    Da Nang 有一种让人上瘾的“吃螺”文化。一旦你尝过一盘“oc hut”(用罗望子、香茅和干辣椒爆炒的小河螺),再配上一瓶冰镇 Larue 啤酒,你就会明白为什么半个城市的人每天晚上都在做这件事。

    仪式很简单:拿起一颗螺,嘴唇贴住螺口,用力一吸。如果吸不出来,就用牙签帮忙。这过程虽然吃相狼狈、环境嘈杂,但绝对是这座城市里花费 50,000 VND 最享受的方式之一。

    比较难的是决定去哪里吃。Da Nang 的 oc hut 场景大致分为两种形式——路边摊和室内餐厅——它们各有千秋,了解其中的区别很有必要。

    路边摊体验

    路边摊主打一个“实用”。你可以在靠近韩江(Han River)的 Hoang Dieu Street 沿线找到成群的摊位,或者在 Hai Chau 区的后街,特别是 Ong Ich Khiem Street 附近的批发市场区域散落着不少。它们通常在下午 5 点左右出现,晚上 9 点或 10 点收摊,如果螺卖完了还会更早。

    标配:一个炭火炒锅、一盏头顶的灯泡、一叠塑料凳,以及一张只有四五道菜的塑封菜单。螺装在浅金属碗里,从锅里端出来时还闪着油光,每份价格在 25,000 到 40,000 VND 之间。你还会看到“oc len”(泥螺)和有时提供的“oc mo”(盖螺),但 oc hut(小河螺)是必点基础款。

    啤酒通常是 Larue 或附近摊位提供的 Bia Hoi,每罐约 15,000–20,000 VND。在这里,没人会因为预算问题而感到扫兴。

    路边摊的魅力在于“即时感”。螺从锅里出来两分钟就端上桌,罗望子香茅酱汁还在冒着泡,你坐在街边,摩托车从身旁呼啸而过。这里没有英文菜单。点菜时用手指指,再比划数量,直接吃。这种沟通的障碍感正是乐趣所在。

    代价是:卫生状况参差不齐,塑料凳坐久了不舒服,且货源不稳定——周一的好摊位周四可能因为进货原因导致螺肉过老。

    室内餐厅版本

    Da Nang 有几家专门的螺类餐厅,经营模式更像休闲海鲜店。形式更丰富:菜单更长、灯光更好、有真正的椅子,而且除了标准的罗望子香茅炒法外,通常还有更多做法。你可能会发现用香茅和姜蒸的螺,或者用黄油和葱花翻炒的螺——这些做法需要更长时间,也更适合用正规炉灶烹饪。

    位于 Le Dinh Ly Street(距离韩江约 500 米)的 Quan Oc Hue Hoa 是比较靠谱的餐厅之一。一份 oc hut 价格在 45,000–60,000 VND 之间,他们做的“sa te”(香茅辣椒酱)版本比大多数街头版本更有层次感。每天下午 4 点到晚上 11 点营业。

    另一个选择是靠近美溪海滩(My Khe Beach)的 Tran Phu Street 沿线的一排螺类餐厅。这些店稍微偏向游客,价格涨至每道菜 70,000 VND,但品质稳定,海滩边的座位也是合理的补偿。

    如果你打算度过一个漫长的夜晚,而不是仅仅吃个快餐,室内餐厅也更适合搭配 Da Nang 的鲜啤文化“bia hoi”。

    如何选择

    这其实不是非此即彼的选择。当你想要快速进食、少花钱并感受真实的城市氛围时,路边摊是你的首选。当你想要坐下来慢慢聊、尝试多种螺类,或者带上对路边摊环境感到不安的朋友时,室内餐厅更好。

    如果你是第一次吃 oc hut,室内餐厅能给你更多掌控感——你可以控制节奏,如果你看起来很困惑,服务员通常会教你吸螺的技巧,而且你不会因为别人等着坐你的凳子而感到匆忙。

    如果你已经吃过 oc hut,只想追求最地道的版本:晚上 6 点后去 Hoang Dieu Street,35,000 VND 一碗,手里拿着一瓶 Larue。

    无论哪种方式,请带现金。这两类店都不接受刷卡。

    实用贴士

    大多数 oc hut 摊位只在晚上营业——下午 5 点前不要抱有期望。在越南中部,河螺的旺季大约在 3 月到 10 月,所以天气较冷的月份品质会略有下降。如果螺肉尝起来有泥腥味而不是鲜甜味,那是货源问题——换一家摊位试试。
