    "Ruou tao meo" 是你在 Sapa 到处都能见到的高地酒——小瓶装的琥珀色液体,没有标签,堆叠在市场摊位上,或是摆在餐厅的窗台上。它由野生山楂玫瑰果树(Docynia indica)的果实制成,在高海拔地区用陶罐或玻璃容器缓慢发酵而成。口感上佳的 Ruou tao meo 略带干涩、隐约有花香且单宁感适中,介于粗犷的苹果酒和清淡的米酒之间。口感糟糕的则尝起来像是在酒精里兑了糖。这两种截然不同的体验,通常取决于你在哪里购买以及酒的批次是否新鲜。

    路边摊版本——市场摊位与街角小贩

    尝试 Ruou tao meo 最便宜也最常见的方式,是从 Sapa 市场(Cau May 街及周边巷道)聚集的小摊贩那里购买。500毫升的瓶装酒价格在 25,000 到 50,000 VND 之间,大多数卖家都会让你先尝后买。一定要先尝再买——即使是相邻的摊位,品质也可能大相径庭。

    你需要寻找的是:看起来已经存放了至少几周的瓶子(底部有少量沉淀是正常的,甚至是好事),以及能告诉你果实大致产地的小贩。赫蒙族(H'mong)和瑶族(Dao)卖家自酿的小批量酒,通常比那些从 Lao Cai 市转手批发商业产品的经销商更稳定。如果酒液完全清澈且甜得发腻,那很可能是掺了糖或经过稀释的——建议跳过。

    去路边摊买的真正理由是:它足够便宜,你可以买两三瓶来对比。带上背包,在前往 Cat Cat Village 或 Muong Hoa Valley 梯田之前买上一瓶。常温或稍微冰镇后饮用——不要加冰,不要混合任何东西,也绝对不要理会那些旅游酒吧的鸡尾酒单,他们会收取 80,000 VND 将其倒在果汁里。那既浪费了酒,也浪费了你的钱。

    一个可靠的地点是 Sapa 市场本身的室内区域,营业时间从早上 6 点左右到下午早些时候。尽量在上午 10 点前去,那时当地酿酒人还在,还没卖完品质更好的存货。

    餐厅版本——你真正得到的是什么

    Muong Hoa 街和 Thach Son 街上的几家小餐馆提供按小瓷杯或共享酒壶售卖的 Ruou tao meo,并配有餐点。这种形式价格更高——每杯约 15,000 到 20,000 VND,或者 300 毫升的共享壶约 70,000 到 90,000 VND——但它有几个优势。

    这些地方中最好的会将酒存放在密封的陶罐而非塑料桶中,这能更好地保存香气。店员通常也了解自己的存货——问问哪一批最新鲜,他们通常会如实相告,或者直接从当前打开的罐子里为你倒酒。

    推荐搭配:点一份烤黑猪肉(thit lon cap nach)或烟熏水牛肉(trau gac bep)配上一壶酒。两者都油脂丰富、带有烟熏味和微焦感——优质 Ruou tao meo 的干酸度能干脆利落地化解油腻,这是越南啤酒做不到的。在这种情况下,餐厅版本的高溢价是值得的。

    有一个值得推荐的地方:在 Thach Son 和 Hoang Lien 街交汇处附近的一家小餐馆,由一家瑶族人经营,多年来一直供应同一批家酿酒。门外没有英文招牌——留意门口挂着的一串干 tao meo 果实。他们大约在上午 11 点开门,卖完即止,通常在晚上 7 点前关门。

    避坑指南

    避开缆车站附近和 Cau May 沿街纪念品店出售的礼盒装版本。这些几乎都是大规模生产、过度加糖的产品,并且溢价严重——一瓶 120,000 到 200,000 VND 的酒,口感甚至不如 40,000 VND 的市场散装版。那种包装是为行李设计的,而不是为饮用设计的。

    同样要避开鸡尾酒单。Ruou tao meo 如果混合了柠檬汽水或倒在碎冰上,就会失去它原本迷人的风味。它不是基酒,它本身就是完整的饮品。

    关于酒精度

    Ruou tao meo 的酒精度通常在 15% 到 25% 之间,具体取决于发酵时间和酿造风格。它不像人们有时认为的“ruou”(烈酒)那样火辣,但在海拔 1,500 米的地方空腹喝上两三杯,还是会让你措手不及。记得先吃点东西。

    实用贴士: Tao meo 的产季在 10 月到次年 1 月达到高峰,此时果实最新鲜,新发酵的批次也会上市。在此期间之外,酒依然可以买到,但你喝的是上一季的存货——这没问题,只是年份久一点。Sapa 距离 Hanoi 约 380 公里(公路路程);大多数游客通过过夜火车抵达 Lao Cai,然后换乘 38 公里的迷你巴士前往。
