    Da Lat 的夜晚总是凉意阵阵,让你恨不得桌下能有一团火焰。而“Lau ga la e”——一种用特殊品种的罗勒烹制的鸡肉火锅,其味道介于茴香、柠檬马鞭草和某种难以名状的香气之间——正是当地人对抗寒冷的秘诀。它起源于富安省(Phu Yen),但在 Da Lat 扎根极深,以至于大多数游客都以为它是高地特产。其实不然,但在气温降至 15°C 的夜晚,起源故事早已不再重要。

    什么是 La E

    “La e”是让这道菜值得一尝的关键。它不是你在 pho 配菜盘里常见的泰国罗勒,也不是圣罗勒。这种植物在其他地区有时被称为“hung que rung”,叶片细长且边缘微锯齿,带有一种清凉、淡淡的茴香气息,当它进入滚烫的汤底时,香气会瞬间迸发。你很难找到替代品,如果一家餐厅没有这种叶子,建议换一家。

    火锅本身很简单:用鸡骨、香茅和姜熬制的清汤或金黄汤底,生鸡肉块在桌上现煮。La e 叶最后放入,迅速烫软,为整锅汤增添风味。配菜通常包括米粉(bun)、空心菜和香蕉花——都是用来涮煮的绝佳食材。

    Da Lat 的推荐去处

    Lau ga la e 店铺主要集中在春香湖(Xuan Huong Lake)以西的区域,特别是 Phan Dinh Phung 路沿线以及 Truong Cong Dinh 街的巷子里。以下是几个可靠的选择:

    Quan Lau Ga La E 54 Phan Dinh Phung 是那种下午 6:30 就会坐满,且无需任何 Instagram 宣传的店。桌子是塑料的,汤底端上来时已经在沸腾,老板会主动为你添加鸡汤。人均消费约为 120,000–150,000 VND,包含米粉和蔬菜。营业时间大致从下午 4 点到售罄,通常在晚上 9 点左右。

    Co Tam Lau Ga 位于 Truong Cong Dinh 街的一条小巷里(留意巷口的招牌),环境稍微精致一些——木桌、灯光更好——周末深受当地家庭欢迎。价格相近:两人份的锅底大约在 220,000–260,000 VND 之间(不含饮料)。

    这两家店都可以从 Da Lat 市场区域步行到达。均不接受预订。如果你想避开排队,请在下午 6 点前到达。

    如何从容点餐

    当你坐下时,通常会被立即问到一个问题:锅的大小。“Nho”(小份,适合 1-2 人)或“lon”(大份,适合 3-4 人)。如果语言不通,直接用手指比划即可——Da Lat 旅游区的店员对此习以为常。

    两人份的标准点餐:

    • 一份小份 Lau ga la e
    • 一份 bun(米粉)——说“bun”并竖起一根手指
    • 一盘 rau(混合蔬菜)——通常是预先配好的,包含空心菜和香蕉花

    如果你想额外加一份 la e 叶,可以说“them la e”,并做出往锅里放叶子的手势。大多数店会额外提供一小盘,价格为 10,000–15,000 VND。

    至于饮料,最自然的搭配是“bia hoi”(如果你想喝点凉的),或者免费提供的热茶。Da Lat 还有当地特产的草莓酒(ruou dau tay),当地人常配着火锅喝——口感微甜,酒精度低,非常不错。

    烹饪顺序

    服务员通常会帮你处理最初的几分钟,放入鸡肉并调节火候。之后就可以自己动手了。基本节奏:让鸡肉在沸腾的汤中煮 5 到 6 分钟后再吃。蔬菜分批加入,因为它们熟得很快。La e 叶在准备吃之前 30 秒放入即可;煮太久会产生苦味。所有食材都可以蘸取提供的姜盐酱(muoi gung)食用,这能有效中和鸡肉的油腻感。

    行前须知

    Lau ga la e 是一道晚餐菜肴。几乎没有店在午餐时供应——这种体验与 Da Lat 的夜间凉意紧密相连,大多数店最早下午 4 点才开门。如果你在 Tet 期间或节假日高峰期前往,请做好在下午 5:30 之前排队的准备。

    过敏提示:汤底由鸡肉、香茅和鱼露制成,非素食。目前没有标准的素食版本。

    预算大约每人 150,000–180,000 VND(含饮料)。这与一碗体面的“bun bo hue”加咖啡的价格相当,但在气温下降时,火锅带来的满足感要高得多。

    实用提示

    Da Lat 大多数 Lau ga la e 店在 Google 地图上的营业时间并不准确——建议直接在 Phan Dinh Phung 和 Truong Cong Dinh 区域步行,顺着香茅的香气和便携式燃气灶的嘶嘶声寻找。请携带现金;这些店很少支持刷卡。两人餐费通常在 350,000 VND 以内。
