    如果你习惯了吐司加鸡蛋的早餐,那么早餐喝汤听起来可能有点不可思议。但在Saigon(사이공 / 西贡 / サイゴン),这是默认的早餐方式。摊主在前一天晚上就开始准备,经过凌晨几个小时的慢炖,在大多数城市还没醒来时,他们就已经准备好开张了。

    Pho在Saigon也有,但它与Hanoi的版本略有不同——汤底更甜,配菜更多,桌上永远会有豆芽。不要争论哪种更好,吃就对了。

    糯米饭不是配菜

    咖啡是必选项

    Saigon的咖啡文化与早上6点发生的一切并行不悖。越南咖啡(베트남 커피 / 越南咖啡 / ベトナムコーヒー)——通过小型金属phin滴漏壶缓慢萃取而成——在这个时间段主要有两种喝法。“Ca phe sua da”是加了炼乳的冰咖啡,浓郁香甜,完全可以替代你以往的任何晨间饮品。另一种选择是热黑咖啡,不加冰,同样浓烈。

    Saigon的路边咖啡摊设计得很小。几张塑料凳,一张矮桌,一位带着保温瓶和一排杯子的女士。你花15,000–25,000 VND,坐在离路边很近的地方,看着摩托车在几厘米外呼啸而过,然后快速喝完,因为座位非常抢手。第5区的Nguyen Trai街和Binh Thanh市场区周围的小巷里,藏着城中一些鲜为人知的清晨咖啡摊。

    如果你想要更安静、更特别的选择,“蛋咖啡(에그커피 / 蛋咖啡 / エッグコーヒー)”——一种在浓缩咖啡上覆盖厚厚搅打蛋黄泡沫的饮品——是Hanoi的发明,现已传到南部,出现在少数几家Saigon咖啡馆里,通常在早上7点左右开门,而不是6点。

    Com Tam:过渡性的早餐

    “Com tam(껌땀 / 碎米饭 / コムタム)”——碎米饭——严格来说是一道全天供应的菜肴,但Saigon居民吃它作为早餐一点也不觉得奇怪。早上6点的一盘碎米饭通常配有烤猪排、煎蛋、一小碟鱼露蘸汁和一堆腌菜。这是一顿丰盛的餐点,价格在40,000–65,000 VND。这也是你在长途飞行后或熬夜后最想吃的东西。

    第1区、第3区和Binh Thanh区的Com tam店开门很早,生意火爆。寻找那些入口处有明显炭火烤架的店——猪排的质量差异很大,烤架就是品质的保证。

    如何像当地人一样吃早餐

    最实际的做法是选一个街区,在早上6点到7:30之间走走逛逛,而不是列出一份具体的地址清单。Saigon最好的早餐摊位会随季节变换位置,或者因为租约到期,或者干脆决定把营业时间从6点提前到5点。不变的是密度:在几乎任何住宅区,市场周围两个街区内,你都能在城市醒来之前找到汤面摊、xoi摊位和卖ca phe sua da(연유커피 / 越南冰咖啡 / ベトナムアイスコーヒー)的人。

    带着饥饿感去,带上小面额钞票(10,000和20,000 VND的纸币比500,000的更好用),不要因为菜单只有越南语而退缩。指指旁边人点的东西,这招永远管用。

    实用贴士

    Saigon的大多数街头早餐摊位在上午9点前就会收摊——好的摊位会更早。此处列出的价格为2024年街头摊位行情,会比坐店餐厅便宜。肠胃敏感是真实存在的:如果你刚到,先从现点现做的汤面开始,再尝试生配菜和发酵调味品。
