    这座城市的饮食文化本就以新鲜蔬菜、草本拼盘和清淡蛋白质为主,因此转向植物基烹饪并不需要像在欧洲内陆城市那样,为了让豆腐变得诱人而费尽心思。当地厨师深谙如何利用柠檬草、南姜和发酵豆制品来构建风味——这种向植物基菜单的过渡显得自然而然,而非刻意为之。

    早午餐风潮的兴起,主要得益于外籍人士和回归的越南侨民群体,他们往往更年轻,也更注重饮食健康。第2区的Thao Dien街区——曾经是一个宁静的河畔飞地——如今已成为这一转变最明显的缩影。

    第2区的选择

    如果你想享用一顿讲究而不做作的早午餐,Thao Dien就是你的目的地。Xuan Thuy和Quoc Huong周围的街道上布满了咖啡馆,它们的菜单早已超越了牛油果吐司(尽管大多数店里确实都有供应)。

    位于Nguyen Thuong Hien的Hum Vegetarian是该领域的老牌经营者之一,至今仍是佼佼者。它更偏向越南风味而非西式——比如带有蘑菇馅的“banh cuon”(越南肠粉)、撒上酥脆红葱头的粥,以及砂锅炖豆腐。价格公道:大多数菜品在70,000到120,000 VND之间。工作日的早晨,坐在庭院里用餐非常惬意。

    如果想要更具咖啡馆氛围的体验,同一区的The Lak提供浓郁的“vietnamese coffee”(越南咖啡)以及精简的植物基菜单。他们的菠萝蜜腌萝卜“banh mi”(越南法棍三明治)比你在旅游区吃到的多数肉食版本都要出色。价格约65,000 VND。

    饮品推荐

    Saigon的早午餐与咖啡密不可分。现在大多数植物基咖啡馆都提供燕麦奶和椰奶作为替代品,无需多费口舌。用燕麦奶制作的“Ca phe sua da”(越南冰咖啡)口感出乎意料:更甜一点,质地更浓稠,依然冰爽且咖啡因充足,足以应对湿热的天气。

    如果想喝点不含咖啡因的,大多数店里供应的椰子水价格在30,000–50,000 VND之间。在34度的高温下步行2公里却发现咖啡馆周一闭店后,这绝对是你最需要的慰藉。

    关于“Chay”与植物基的区别

    在入座前,了解两者的区别很有必要。“Chay”是传统的越南佛教素食烹饪,并不一定等同于纯素(Vegan)。一些“chay”菜肴会使用鸡蛋或乳制品,少数还会使用含蛋清的仿肉制品。如果你是严格的纯素食者,点餐前请务必确认。较新的植物基早午餐店通常会在菜单上明确标注纯素信息,常以叶子图标或“V”字标出。

    反过来说,传统的“chay”餐厅价格通常比早午餐咖啡馆便宜30%–50%,而且在烹饪基本功上往往更胜一筹。如果你不执着于西式早午餐形式,一份正宗的“com chay”午餐盘——米饭、炖豆腐、炒空心菜、腌菜——仅需50,000 VND,是这座城市里最令人满足的餐点之一。

    交通指南

    第2区的Thao Dien距离市中心约7公里。从第1区打Grab摩托车约需30,000–45,000 VND,具体取决于路况。周末上午9点前是交通最顺畅的时段——过了这个时间,经过Thu Thiem大桥的路线可能会变得拥堵。第3区距离Saigon中心较近,如果天气允许,从第1区步行不到20分钟即可到达。

    实用贴士

    这些餐厅大多支持现金,同时也接受通过VietQR或MoMo进行二维码支付——如果你的现金不足,这非常方便。大多数咖啡馆目前尚不流行周末预订,因此最好的策略是在上午9:30之前到达。工作日的早午餐氛围更轻松,有时价格更便宜,部分餐厅还会提供仅在工作日供应的套餐。
