    Hoi An 是一座小镇,但其在美食界的地位却远超其体量。在这里待上三天,你有足够的时间避开游客扎堆的餐厅,去品尝当地人真正钟爱的美味。

    第 1 天 — 古镇经典

    清晨:地道的早餐方式

    接着,在 Nguyen Hue 街的小巷里找一家咖啡馆,来一杯越南咖啡——那种加入炼乳的慢滴冰咖啡。避开主街上那些专门为拍照而设的网红咖啡馆。

    中午:“Banh Mi” 与 “White Rose”

    Hoi An 有充分的理由宣称自己拥有全越南最好的“banh mi”三明治。Phan Chau Trinh 街的 Banh Mi Phuong 非常出名,这确实名副其实,尽管高峰时段排队是常态。一个料足的三明治价格在 35,000–50,000 VND 之间,取决于配料。点一份招牌(dac biet),站在街边趁热吃掉。

    午餐可以寻找 “banh bao vac”——菜单上通常翻译为“白玫瑰”饺子。这种半透明的米皮饺子,里面包裹着虾肉或猪肉,蒸熟后撒上酥脆的红葱头。它们口感细腻、略带嚼劲,而且几乎没有其他地方能做得如此地道,因为饺子皮是由镇上一户人家专门制作的。大多数古镇餐厅都有供应,一盘大约 50,000–65,000 VND。

    傍晚:“Banh Xeo” 与河畔风光

    晚餐点一份“banh xeo”——这种滋滋作响的米浆煎饼,里面塞满了虾、豆芽和猪肉。在 Hoi An,这种煎饼比 Saigon 风格的要小,更像塔可(taco)而不是大圆饼。用芥菜叶和米纸包裹着吃,蘸上鱼露(nuoc cham)。Nguyen Thi Minh Khai 街靠近廊桥的餐厅做得不错。预算准备 80,000–120,000 VND,包含一顿饭和一瓶当地啤酒。

    第 2 天 — 烹饪课与中央市场

    清晨:中央市场

    Bach Dang 街河边的市场是 Hoi An 的美食供应心脏。早上 7 点前到达这里。你会看到定义当地烹饪的特定区域食材:空心菜、香蕉花、cao lau 汤汁中使用的姜黄小块茎、新鲜的 “goi cuon” 米纸。几家烹饪学校会在上课前提供市场导览——Morning Glory Cooking School 和 Red Bridge 都做得很好,课程价格在 650,000–900,000 VND/人,包含市场参观、动手烹饪和午餐。

    下午:烹饪、享用、休息

    半日课程通常涵盖三到四道菜——预计会做 cao lau、banh xeo、新鲜春卷(“goi cuon”)和一道汤。动手实践非常有意义;你将学会那些使越南中部美食区别于 Hanoi 或 Saigon 的香草搭配技巧。课后,你可以享用自己亲手做的菜肴,这样下午就不会吃得太撑,晚上正好又有胃口去探索美食。

    傍晚:远离灯笼,寻找地道味

    往古镇中心以东步行 15 分钟,价格会降低约三分之一。Nguyen Duy Hieu 街沿线有许多家庭经营的 com(米饭)小店,一盘丰盛的 “com tam”——碎米饭配烤猪肉、鸡蛋和腌菜——只需 40,000–55,000 VND。这里才是当地人吃晚餐的地方。没有英文菜单,但用手点餐完全没问题。

    第 3 天 — Tra Que 与 Cam Thanh

    清晨:Tra Que 香草村

    Tra Que 位于古镇以北约 3 公里处——骑自行车 15 分钟即可到达,或者乘坐 xe om(摩托车出租),价格约 30,000–40,000 VND。这个村庄种植着供应 Hoi An 大多数餐厅的香草:叻沙叶、紫苏、越南香菜、小葱。几家农场提供简短的农事体验(除草、浇水、耙地),随后是烹饪演示和用餐。这里节奏缓慢且悠闲。结束后,买一袋新鲜香草带回去——价格比市场便宜得多。

    在村子里吃早餐。农耕区附近的一些小摊位售卖 “banh cuon”——蒸米卷,里面塞满了猪肉末和木耳,配上炸葱和蘸酱。一盘大约 30,000 VND。

    下午:Cam Thanh 水椰林

    Cam Thanh 村位于 Hoi An 东南约 4 公里处。吸引人的是 “rung dua nuoc”——穿梭在狭窄水道中的水椰林。篮子船游览价格为 150,000–200,000 VND/人,全程约 45 分钟到 1 小时。这里安静且自然风光优美,没有太多喧嚣。村口的当地经营者比镇上出售的打包旅游团更便宜。

    坐完船后,在 Cam Thanh 的河畔餐厅用餐。“Mi Quang”——这种配有虾、猪肉、花生和少许汤汁的姜黄面条,是这里的必点菜。一碗价格在 45,000–60,000 VND 之间。它不同于 cao lau,也不同于 pho,是地道的越南中部特色。

    傍晚:在古镇放松

    傍晚时分回到古镇。如果你还没试过 “bia hoi”——每天新鲜酿造、每杯仅售 10,000–15,000 VND 的生啤——那么 Hoai 河边 Bach Dang 街上那些摆着塑料凳的小店就是最佳去处。点一盘 nem lui(柠檬草烤猪肉串),为这次旅行画上圆满句号。

    实用贴士

    古镇内大多数餐厅都在步行范围内;前往 Tra Que 和 Cam Thanh 可以租一辆自行车(每天约 50,000–80,000 VND)。最佳用餐时间遵循当地节奏:早餐 6:30–8:30,午餐 11:00–13:00,晚餐从 17:30 开始。如果你想在小型餐厅找到座位,请避开游客午餐高峰时段。
