    兴安距离Hanoi东南约60公里,作为一日游目的地绰绰有余,但却很少出现在往返于首都和沿海地区的游客行程中。如果您对区域美食感兴趣,错过这里将是一大遗憾——因为这个位于红河三角洲的小省份出产许多越南人心目中品质最好的“nhan long”(龙眼),并围绕它建立了一整套干果传统。

    为什么兴安龙眼与众不同

    龙眼在越南北部和中部均有种植,但兴安的果实几个世纪以来一直享有盛誉。历史记载显示,该省的龙眼在封建时代曾被作为贡品进献——这并非营销噱头,而是当地人至今仍以此为傲的文化背景。

    原因部分在于土壤。红河沿岸的冲积土既能保持水分,又不会导致根部积水;而该省夏季温暖、冬季凉爽的气候,促使果树形成了明确的挂果周期。兴安的“nhan lo”(一种特定的传统品种,因其果肉围绕果核形成的深邃结构而得名,意为“洞穴龙眼”)是最受推崇的品种。其果肉厚实,呈半透明的白色,带有花香般的甜味,且甜而不腻。果核很小。剥皮时,果皮会发出清脆的碎裂声。

    新鲜龙眼的旺季从6月底持续到8月。如果您在此期间身处Hanoi,老城区和Dong Xuan Market的市场里将会堆满兴安龙眼——建议寻找连枝成串售卖的果实,因为这比散装袋装的果实更新鲜。

    龙眼干产业

    让兴安的龙眼传统不仅仅是一个季节性水果故事的,是“long nhan say”(龙眼干)——这是一种家庭手工业,从7月到9月,Tien Lu、Kim Dong和Phu Cu等地区的许多家庭都以此为生。

    烘干工艺在设计上属于低技术含量。新鲜龙眼按大小分拣,然后进行慢火烘干——传统方式是在黏土墙的烘房内用木炭或木柴烘烤,尽管近十年来电烘干窑已变得更加普遍。其目标是将水分含量降至17%–20%左右,同时不烤焦果肉。优质的龙眼干外表应呈琥珀褐色,内部金黄,质地柔韧而不粘手,并保留新鲜果实的那种花香气息。

    在兴安的当地市场——可以去看看Pho Hien市场或省会Nguyen Van Linh街沿线的摊位——龙眼干的售价约为每公斤150,000–250,000 VND,具体取决于等级和品种。顶级的“nhan lo”干品价格可能更高。在Hanoi超市或机场商店出售的真空包装版本价格更贵,但风味却逊色不少。

    龙眼干易于携带,在阴凉干燥处可保存数月,也是烹饪中最常用的版本——这便引出了这一传统的厨房应用。

    甜汤与药理逻辑

    最常见的是“che long nhan hat sen”——龙眼干配莲子,有时还会加入几颗红枣(“tao do”),并用冰糖调味。它在冬季热食,夏季冷饮。在Hanoi老城区的街头摊位,一碗的价格约为20,000–30,000 VND。其味道温和:龙眼带来甜味和淡淡的清香,莲子则增加了淀粉质感,并带有一丝苦味作为平衡。

    还有一种是用“nhan nhan”(仅龙眼肉,烘干前已去核)、糯米和斑兰叶制成的版本——更接近于粥。此外还有一种简单的日常做法:龙眼干加姜和冰糖炖煮成热饮,在凉爽的月份饮用,在越南传统医学中被视为补血和助眠的补品。

    这种药理定位并非偶然。在越南饮食文化中——尤其是在北方——食物与药物之间的界限非常模糊。龙眼干被认为性质温和,具有养心安神的作用。母亲会在孩子病后给他们吃,老年人喝姜汁龙眼汤的方式就像其他人服用补品一样。无论您是否相信其中的药理逻辑,它确实塑造了这种食材的使用方式和时机。

    交通指南与选购建议

    兴安市距离Hanoi 60公里——从My Dinh或Giap Bat车站乘巴士约需90分钟,或沿5号公路向南骑摩托车不到一小时即可到达。这里不是一个游客众多的目的地:主要的看点是Pho Hien古镇(一个在17世纪达到鼎盛的贸易港口)、一些古老的公房和寺庙,以及水果。

    如果您在龙眼季节(6月底至8月)前往,省道沿线的路边摊会出售新鲜水果,价格为每公斤30,000–60,000 VND,视等级而定。龙眼干全年供应。建议避开高速公路休息站那些定价虚高的礼盒;从市场摊贩那里按重量购买散装干果性价比更高。

    若想了解其他值得与兴安之行结合的北方饮食传统,甜汤文化与您在Hanoi所能找到的美食自然衔接——包括lotus tea和还剑湖周边的甜品摊。

    实用贴士

    兴安最适合作为Hanoi行程的半日补充,除非您非常热衷于缓慢的三角洲旅行,否则无需在此过夜。记得带个袋子装干果——您买的数量往往会超出计划。如果您在龙眼季节之外造访,古镇和寺庙仍然值得花几个小时参观,但那种让旅行变得特别的水果市场氛围,很大程度上与7月至8月的窗口期紧密相连。
