    "Cao lau" 是 Hoi An 最具代表性的美食。当地人会告诉你,这道菜在别处无法复刻,因为其灵魂在于必须使用古镇内古老的占婆水井——Ba Le 井的水。无论你是否相信这个传说,面条本身确实独特:粗而有嚼劲,呈现淡淡的灰褐色,上面铺着五香猪肉片、酥脆的米饼碎和一把新鲜香草,汤汁不多,刚好拌匀面条。对于带孩子的家庭来说,好消息是 Cao lau 的口味非常温和,不辣,而且在餐桌上可以根据个人喜好进行调整。

    一碗好的 Cao lau 是怎样的

    一碗地道的 Cao lau 讲究三种口感的融合:面条的嚼劲、米饼的酥脆,以及猪肉的软嫩。汤汁——与其说是汤,不如说是一种浓缩的卤汁——应该带有淡淡的八角香气。如果汤汁过多或米饼变软,说明制作不够地道。在 Hoi An,Cao lau 的分量按越南标准来看偏小,所以孩子和大人通常都会点两碗。

    价格相对统一:当地小店每碗 35,000–55,000 VND,而在那些针对游客的餐厅,价格可能高达 75,000–90,000 VND。无论如何,这些价格都不算贵,但最便宜和最贵之间的品质差距并不总是对等。

    推荐去处

    Thanh Cao Lau — 26 Thai Phien

    当你诚心向当地人打听时,他们一定会推荐这家店。它位于距离日本廊桥约 400 米的一条狭窄店屋里,这条街比主要的旅游干道安静得多。店内摆放着塑料凳,灯光是简单的日光灯,菜单是塑封的,上面只有两三样菜品。这里的 Cao lau 每碗 40,000 VND。猪肉切得很厚,五香味道浓郁。这里非常适合带孩子——店主一家人也坐在同样的桌子旁用餐,环境轻松。营业时间大约为早上 7 点至下午 2 点;生意火爆时下午早些时候就会卖光,所以建议在上午 11 点前到达。

    Truong Cao Lau — Nguyen Truong To Street

    这家店靠近市场一侧,规模稍大,桌位更多,这对于带着婴儿车或好动的小朋友的家庭来说非常重要。每碗 45,000 VND。这里的米饼碎特别酥脆——他们是小批量现炸的,而不是开店时一次性准备一大桶。汤汁给得很足。店员英语水平有限,但菜单上有图片。早上 6:30 开门,营业至下午 1 点左右。

    Quan Cao Lau Ba Buoi — 17/2 Le Hong Phong

    这家店隐藏在 Le Hong Phong 街的一条小巷里,距离 Hoi An 中心市场约 600 米,是由家庭厨房改建的。虽然稍微难找一点,但绝对值得。创始人 Ba Buoi 奶奶现在已经不再每天下厨,但她的女儿完整地传承了配方。这里的猪肉切得较薄,香草非常新鲜——用的是空心菜和薄荷,而不是某些店里那种普通的香草拼盘。每碗 50,000 VND。早上 7 点开门,卖完即止,周末通常在上午 11:30 左右就会售罄。店内两个房间加起来大约能坐 20 人;这里欢迎家庭用餐,环境足够安静,适合带小朋友用餐。

    给家庭的实用建议

    在 Hoi An,Cao lau 是一道早餐或早午餐,大多数好店在下午早些时候就会关门。请围绕这一点安排行程。如果你住在古镇外,比如从 An Bang Beach 打车或用 Grab 过来,车程约 10–15 分钟,费用约为 40,000–60,000 VND。

    这道菜本身不辣,但如果是给年幼的孩子点餐,建议说“khong cay”(不要辣椒),因为有些店默认会撒上干辣椒碎。米饼碎对于幼儿来说有噎住的风险,吃的时候可以先挑出来。

    如果你的家庭计划深入探索古镇,Hoi An 的行程可以自然地与步行前往日本廊桥以及在裁缝街漫步结合起来。虽然 Temple of Literature 和 water puppetry 是河内的体验,而非 Hoi An 的特色,但 Hoi An 也有自己值得花一下午时间游览的安静文化景点。如果你还想尝试另一种值得一吃的 Hoi An 面食,"mi quang" 在许多相同的街头小店也有供应,如果孩子们想换换口味,它是很好的第二顿早餐选择。
