜单上看到它的身影,不过街边推着热气腾腾汤锅的小贩通常会一直卖到下午三四点。

    基本构成:劲道或柔软的米粉,微甜的猪骨汤,猪绞肉、猪肝、虾,再撒上一把炸红葱头和蒜末。你可以点汤粉(带汤)、干拌(只有粉,汤另附)或混合的做法。它是由中国广东的潮汕人带入越南(베트남 / 越南 / ベトナム)的——最初的版本是“kuay teow(粿条)”,比现在的版本更扁、更软。越南南方的厨师让粉条变得更有嚼劲,而这个名字也保留了下来:“hu tieu”源自潮州话的“粿条”(gue diou,或 kway teow)。

    粉条

    Hu tieu 主要使用三种粉面。软米粉最轻盈细腻——稍微用力一夹就会断。鸡蛋面口感更丰富,外观略带黄色。而被称为“hu tieu dai”的木薯粉条则呈半透明状,嚼劲十足,在齿间有弹牙的口感——这是“hu tieu My Tho”风格的标志。

    你通常会听到小贩问:“要软的还是劲道的?”软粉更容易入口。如果你喜欢带点嚼劲的口感,劲道的粉条会更顶饱,吃起来也更有趣。

    汤底

    这是 hu tieu 的灵魂。猪骨与干鱿鱼、虾干一起熬煮数小时,直到汤汁清澈微甜。在南方,这种甜味是刻意为之的——它能平衡咸味的调料和内脏的浓郁口感。这种汤底比“pho”的汤底温度稍低,也更清淡;它是用来大口吸溜的,而不是用来咀嚼的。

    当你点“hu tieu kho”(干拌)时,你会得到一碗铺满配料的粉,外加一小碗热汤供你边吃边喝——如果你在街边就餐,不想汤汁溅到大腿上,这是一个非常实用的选择。

    配料

    这正是 hu tieu 的有趣之处。通常与大蒜一起炒制的猪绞肉会在中间堆成一个小丘。切得很薄的猪肝(煮熟后呈粉红色)增加了铁质和一种微妙的内脏风味,人们对此褒贬不一——不妨试试看。切成圈并焯过水的猪肠口感劲道,味道中性。虾几乎是必不可少的,无论是整只水煮还是切碎。

    顶部的点缀:炸红葱头、脆蒜末、新鲜韭菜、中国芹菜叶(略带苦味),再撒上一撮白胡椒粉。有些小贩还会加上一个鹌鹑蛋或一勺焦糖鱼露。

    酱料

    Hu tieu 上桌时总是配有一个酱料盘。酱油(提鲜)、黑醋或红醋(酸爽、解腻)、“沙茶酱”(源自中国的酱料,由大豆油、大蒜和虾干制成——味道浓郁复杂)、切成薄片的新鲜红辣椒,以及蒜蓉辣椒酱。你可以根据个人口味混合这些酱料。醋是必不可少的——只需滴上一点,就能让整碗粉从浓腻变得平衡。

    地方风味

    Hu Tieu Nam Vang ——“金边粿条”。这种偏柬埔寨风味的款式有着更浓郁的汤底和更丰富的配料:鹌鹑蛋、猪绞肉、虾,有时还有一点鱼糜。腌蒜和蒜蓉酱取代了部分中式酱料。你可以在 Ho Chi Minh City 找到它,尤其是在有柬埔寨文化背景的街区。

    Hu Tieu Sa Te ——沙茶汤粉。汤底本身用沙茶(那种以大豆为基础的中式调料)调味,使其辛香咸鲜。比经典的 hu tieu 甜度低。这是潮汕人的原创,在越南中部和南部很受欢迎。

    Hu Tieu My Tho ——以湄公河三角洲(메콩 델타 / 湄公河三角洲 / メコンデルタ)城市 My Tho 命名,这个版本使用细白米粉,并且非常偏重海鲜:对虾、章鱼、墨鱼、蜗牛。汤底通常用海鲜高汤熬制,而不仅仅是猪骨。如果你想吃比重猪肉版本更清淡、更有海洋风味的粉,点这个准没错。

    Hu Tieu Sa Dec ——源自 Dong Thap 省的 Sa Dec,这种风格的特色是更粗的白米粉,以及用特定猪肉部位熬制的清澈细腻的汤底。配料不像 My Tho 风格那么拥挤,风味更加内敛。

    Hu Tieu Go ——街头小吃。“Go”的意思是“敲击”——小贩们在手推车上敲击两根金属棒发出声音,以此宣告他们的到来。Hu tieu go 更简单也更便宜:基础的汤底,较少的配料,分量也更小。这是为匆忙赶路的人准备的早餐。在南方每个城市的胡同和市场里,你都能找到这些小贩,他们通常在早上 5 点就出摊了。

    去哪儿吃

    在南方,Hu tieu 随处可见。Ho Chi Minh City 的 Ben Thanh 和 Binh Tay 等市场里都有专门卖 hu tieu 的摊位。Can Tho 和 My Tho 也有各自著名的店铺(可以在当地点评网站上搜索名字——它们可能会易主,或者根本没有招牌)。在 Saigon,一碗的价格在 25,000 到 50,000 VND 之间,具体取决于小贩和你选择的配料。街边摊比较便宜;有座位的餐厅则会贵一些。

    戈登·拉姆齐(Gordon Ramsay)在 2013 年的美国版《厨艺大师》(MasterChef)节目中特别介绍了 hu tieu,并挑战参赛者制作这道菜。早些年,在 2010 至 2011 年的电视系列片《戈登的伟大逃亡》(Gordon's Great Escape)中,他也在 Can Tho 的 Cai Rang 水上市场品尝过它。

    如何点单

    指一指你想要的粉条类型(软的还是劲道的),或者说“粉条中等嚼劲”。小贩会问你是否需要所有常规配料——点点头就行。如果你喜欢吃辣,可以要求多加点蒜蓉辣椒酱。趁热马上吃。粉条在汤里很快就会变软。
