    青蛙腿“mi Quang”并不是游客最先接触到的版本。大多数人会在旅游区附近吃到虾肉或猪肉口味的米粉,吃得心满意足便离开了。而ech(青蛙)版本则是另一类店铺的招牌,且有着自己独特的营业节奏。

    你吃到的究竟是什么

    Mi Quang ech的底料与任何一碗Mi Quang并无二致:宽而扁的米粉,淋上少许姜黄色的汤汁(这只是为了给米粉挂味,而非汤面),上面撒上烤花生、芝麻米饼和一堆新鲜香草。不同之处在于蛋白质。青蛙通常是一整只小青蛙,切成两半或四块,用香茅和鱼露腌制后,下锅油炸至表皮酥脆。青蛙腿张开摆在米粉上。炸青蛙的酥脆感与姜黄浸染的软糯米粉之间形成的口感对比,正是这道菜的精髓所在。

    这种汤底比普通的Mi Quang更浓郁——由青蛙骨头有时辅以猪骨熬制而成,带有一种虾肉所没有的淡淡泥土清香。

    早餐:最佳时段

    如果你想吃到最棒的一碗,请在早上6:30到9:00之间前往。这是Da Nang的Mi Quang店生意最火爆的时候,油锅是刚换的,青蛙也经过了整夜的腌制。那些供应早餐的店铺通常在10:30之前就会把青蛙卖光。

    位于Nguyen Chi Thanh街(距离Han Market约1.5公里)的Quan Mi Quang Ech Ba Nhu是当地人首推的标杆。一碗的价格在45,000至55,000 VND左右。他们早上6:00开门。这里的青蛙是个头较小的野生品种,产自周边省份,腿部炸得非常酥脆——不会像油温下降后那样变得软烂。

    另一个选择是Hai Chau区Ong Ich Khiem路沿线的一排摊位。这些店铺规模较小,通常开在自家房子的前厅,出餐速度很快。做好与建筑工人和摩托车送货员共用一张塑料桌的准备吧,这才是最地道的氛围。

    午餐:依然不错,但有注意事项

    午餐时段(上午11:00至下午1:30)是第二好的选择。店铺正常营业,大多数地方的青蛙依然是现点现炸,但香草和米饼有时放置的时间会比理想状态长。如果放在潮湿的空气中,芝麻米饼会变软——一定要检查它们上桌时是否酥脆。如果不脆,可以要求换一份新鲜的;大多数店里都有备用的袋装米饼。

    午餐价格不变。有些店会提供蒜蓉炒空心菜(rau muong xao toi)作为配菜,如果你想吃点绿叶蔬菜,这很搭。

    午餐时段尽量避开Bach Dang河滨路上的店铺。这些店主要接待旅游团,当青蛙供应不足时,他们会换成鸡肉或猪肉,且未必会告知你。

    晚餐:通常不推荐

    大多数专门经营Mi Quang ech的店铺在下午2:00到3:00之间就关门了。在Da Nang,这是一道属于早餐和午餐的菜肴。如果你在晚餐营业的餐厅看到Mi Quang ech,那通常是多菜品经营的餐厅,青蛙只是配角——往往是预先炸好再加热的,而非现点现做。口感上的差异非常明显。

    当然也有例外:大学区Nguyen Van Linh附近有几家com nieu(瓦煲饭)餐厅营业到很晚,能做出尚可的青蛙料理。但如果你的时间充裕,早餐绝对是最佳选择。

    如何点餐

    坐下后,说“mot to mi Quang ech”——即“一碗青蛙Mi Quang”。除非店里明确标有nho(小份)或lon(大份),否则大多数店只有一种分量。如果你特别在意青蛙皮的口感,可以加上“gion”(酥脆),有些厨师会多炸三十秒。

    香草拼盘通常会自动送上:香蕉花、薄荷、空心菜茎。全部加进去。挤上青柠汁。撕下一块米饼,在它变软之前蘸着汤汁吃。

    饮料选择很简单:tra da(冰茶,通常免费)或一罐汽水。现在不是喝越南咖啡的时候——那是另一站的安排。

    实用贴士

    Da Nang的大多数Mi Quang ech店没有英文菜单或招牌。菜名本身就是最好的导航工具:“mi Quang ech”发音清晰,直接把写好的字给店员看即可。每碗预算为45,000至60,000 VND,具体取决于分量和地段。如果想加一份青蛙,额外支付10,000至15,000 VND即可。
