    Saigon Breakfast Guide: What Locals Eat at 6am

    Hue 是吃货的天堂。这座城市的饮食自成一派,与越南其他地区相比,分量更小、口味更浓郁、辣椒也放得更多。大部分美食都集中在距离 Imperial Citadel 方圆几公里的范围内。在这里,你不需要摩托车也能吃得很好,你只需要一张地图、一份宽松的行程表,以及在早上8点前喝下一碗热汤的决心。

    Dong Ba 市场区域 — 上午9点前

    在香江北岸,从 Dong Ba Market 向外延伸的街道,是你早餐前最值得探索的30分钟。市场本身在凌晨5点左右开市,街头美食的巅峰期则在早上6点到8点半之间。

    从市场大门以东的 Tran Hung Dao 街开始。这里是 "bun bo Hue" 的聚集地——这是顺化的招牌牛肉猪肉米粉,加入了香茅和发酵虾酱。寻找那些摆着低矮塑料凳和油桶大小钢锅的摊位。一碗粉的价格在30,000–40,000 VND之间。这里的汤底与顺化以外餐厅卖的完全不同,它因胭脂树红而呈现红橙色,辣味在口中缓慢升腾。

    这条街上有两家摊位值得一试:Bun Bo Ba Tuoi(没有招牌,直接问当地人“ba tuoi”即可),以及一位老奶奶推的无名小车,她通常在早上6点左右出现在市场东门对面,8点前就会卖光。

    如果想吃 "banh canh"(一种类似乌冬面的粗米粉,配浓郁的猪肉或螃蟹汤底),可以转入 Nguyen Binh Khiem 街。这里的 banh canh 使用米粉而非木薯粉,口感比南方的版本更有颗粒感。分量设计得很小,建议直接点两份。

    Pham Thi Lien 街与皇城南门 — 中午

    Pham Thi Lien 和 Nguyen Phuc Nguyen 之间的街区,就在皇城城墙南侧,午餐时间挤满了工人和学生。这是吃 "banh khoai" 的最佳区域——这是顺化版的香脆米饼。它比岘港风格的 "banh xeo" 更小、更油,搭配芥菜叶、杨桃片和浓郁的花生肝酱食用,而不是南方常见的鱼露蘸水。

    Co Tam 的摊位(寻找黄色招牌,位于 Thuong Tu 门以南50米处)已经开了至少二十年了。她用炭火现点现做,虽然需要等待三分钟,但绝对值得。价格:每个20,000–25,000 VND,相信我,你会想吃三个的。

    如果想吃点清淡的,同一路段还有小贩售卖 "nem lui"——在炭火上烤制的猪肉碎串,用米纸包裹,配上青香蕉和杨桃。第一次尝试组装可能会手忙脚乱,不妨看看旁边的人是怎么做的。

    An Hoa 门与西北区 — 下午晚些时候

    An Hoa 门内侧及周边区域位于皇城的西北角,游客较少,但当地人对这里的 "banh cuon" 评价极高——这是一种蒸米卷,内馅是木耳和猪肉碎,撒上酥脆的红葱头,配以清爽的蘸汁。这里的摊位通常在下午3点左右出摊,一直营业到傍晚。

    留意门附近的 Nguyen Chi Thanh 街。每份20,000–30,000 VND,摊主会在你面前用沸水上的布巾现蒸,制作一张皮只需四十秒,过程非常治愈。

    这个区域还有最棒的 "che"(顺化甜汤)摊位。顺化人对 che 的讲究程度远超越南其他地区;你可以花约15,000 VND买到一杯包含绿豆、果冻、莲子和椰奶的十层 che。站着吃更有感觉。

    Vo Thi Sau 与南岸 — 晚上

    穿过 Phu Xuan 大桥来到南岸,氛围立刻变得不同。Vo Thi Sau 街与河流平行,是顺化最棒的夜宵街。这里不是旅游陷阱,而是当地人下班后外出觅食的首选。

    "Bun thang" 有时会出现在这里,但南岸的灵魂在于烧烤: "banh trang nuong"(烤米饼,上面铺满鸡蛋、虾干和葱花,有时被称为“越南披萨”,但这个称呼低估了它的美味)以及葱油烤玉米。两者价格都在10,000–20,000 VND之间,边走边吃最合适。

    如果想坐下来好好吃顿晚饭,Vo Thi Sau 的侧街上有几家 com hen(蚬肉饭)店。"Com hen" 是一道让初次尝试者感到困惑的菜——它以常温供应,堆满配料,需要你自己搅拌。蚬肉细小鲜甜,炸猪皮增加了酥脆感,整碗饭不到35,000 VND。如果你更喜欢汤的形式,可以点 "bun hen"。

    实用贴士

    顺化的大多数街头美食摊位在上午10点(早餐摊)或晚上9点(夜宵摊)就会收摊——这不是一座熬夜觅食的城市。Dong Ba 市场和皇城区域步行15分钟即可到达;南岸则需要再走10分钟,或者打个短途的 xe om(摩托车出租)。请准备好小额钞票:10,000 和 20,000 VND 的纸币比 500,000 的大钞实用得多。
