    “Bun hen”在旅游博客上的关注度远不及“bun bo hue”,但如果你问任何一个Hue本地人周二早上在哪吃早餐,他们很有可能会告诉你:坐在路边的塑料凳上,来一碗铺满小河蚬的细米粉,再加一勺辣到让你流泪的辣椒油。这就是Hue最日常的饮食——便宜、够味,且通常上午9点前就卖光了。

    为什么Hue的Bun Hen与众不同

    这道菜其实就是“com hen”(蚬肉饭)的面条版,核心配料相同:来自Huong River的小河蚬、豆芽、炸猪皮、花生、虾酱、芝麻米饼,以及用煮蚬原汤熬制的清澈鲜汤。Bun hen的不同之处在于口感和氛围。米粉比米饭更能吸饱汤汁,吃起来湿润顺滑,非常适合大口吸溜。在Hue,辣度可不是摆设——当地人会毫不吝啬地加入新鲜辣椒和自制mam ruoc(虾酱),直到整碗面变得极具侵略性。如果你要求“bot ngot it”(少味精)或“it cay”(少辣),老板可能会投来关切的目光。

    大多数摊位在早上5:30到8:30之间营业。9点以后再去,就算还有剩,也只是锅底的残渣了。

    私藏清单

    Quan Bun Hen Ba Cu Tai — 15 Pham Hong Thai

    这是你认真询问时,本地人最推荐的一家。Ba Cu Tai在Pham Hong Thai靠近An Cuu市场的街角已经经营了20多年。这里的河蚬明显比其他摊位更饱满——这是食材周转快的标志。汤底因为长时间熬煮蚬壳,味道格外深邃。早上6点,塑料桌椅就会摆到人行道上,直到8:30卖完为止,排队的人流从没断过。一碗面价格在20,000–25,000 VND之间。别纠结配料,老板娘调配的比例就是最完美的。

    营业时间: 约5:30am–8:30am(售完即止)。不定期休息,无电话可查询。

    Bun Hen Co Xuan — 11 Nguyen Binh Khiem

    规模较小,桌位不多,但更专注。Co Xuan和一名助手亲自打理,出餐速度极快。这里的特色是炸猪皮——比一般的更酥脆且不油腻,与河蚬形成了绝佳的口感对比。她还自制了香茅辣椒油。价格:统一20,000 VND。

    营业时间: 6am–9am。

    Quan Bun Hen 45 Truong Dinh

    没有招牌,只是在Vy Da街区Truong Dinh路边的一户人家门前摆了个摊。经营的老板娘在这里待的时间够长,整条街的人都叫她“chi Lan”。这里的汤底口味较清淡——虾酱少,蚬汤多——对于觉得标准Hue(顺化)口味太重的人来说,这是首选。当然,辣椒依然给得很足。一碗18,000 VND,是2024年能找到的最低价之一。

    营业时间: 5:30am–8am。Vy Da距离Imperial Citadel区域约10分钟车程。

    Bun Hen Goc Da — Nguyen Du与Bach Dang路口

    这个摊位位于Huong River河岸附近,地理位置很重要——这里的河蚬直接由河上的渔民供应,新鲜度一眼可见。这里的环境即便以Bun hen的标准来看也非常简陋:一块帆布、四张桌子、一个煤气灶。他们做得特别好的是芝麻米饼,放在密封容器里,确保在碗里也不会因为受潮而变软。价格:22,000–25,000 VND,视分量而定。

    营业时间: 6am–9am,周一至周六。周日通常休息。

    Quan Com Hen Hem 9 — Hem 9 Nguyen Cong Tru

    这家店主打com hen,但每天早上也供应bun hen——值得推荐是因为这里的河蚬品质始终如一,且位于巷子里,游客很少。这条巷子(“hem”)在Nguyen Cong Tru路边很容易错过。告诉摩的司机“hem chin Nguyen Cong Tru”,他们就会知道。Bun hen售价20,000 VND;如果你想一次对比两种口味,com hen也是同样的价格。

    营业时间: 6am–10am。

    一碗美味的亚洲河蚬汤,点缀着香茅和红辣椒片,盛放在精致的碗中。

    避雷建议

    在Ben Ngu码头附近聚集着几家Bun hen摊位,它们几乎完全针对从Ha Long Bay等地乘旅游船而来的游客。分量更小,价格涨到了35,000–40,000 VND,品质却没提升,而且mam ruoc的味道明显被调淡了——大概是为了迎合外地人的口味。虽然没什么问题,但那不是真正的味道。如果你不小心去了那里,吃吃也无妨,但别把它当成你心目中Hue的Bun hen体验。

    点餐小贴士

    在大多数摊位,你不需要点餐——坐下后,一碗面自然会端上来。你可以调整的变量是:分量(如果想要更多蚬肉,说“them hen”)、辣度,以及是否需要额外加米饼。大多数地方的虾酱是放在旁边自己添加的;根据口味酌情加入即可。在附近摊位买一杯15,000 VND的“ca phe sua da”,这一顿早餐才算圆满。

    实用信息

    Bun hen在Hue是典型的“早餐限定”——计划在上午9点前吃完,否则午餐就得另寻他处了。摩托车或摩的是前往非中心区域摊位最方便的方式;Vy Da和Nguyen Cong Tru的摊位距离古城约2–3公里。这五家店的价格都在18,000到25,000 VND之间——记得准备零钱。
