    Can Tho的早餐文化与越南其他地区截然不同,而“hu tieu My Tho”就是最好的证明。这并不是pho。它的汤底颜色较浅但甜味更浓,面条更细且略带透明感,配料的组合也非常固定,当地人对此有着不容置疑的坚持。

    My Tho风味的独特之处

    标准配料与组成

    在Can Tho(芹苴),一碗正宗的hu tieu My Tho配有固定的配料:瘦猪肉片、几只整虾、煮入汤中的猪肉碎、鹌鹑蛋(通常两到三个),以及顶部撒上的一小撮炸葱酥。你会得到一盘配菜,包括豆芽、青柠角和新鲜香草(通常是刺芫荽和泰国罗勒),供你自行调味。

    有些摊位会加入猪肝或猪肠作为可选配料。如果你不想吃,点餐时可以询问,或者如果有需要也可以专门要求添加。

    一碗标准份量的价格在35,000至55,000 VND之间,具体取决于摊位和配料的丰富程度。在街边摊位,超过60,000 VND的价格通常是针对游客的收费。

    在Can Tho去哪里吃

    Ninh Kieu码头区域——清晨,水边

    沿着Hai Ba Trung路的人行道摊位,与Ninh Kieu码头附近的Hau河平行,清晨5:30就开始热闹起来。这些摊位中有几家专门经营hu tieu My Tho,而不是像更成熟的店铺那样提供混合菜单。寻找那些有明显骨汤锅,且柜台后方摆放着一排排分装好配料小碟的摊位——这就是专业经营的标志。

    这些摊位通常在上午9点前收摊。如果在那之后才去,你可能会发现他们正在准备午餐,或者摊位已经完全撤走了。

    水上市场摊位——Cai Rang

    如果你打算前往距离市中心以南约6公里的Cai Rang水上市场(营业时间大约在凌晨5点到上午9点),那里有几艘木船直接在水上售卖hu tieu。这种体验节奏较慢——你向船只招手,他们盛好面,你在自己租的舢板上享用——汤底的质量因船而异。但在观看周围批发农产品交易的同时吃上一碗hu tieu,是体验Can Tho精髓的最佳方式。

    请准备小额现金。船家无法为500,000 VND的大钞找零。

    Quan Hu Tieu Co Nam, 18 Nguyen An Ninh

    对于追求固定地址和稳定品质的食客,这家位于中心市场附近的小店多年来一直保持着相同的模式:每天清晨现熬骨汤,面条采购自My Tho的供应商,且服务时间直到汤底卖完为止——通常在上午10点左右。一碗配有虾和鹌鹑蛋的完整面条价格为45,000 VND。虽然没有英文菜单,但指着邻桌的碗点餐完全没问题。

    如何点餐

    当你坐下时,通常会被问到一个问题:lon hay nho——大份还是小份。如果这是你当天的第一顿饭,建议从小份(nho)开始;因为份量并不算少。你可以要求额外加虾(them tom)或额外加鹌鹑蛋(them trung cut),每样需额外支付5,000至10,000 VND。

    Hu tieu可以做成kho(干拌,汤另装)或nuoc(汤面,汤直接浇在面上)。汤面版在Can Tho是标准吃法;如果摊位提供干拌版,也值得一试——面条吸附配料的方式会有所不同。

    实用提示

    在Can Tho,hu tieu的早餐时间窗口确实很短。大多数正经摊位在上午10点前就结束营业了,而水上市场的选择在上午9点就消失了。请设好闹钟。从市中心搭乘xe om或Grab前往Cai Rang,费用大约在40,000至60,000 VND之间,为了这种集市场观光与早餐于一体的体验,这是非常值得的。
