    Nha Trang (芽庄) 是一座海滨城市,因此大多数关于它的旅游文章都聚焦于下午。那是个误区。真正的美食行动从早上6点开始,那时海风依然凉爽,摊贩们刚刚摆好摊位,当地人正吃着一碗碗售价30,000 VND的汤面,味道比你在酒店餐厅里找到的任何东西都要好。

    "Bun bo Hue" 在这里也很有名,它是从北边两小时车程的古都传入的,并根据当地口味进行了微调。芽庄版本的辣度通常比 Hue 原版稍低,但你依然能吃到粗圆的米粉、香茅味浓郁的汤底和切片猪肉。可以在城市西缘的 Vo Canh 地区寻找,那里有几家家庭小店几十年来一直沿用着同样的配方。

    如果想吃点清淡的,"bun rieu" —— 蟹肉番茄汤配油豆腐和猪肉 —— 会出现在 Nguyen Thi Minh Khai 街附近的 Cho Xom Moi (Xom Moi Market) 周围的小摊上。这是一种看起来清淡但内涵丰富的汤。价格:约30,000 VND。

    糯米饭与咸味小吃

    "Xoi" —— 糯米饭 —— 是芽庄上班族赶时间时的外带首选。摊贩们把车停在校门口和市场入口处,大锅里盛着层层叠叠的糯米饭,配料包括绿豆泥、炸葱酥、鸡丝、中式香肠或咸蛋。你指一下想要的配料,摊主就会把它舀进塑料袋或用香蕉叶包好,两分钟就能带走。价格:15,000–25,000 VND,取决于配料。早上6点到8点之间,Bach Dang 街和 Nguyen Thi Minh Khai 街上的 xoi 摊位最密集。

    "Banh mi" 随时都能买到,但芽庄的早餐 banh mi 最好去那些每天新鲜准备馅料的老店,而不是使用预制成品。寻找那些有木炭烤架的摊位——他们是现点现烤面包,而不是直接给你一个冷面包卷。肉酱、cha lua (蒸猪肉香肠)、黄瓜和腌萝卜是标准搭配。价格在15,000–20,000 VND左右。

    游客很少注意到的一种更地道的选择是:"banh canh cha ca" —— 类似乌冬面的粗米粉,配上清淡的鱼汤和鱼饼。芽庄得天独厚的沿海地理位置意味着这里的鱼饼是每天新鲜制作的,其口感与工厂压制的版本有着明显的区别。在 Le Thanh Ton 74号有一家名店,早上6点开门,通常9点前最好的鱼饼就卖完了。一碗价格:35,000–40,000 VND。

    咖啡是必不可少的

    芽庄有其独特的咖啡文化,部分源于几代以来迁移到此的大量越南中部人口。默认的早晨点单是 "ca phe sua da" —— 加炼乳的冰咖啡 —— 装在小玻璃杯里,上面盖着滴漏壶,端上来时咖啡还在滴落。不要立刻搅拌。让最后一滴滴完,然后再搅拌。

    老派的 "ca phe vot" 风格 —— 用布袋过滤冲泡的大桶咖啡,然后舀进杯子里 —— 虽然比较难找,但在 Cho Dam 附近的一些地方依然存在。它比手冲咖啡更粗犷、颜色更深,也没那么上镜,但这正是隔壁桌65岁出租车司机正在喝的。值得一试。

    如果你想坐下来好好喝杯咖啡,而不是在摩托车旁站着喝,Nguyen Thien Thuat 街(距离海滩路仅一个街区)沿线有一些小咖啡馆,早上6:30开门,而且在你刚睡醒时不会播放吵闹的韩国流行音乐。

    如何寻找美食

    芽庄的早餐地理位置并不集中在一条街上,而是分散在各个市场区域。Cho Dam 和 Cho Xom Moi 是两个核心。两者距离 Tran Phu 的主要旅游酒店区都在10分钟车程内。从海滩区到 Cho Dam 的 xe om (摩托车出租车) 费用大约是 20,000–30,000 VND。

    一定要早去。大多数值得一去的摊贩在早上9点前就收摊了。在那之后,你吃到的可能就是剩下的或者重新加热的食物了。

    实用小贴士

    准备好小额钞票 —— 10,000 和 20,000 VND 的纸币。市场早餐摊贩很少有零钱找给你 200,000 VND 的大钞。大多数地方没有英文菜单;指一下旁边人点的东西,通常就能吃到很棒的早餐。
