    Sapa 有一种真正值得你关注的本地饮品,它可不是你在旅舍喝到的那种 Hanoi 啤酒。“Ruou tao meo”是一种口感粗犷、略带酸涩的米酒,由生长在 Fansipan 山坡上的小苹果玫瑰果发酵而成。这是由世代传承的H'mong族和Dao族家庭酿造的纯正佳酿。问题在于,镇上出售的酒约有一半是掺了食用色素的工业酒。以下是如何避坑,找到真正好酒的方法。

    什么是真正的Ruou Tao Meo

    Tao meo (Docynia indica) 是一种小巧、坚硬、黄绿色的果实,看起来有点像海棠果,生长在海拔1,000米以上的西北高地。当地家庭将其与糯米以及用捣碎的叶子和根茎制成的“men la”酒曲一起发酵。成品呈淡琥珀色或粉红色,酒精度在25%到45%之间,取决于陈酿时间,入口有酸甜的果香,回味温暖且带有一丝药香。它喝起来不像苹果酒,也不像你以前喝过的任何东西。在购买整瓶之前,建议先点一小瓶(100毫升或200毫升)尝尝。至于那些游客餐厅提供的鸡尾酒单,直接忽略就好。

    值得一去的店铺和摊位

    1. Co May H'mong Wine — Ham Rong市场巷

    在Ham Rong街的尽头,通往Ham Rong山的石阶前,Co May经营着一个小小的开放式摊位。至少从2015年起,她就在这里售卖自家酿制的ruou tao meo。这些酒没有标签,用蜡或玉米芯封口,整齐地摆在低矮的木架上。她会免费为你提供一小杯试饮。200毫升的瓶装酒价格约为40,000–50,000 VND;500毫升约为90,000–100,000 VND。她酿的酒口感相对清淡,酒精度在28–30%左右,如果你是初次尝试,这款酒更容易入口。营业时间通常为每天7:00至18:00,但如果赶上集市日库存售罄,她会提前收摊。

    2. Ban Pho村集体摊位 — 通往Cat Cat的路上

    在前往Cat Cat村的路上走约1.2公里,有三四个Red Dao族妇女在一个带顶棚的路边摊位售卖农产品、编织品和她们自酿的酒。这里的ruou tao meo比Co May家的颜色更深、酒劲更足(接近35–38%),因为她们在凉爽的季节里发酵的时间更长。500毫升的瓶装酒价格在80,000–120,000 VND之间,取决于批次和当周的游客流量。如果你想确认是否为自酿,可以要求看看发酵罐;她们通常会在附近放几个。这些摊位在8:00至16:00期间最为稳定。

    3. Thanh Huong特产店 — Cau May街

    Cau May街是纪念品购物的中心,这里售卖的大多数ruou tao meo都不值得购买。Thanh Huong是个例外。这家位于Cau May街靠近Fansipan Legend一端的小店多年来一直直接从两个Muong Khuong家庭采购,并贴有注明村名和批次的标签。价格稍高,500毫升为130,000–160,000 VND,但你买到的是品质保证。如果你想尝试不同的东西,他们也储备有“ruou can”(通过竹管饮用的罐装酒)。每天8:00–21:00营业。

    4. Cho Sapa (Sapa中央市场) — 一楼摊位

    主市场带顶棚的一楼有六七个摊位售卖当地烈酒、草药和干货。质量参差不齐,但从北入口数起的第四个摊位(由一家挂着手写招牌“Ruou Nep Tao Meo Thuan Thien”的家庭经营)始终供应发酵正宗的产品。1升装的陶瓷罐售价150,000–200,000 VND,如果你打算多住几天或者想带一瓶回家,这是个不错的选择。市场营业时间为6:00–18:00;周六和周日请早点去,那时高地卖家会带来新鲜的库存。

    5. Ta Van村寄宿家庭

    如果你步行或骑摩托车走8公里去Ta Van村(非常推荐,既是为了欣赏Giay族村落的风景,也是因为Sapa镇上实在太吵闹),不妨问问你的房东他们是否自己酿酒。许多Ta Van家庭会酿造少量酒,不是为了售卖,而是供自家饮用和招待客人。你可能不会每次都遇到,但一旦喝到,这通常是你尝过最好的版本:未经稀释、未经过滤,直接从陶罐中取出。如果你想带走一些,带个空的小瓶子。无论他们要多少钱,给就是了——那都是公道价。

    避雷指南

    教堂广场附近Nguyen Chi Thanh街上的一群面向游客的商店,售卖的ruou tao meo装在装饰精美的瓶子里,贴着英文标签,配有竹制包装,价格高达礼品级(500毫升售价250,000–400,000 VND)。有些甚至还有二维码。这些酒几乎都不是当地酿造的,而是从Sapa以外的加工厂批发而来,经过稀释后重新装瓶,专门卖给不懂行的游客。如果瓶子上的标签过于完美对称,且配有螺旋盖,请放回去。

    关于购买的几点诚恳建议

    Ruou tao meo不需要调制成鸡尾酒。冷饮或常温纯饮即可,每次少倒一点。它非常适合搭配“thang co”(马肉炖菜,一种当地H'mong菜肴)或烟熏水牛肉,这些在周六夜市都能买到。不同批次的酒精度差异很大,一瓶500毫升的酒劲可能比你预想的要大。如果你要乘飞机回家,请在行程最后购买,用衣服包裹好放在托运行李中,并接受可能会有少量酒在运输过程中破损的风险。这是旅行的一部分。

    实用信息

    Sapa的大多数摊位在Google地图上没有固定地址——请留意上述地标,并向当地人询问当天谁在卖酒。预算80,000–160,000 VND即可从正规渠道买到一瓶不错的500毫升装酒。如果你正在规划北部环线,Sapa距离Hanoi(河内)仅需短途飞行或隔夜火车——周六和周日是集市日,高地卖家会带来从村里运来的最新鲜的产品。
