    如果你在Sapa待了超过一天,吃过专门为徒步游客准备的黑芝麻煎饼和香蕉花沙拉,那么你吃的只是“游客层”的食物。“Men men”——一种粗蒸玉米粉,口感介于玉米糊和捣碎的谷物之间——隐藏在这一切之下,存在于苗族家庭真正烹饪的巷弄和村舍院落里。

    这不是什么精致的食物,拍照也不怎么上镜。但正是这道菜,让高地社区在无法种植水稻的高海拔寒冷月份得以果腹。正确地品尝它——配上一勺猪骨汤或炖野菜——比任何文化表演更能让你了解北方山地的生活。

    什么是Men Men

    “Men men”是用干玉米粒磨成粗粉,然后放入蒸笼蒸制而成——传统上是放在陶罐上的竹制或木制蒸笼。它的质地颗粒感强且紧实,不像玉米糊那样细腻,而是呈块状。吃的时候,掰下一块,蘸着旁边的汤或炖菜吃:猪油汤、用水稀释的发酵豆酱,或是芥菜干肉汤。单吃它味道清淡,带着玉米的微甜;配上汤汁,它能吸收所有味道,变得值得细细品味。

    在Sapa周边的村庄——特别是Ta Van、Lao Chai以及通往Y Linh Ho更高处的一些黑苗族社区——men men依然是老一辈家庭的日常主食。年轻一代的家庭已经转向以米饭为主,因此寻找正宗men men的机会正变得越来越少。

    在Sapa及周边哪里可以找到

    Sapa市场——仅限周六和周日上午

    Sapa市场Cau May街的一楼,在周六和周日上午(每周集市吸引周边村民前来时),会有少量苗族摊贩从早上6点到9点左右烹制men men。寻找那些坐在陶罐后、上面堆着竹蒸笼的妇女。这里没有招牌。一份配汤的men men价格在15,000–20,000 VND之间。请务必在上午8:30之前到达——卖完即止,摊贩通常收摊很早。

    Ta Van村——循着炊烟寻找

    Ta Van位于Sapa镇中心东南约8公里处,经由Lao Chai的山谷公路可达。这里的几家民宿会为自家早餐烹制men men,如果你前一天晚上提出要求,他们也会为客人准备——这不是菜单上的固定菜品,而是私下安排。Nha Sap Homestay(在村子主路尽头靠近吊桥的地方,找女主人May)经常为直接询问的游客提供这项服务。如果你作为客人而非住宿游客用餐,预计支付30,000–40,000 VND。这里的汤是配干辣椒的清淡猪骨汤,这是该山谷中最常见的吃法。

    Y Linh Ho村——难以抵达,但更可靠

    Y Linh Ho距离Sapa约5公里,位于通往Muong Hoa山谷的路上。那里有一小片房屋,men men出现的频率更高,因为该社区居民年龄偏大,且玉米梯田仍在耕作。这里没有餐厅。只有一个位于社区供水点附近的遮盖式烹饪区——你还没看到它,就会先闻到蒸笼的香味。一位熟悉该村庄的Sapa当地向导可以帮你安排;独自前往也可以,但意味着你需要四处走动直到有人邀请你进去,这种情况确实会发生,但过程比较缓慢。

    如何正确享用

    不要在里面加任何甜味的东西。Men men不是甜点玉米。你遇到的最佳搭配是发酵豆酱汤(咸鲜,略带发酵风味)、芥菜炖菜或简单的猪油配盐。如果你在民宿用餐,请按照他们提供的方式吃——在尝试原味之前,不要急着要鱼露或辣椒。谷物的质量很重要:用刚收获的玉米现蒸的men men带有一种陈年玉米所没有的淡淡甜味。

    实用建议

    如果你没有向导或预订民宿,周六上午的Sapa市场是你最可靠的选择。如果你计划进行穿越Lao Chai和Ta Van的山谷徒步(Sapa出发的标准一日游路线),请预留时间在Ta Van停留,而不是急着赶去别处吃午餐。Sapa镇上的大多数餐厅都不提供men men;少数在菜单上列出该菜品的餐厅,往往提供的是那种失去了质感的、迎合游客的改良版本。
