    岘港有一种独属于自己的汤品。“Bun cha ca”——即配有鱼饼、番茄、菠萝和大量新鲜莳萝的米粉汤——是这座城市在早上6点到9点之间的主食。如果你在9点半还没吃上一碗,大部分店里就已经卖光了。

    这道菜在河内或西贡可做不出地道的味道。中部地区的版本口感更酸爽、香气更浓郁,其核心在于优质店铺自制的 cha ca——那是用鱼泥捶打成型后制成的紧实鱼饼,而非那种口感像橡胶的切片货。汤底清澈却极具冲击力:番茄和菠萝提供了温和的酸甜基底,而莳萝(在越南北部和中部沿海地区以外很少见)则提升了整碗汤的层次。

    以下是四家值得一去的店铺,它们都非常适合带孩子的家庭,这意味着店内座位不仅能容纳两人以上,而且店员也不会因为你带着五岁的孩子而给你脸色看。

    Bun Cha Ca Ba Lua — 基准之选

    如果岘港有人让你去尝尝 bun cha ca,却没给你具体地址,他们指的通常是 Han Market(韩市场)附近 Nguyen Chi Thanh Street 的那一片店铺。Ba Lua 是其中历史最悠久的店之一——低矮的塑料凳,门前一排桌子,厨房早上6点准时开火。

    普通的一碗价格在 30,000–35,000 VND。你会得到一份米粉、两到三片鱼饼、一勺汤底,以及一小盘生豆芽、青柠和辣椒。莳萝已经放进碗里了;菠萝块则漂浮在汤中。如果孩子饿了,可以加 10,000 VND 多要一份 gio lua(越南猪肉卷切片)。

    营业时间大致为 早上6点至10点,卖完即止。不接受电话预订——直接去就行。

    Bun Cha Ca 109 — 空间稍大,对团体更友好

    109 Nguyen Chi Thanh 的环境对家庭更友好:桌子是正常高度,室内座位可以容纳四到六人的团体,而且营业时间稍长——通常到 10点半或11点 才会售罄。价格在同一区间,根据配料不同约为 30,000–40,000 VND。

    这里的不同之处在于 cha ca 本身——他们既提供标准的切片鱼饼,也提供一种更圆、口感更蓬松的鱼饼,这是用鲭鱼而非更常见的金枪鱼或鳕鱼混合制成的。孩子们往往更喜欢这种较软的口感。如果你想要鲭鱼版本,可以点 cha ca thu。

    这里的汤底因为菠萝比例较高,口感偏甜一点。这到底是好是坏因人而异——这确实与 Ba Lua 有所不同,而不仅仅是营销手段。

    Quan Bun Cha Ca Thanh — 莳萝爱好者的首选

    位于 Tran Binh Trong Street,靠近 Cham Museum(占婆雕刻博物馆)一侧,如果你追求的是莳萝的香气,就去这家小店。他们放的莳萝比大多数店都要多,汤底也更清澈,番茄味较淡。吃起来口感更清爽。

    这家店确实很小:大概只有五张桌子。它适合家庭用餐,但周末最好在早上7点前到达,否则就要排队了。每碗价格为 25,000–30,000 VND,是这份名单中最便宜的。营业时间为 早上6点至9点半,通常会更早卖完。

    Bun Cha Ca Cô Gai — 周末的最爱

    “Co Gai”(意为“女孩的店”,这是一个流传下来的昵称)位于 Hoang Dieu Street,是岘港带孩子的家庭最常回访的一家店。这里的座位是四家店里最舒适的——有真正的椅子、带遮阳的户外区域,店员也习惯了周末早晨带孩子的家庭那种忙乱。

    这里的 cha ca 是每天新鲜制作的,店里不会预先切好——而是现点现切,这意味着它在热汤中能保持更好的口感。一碗加了额外鱼饼和溏心蛋的套餐大约 45,000 VND。他们还提供一份 20,000 VND 的儿童份——这在街头小吃店里非常少见。

    每天 早上6点至10点半 营业,周末会稍晚一点。在周六和周日的早晨,你可能会看到四到八人的大家庭坐在人行道上用餐——记得空着肚子去,不要着急。

    点餐与吃法建议

    端上来的碗里已经配好了食材。不要立刻搅拌——让汤底沉淀一下,先挤入青柠汁,如果喜欢吃辣就加点辣椒,然后放入豆芽。豆芽应该保持一点爽脆的口感。莳萝已经放进去了,不要把它挑出来。

    大多数店应要求会提供一份 banh mi(通常为 5,000–8,000 VND)——即用来蘸汤吃的小法棍。虽然这不是传统吃法,但味道很棒,孩子们通常也很喜欢。

    实用贴士

    这四家店都只收现金;请准备好零钱。岘港韩市场和 Hoang Dieu 走廊一带的早高峰在早上7点半左右就会变得拥挤,所以如果你骑着摩托车带孩子,请在入座前规划好停车位。早上6点到8点是名单上每家店品质和供应的最佳窗口期。
