    “Xoi ngu sac”——即五色糯米饭——看起来精致得不像是街头小吃:木托盘或芭蕉叶上盛放着黄、红、绿、紫、白五种颜色的糯米,每种色泽都取自不同的植物。在Sapa,它出现在早市、镇广场附近的节日摊位,以及少数几家清晨8点前开门、10点左右便售罄的固定店铺。在您走向摊位之前,以下是您需要了解的信息。

    每种颜色代表什么

    这五种颜色并非使用食用色素。每一种色泽都源自当地的天然材料,这也是为什么糯米在不同区域尝起来味道略有差异的原因——虽然不明显,但确实可以察觉。

    • 黄色来自姜黄根(cu nghe),带有一种淡淡的泥土芬芳和暖意。
    • 红色或深橙色来自“gac”果(木鳖果)——一种长满刺的红瓜,其假种皮赋予了糯米一种微甜且醇厚的油脂感。Gac果具有季节性,有时会用红龙果或洛神花提取的洋红色代替。
    • 绿色来自班兰叶(la dua),加热后会散发出一种温和的草本清甜和类似香草的香气。
    • 紫色通常提取自紫甘蓝或“la cam”,这是一种在北部高地很常见的紫红色叶植物,带有淡淡的坚果味。

    在Sapa哪里可以买到

    Sapa市场 (Cho Sapa)

    Cau May街上的室内市场是每天最稳妥的购买点。请在早上6:30到9点之间前往。在新鲜农产品区附近,至少有两三家摊贩会用放在矮桌上的大竹蒸笼售卖xoi ngu sac。寻找那个摆着五色糯米木托盘的摊位——您一眼就能看到。一份标准份量(用芭蕉叶包裹或装在小塑料袋里,配有一根竹签)售价为15,000–20,000 VND,约150–200克。这是一份单人的早餐或充实的点心。

    Ham Rong早市(仅限周末)

    周六和周日上午,Hoang Dieu街的Ham Rong山门附近会有一个小型市场。这里有一两家摊贩专门经营高地糯米饭,xoi ngu sac通常与“xoi xeo”(绿豆碎炸葱糯米饭)一起出售。价格区间相同。

    固定店铺:Co Dung,15 Thac Bac Street

    如果您不习惯在市场购买,这家位于银瀑布(Silver Waterfall)路口附近的小店营业时间更规律——每天早上6点到10点(周二除外)。店主是一位在这里经营了十多年的Tay族女性,她在Tet(春节)期间也会售卖“banh chung”。她的xoi ngu sac比市场版的口感更紧实,有些人更偏爱这种口感。起售价为20,000 VND。

    如何从容地点餐

    令人紧张的是,Sapa市场的大多数摊贩英语水平有限,且交易节奏很快。这里有一个简单的方法。

    用手指点并比划。 您只需要沟通份数。举起一根手指,指向糯米,点头。搞定。

    说“mot phan xoi”(一份糯米饭,发音大致为 moht fan soy),如果您想尝试说越南语的话。摊贩会听懂并对此表示赞赏。

    准备零钱。 20,000 VND的纸币最理想。在越南(베트남 / 越南 / ベトナム)的街头摊位递出500,000 VND的大钞会造成不便,Sapa也不例外。

    加一份nem chua。 有些摊贩会在糯米饭旁边放一个小篮子,里面装着“nem chua”——用芭蕉叶包裹的发酵猪肉卷。额外只需5,000–10,000 VND,味道非常搭。如果看到了,指一下即可。

    不要等盘子。 Xoi ngu sac是边走边吃的食物。您会得到一个包裹好的成品。在附近找一面墙或台阶,打开包装,用竹签或直接用手吃就行。

    什么时候最容易买到

    Xoi ngu sac在Sapa全年供应,但在Tet和当地丰收节期间最为丰富,那时家家户户都会制作,摊贩也会准备更多份量。如果您在Tet期间到访,几乎每个市场摊位都能看到它,旁边通常还有“banh chung”。在节日之外,请尽早前往——工作日上午9:30之后,好的批次通常就卖光了。

    糯米饭不适合二次加热,请趁新鲜食用。

    实用贴士

    Sapa海拔约1500米,清晨非常寒冷,尤其是3月至11月期间——早上7点来一份温热的姜黄糯米饭不仅上镜,而且非常暖胃。预算准备20,000–40,000 VND,足够买一份五色糯米饭加配菜。如果您想配点喝的,附近摊位的一杯热“ca phe sua da”只需额外20,000 VND,搭配糯米饭口感极佳。
