    Hu Tieu My Tho 的独特之处

    Can Tho 版本的对比

    Can Tho 毕竟不是 My Tho,两地公路距离约 75 km,汤底也反映了这一点。Can Tho 的摊贩倾向于将甜度再提升一点——这很可能是因为添加了冰糖——而且虾的份量通常更足,反映了三角洲地区获取新鲜河虾的便利。Saigon 也做得很好的金边风格 (Phnom Penh-style) hu tieu 汤底更浓郁,使用了包含腌萝卜和有时会加入猪杂的更深邃、复杂的底料。相比之下,无论是在 My Tho 当地还是在 Can Tho 食用,My Tho 风格的汤底始终保持着清爽和轻盈。

    在 Can Tho 去哪儿吃

    Hu Tieu Co Ut — Nguyen An Ninh 街

    这是一家没有招牌,但早上 6:30 就会排起长队的店。Co Ut(摊主昵称,意为“最小的阿姨”)在 Nguyen An Ninh 街与 Tran Phu 街交叉口附近经营这个摊位已经超过二十年了。根据配料的不同,一碗面的价格在 35,000 到 45,000 VND 之间。她通常在汤底卖完后就收摊,时间通常在上午 10:00 之前。一定要早去,否则就去别处吧。

    这里的汤底是教科书般的 My Tho 风格——清澈、微甜,带有一种淡淡的干海鲜鲜味,如果不仔细品味很容易错过。鹌鹑蛋总是煮得全熟,这是正确的处理方式。

    水上市场摊位 — Cai Rang

    Can Tho 的 Cai Rang 水上市场距离市中心约 6 km,它是一个从凌晨 5:00 左右开始运作的真正批发市场,而不是旅游表演。几艘较小的船只停泊在市场边缘,为商贩们提供早餐,hu tieu 就是其中一种选择。坐在运河里狭窄的木船上,看着十五米外批发榴莲和火龙果的交易,吃着一碗面,这种体验无需任何修饰。

    水上的 hu tieu 价格在 30,000 到 40,000 VND 左右,配料更简单——通常只有猪肉和豆芽,没有鹌鹑蛋——但汤底扎实,环境本身就是重点。如果你想同时体验市场和吃面,请在凌晨 5:30 前到达。从市中心乘坐摩托车出租车 (xe om) 或 Grab 到达运河大约需要 20 分钟。

    Phan Dinh Phung 夜市的 Hu Tieu Kho

    如果是拌面版本,Phan Dinh Phung 街上的摊位在晚上供应 hu tieu kho——同样的面条和配料,没有汤,拌入少许猪油、鱼露和辣椒。旁边会附送一小碗清汤。这吃起来更像是凉拌面而不是汤面。这里的价格在 30,000 到 40,000 VND 之间,摊位从下午 5:00 左右营业至深夜。
