    在Sapa,很少有东西值得被过度吹捧。但“Lon cap nach”——字面意思是“腋下猪”,因其体型小巧,据称赫蒙族(H'mong)农夫可以将其夹在腋下而得名——绝对是例外。这些猪是在镇子上方梯田坡地上放养的,吃的是玉米和森林里的杂食,幼年宰杀,并用木火整只烤制。这种肉比低地猪肉更精瘦、更鲜甜,带有一种天然的烟熏味,绝非煤气灶所能比拟。如果你是在Cau May街的游客餐厅里吃的,那你很可能吃到的不是正宗货。

    为什么高地猪与众不同

    关键区别在于产地。在信誉良好的地方出售的Lon cap nach,均来自周边山谷(如Ta Van、Lao Chai、Ban Ho)的赫蒙族或瑶族村落,那里的猪可以自由活动且生长缓慢。一只正宗的Lon cap nach宰杀时重量约为10–15公斤,而商业养殖猪则为80–100公斤。其脂肪层薄,肌肉纤维紧实。在硬木炭火上烤制得当的话,猪皮会起泡酥脆,而内部依然保持鲜嫩。你需要按公斤预订,而且通常需要提前24小时。

    问题在于,Sapa(사파 / 沙坝 / サパ)的旅游经济导致许多商家用普通乳猪,甚至是大块猪肉来冒充正宗货。因此,了解你的供应商至关重要。

    推荐清单

    1. Quan Lon Cap Nach Co Mua — Ta Van村路

    这是标杆。Co Mua在通往Ta Van村的土路边经营摊位,烤制Lon cap nach已有十多年了。她从自己熟悉的三个赫蒙族家庭采购猪肉,如果当天没有货,她会直截了当地告诉你。请通过电话预订(让你的民宿主人帮忙提前联系),或者在上午9点前到达以预订晚餐。整猪价格:每公斤约1,200,000–1,500,000 VND。最低起订量:半只猪。营业时间视库存而定,大约在上午11点至晚上8点。她位于Sapa镇中心以南4公里处——沿着通往Ta Van的路走,寻找冒烟的地方即可。

    2. Bep H'mong Homestay Kitchen — Ban Ho

    Ban Ho距离Sapa镇有12公里车程,大多数游客会完全跳过这里,这是一个错误。这家家庭式厨房在开放式厨房的石炉上烤制Lon cap nach——你可以在火光跳动时坐在长木桌旁用餐。猪肉来自该家庭自有的猪群以及邻居。份量是共享式的:一只小整猪足够4–6人享用。价格:每公斤约900,000–1,100,000 VND。必须提前预订——至少提前24小时。不接受整猪的临时到访。如果你想玩得尽兴,他们还在集市日供应“thang co”(马肉炖汤)。

    3. Cho Sapa (Sapa市场) — 一楼肉类区

    对于那些想自己烹饪或在不那么正式的环境下用餐的人来说,Sapa市场的一楼有两三个摊位按半公斤出售生Lon cap nach,偶尔也有摊贩在门前的小木炭烤架上进行烤制。这仅限于早晨——请在上午7:30前到达,周六(Sapa最大的集市日)尤其如此。生肉价格:每500克180,000–250,000 VND,具体取决于部位。请明确询问“lon ban”(村猪),以区别于养殖猪。烤制摊位(如果有营业的话)每份收费约50,000–70,000 VND。

    4. Nha Hang Viet Hmong — Muong Hoa山谷

    这是一家正规的餐厅,而不是摊位,位于距离镇上约6公里的Muong Hoa路上。他们按半只或整只出售Lon cap nach,并且是少数几家不需要大团体就能接受小份订单(最低2公斤,总价约2,600,000–3,000,000 VND)的地方之一。烤制过程在用餐区可见。从点餐到上桌需要45–60分钟——这不是快餐。每天营业,中午至晚上9点。请提前致电。

    5. Lung Khau Nhin边境集市(仅限周末)

    如果你的行程更远,位于Sapa西北约25公里的Lung Khau Nhin周末集市,拥有该地区最正宗的高地猪摊贩——这是当地人卖给当地人的地方,而非旅游路线。这里的价格更低:每500克生肉150,000–200,000 VND,通常有两三个摊位提供现烤服务,每份约40,000–60,000 VND。仅限周六上午,上午10点左右开始收摊。

    避雷指南

    任何在Cau May街或Fansipan广场上打广告称有“lon cap nach”且无需提前预订的餐厅,几乎可以肯定不是正宗的。如果他们能在20分钟内把菜端上桌,那它就是来自山谷农场的普通乳猪,可能经过腌制以增加烟熏味。Thach Son街上的一两家店在当地也以标签不实而闻名。辨别方法:如果菜单上有猪的照片并且按菜品定价(而不是按公斤定价),请直接离开。

    实用贴士

    请携带现金——这些摊贩都不接受刷卡。如果你住在Ta Van或Lao Chai的民宿,请让房东帮你预订;他们知道目前可靠的货源。Lon cap nach与Sapa当地的米酒(“ruou nep cam”)和简单的清蒸蔬菜搭配极佳——如果你提出要求,大多数摊贩都会为你配齐这些餐点。人均预算200,000–400,000 VND即可享用一顿丰盛的共享大餐。
