    从河内出发,驱车两小时即可抵达宁平(Ninh Binh)。人们通常将宁平视为一处观光目的地——喀斯特峰林、河上游船、稻田风光。但这种定位未免有些小看了它。这里的食物独具特色,扎根于土地的馈赠:在岩石山坡上觅食的山羊、从锅底刮下的焦香锅巴,以及一种无需与河内版竞争、也无需证明什么的“pho”。用一个周末的时间,吃得好一点,节奏慢一点,在周日夜晚回到城市时,你不会有任何仓促行程带来的遗憾。

    交通指南

    最快捷的方式是从河内的美亭(My Dinh)或甲八(Giap Bat)车站乘坐巴士前往宁平,车程约2小时,票价根据车次约为80,000–120,000 VND。如果你是三四人同行,包车价格相差无几,且能直接送达目的地。火车也是一种选择,终点站是宁平火车站,距离Luong Van Tuy街上的主要民宿区约2公里。抵达后租一辆摩托车(每天约100,000–150,000 VND)——这是穿梭于各景点和餐厅之间最明智的方式。

    第一天 — De Nui 与古镇巡礼

    午餐:花样山羊肉

    “De nui”——宁平山羊肉——是区分“真正去过宁平的人”和“只看过Tam Coc照片的人”的试金石。这里的山羊在石灰岩山坡上觅食,这使得肉质更加精瘦,且带有一种人工饲养山羊所没有的淡淡野味。在同一张餐桌上,你通常能吃到四种做法:炭火烤制(de nuong)、香茅蒸(de hap)、姜丝爆炒(de xao gung),有时还有高良姜焖煮。标准的双人份分享餐总价约在250,000–350,000 VND之间。

    主要的De nui餐厅聚集在通往华闾(Hoa Lu)的路上,距离宁平市区西北约4公里。不必纠结去哪家——大部分餐厅水准都很高,分量十足,游客导向型餐厅与路边塑料凳小店之间的品质差异比你想象的要小。点上一杯冰镇“bia hoi”或当地的Truc Bach啤酒,慢慢享用。

    下午:华闾与山谷公路

    午餐后,骑车前往距离市区约12公里的古都遗址——华闾。寺庙建筑群规模适中,45分钟即可逛完,周围的山谷公路骑行体验极佳。这并非偏离了美食主题,而是为了晚餐积攒食欲。

    晚餐:寻味 Com Chay

    “Com chay”——字面意思即“焦米/锅巴”——是宁平最著名的特产,尽管许多河内人吃过其简化版本却并不自知。在这里,它被制作得非常地道:厚实的锅巴圆片,炸至酥脆膨胀,配上慢炖猪肉、虾干和蘑菇熬制的蘸酱食用。口感的对比——锅巴的酥脆与配料的咸香顺滑——正是这道菜的精髓所在。

    最出名的Com chay一条街位于宁平市的Hoang Hoa Tham街。价格合理:一份双人份的Com chay套餐仅需150,000–200,000 VND。记得多要一份酱汁——餐厅给的第一份通常不够。有些店还提供素食版本,配以豆腐和野生蘑菇,味道同样惊艳。

    一顿地道的波斯餐,包含Gheimeh炖肉和酥脆的锅巴,在自然光下显得格外诱人。

    第二天 — 晨间 Pho、稻田与返程

    早餐:山间 Pho

    宁平当地的pho(越南河粉)比河内版本更为内敛。汤头更清淡,有时因当地水质和烹饪时间较短而带有一丝清甜,河粉本身也偏厚。你在这里找不到河内版pho中标志性的八角和焦姜味,但这正是它的特色。这是一种晨间食物——清爽、温暖、简单纯粹。

    街头的pho摊位开得很早,大约清晨6-7点就在Tran Hung Dao街附近的中心市场开张了。一碗售价35,000–50,000 VND。配上店家提供的香草和辣椒即可,无需添加过多酱料;汤头足够细腻,值得细细品味。

    上午:Trang An 或 Tam Coc — 二选一

    没必要两个都去。Trang An是更大的联合国教科文组织世界遗产游船线路,距离市区约7公里——路线更长、景观更多样,如果你想在水上待上几个小时,选这里更好。Tam Coc线路较短,且来自河内的一日游游客较多。无论选哪个,都是餐后消食的好去处。Trang An的船票约为每人250,000 VND;Tam Coc为150,000 VND。

    离前午餐:宁平风味 Bun Cha

    返程前,找一碗当地的“bun cha”——这里的版本与河内略有不同,肉饼更小,蘸汁更甜,配菜的香草种类更多。虽然不是完全相同的菜肴,但非常值得一试。巴士接送点附近的路边摊通常从上午11点左右开始供应。

    实用贴士

    如果你想方便地品尝当地美食,建议将住宿预订在宁平市区,而不是Tam Coc附近的度假区——Luong Van Tuy街上的民宿双人间每晚价格在250,000–450,000 VND之间。预算方面,每人每天准备500,000–700,000 VND用于餐饮、交通和门票,就能吃得非常丰盛且游玩尽兴。
