    Saigon 从来不缺早餐汤面的选择,但“hu tieu Nam Vang”——字面意思即“金边风味汤面”——却是当地常客在城市完全苏醒前,会悄悄回来光顾的那一碗。它不像pho那样享有国际声誉,但在早上8点前吃早餐的本地人心中,它有着不可撼动的地位。

    碗里到底有什么?

    Nam Vang在越南语中意为“金边”。这道菜在20世纪中期随华裔柬埔寨移民来到Saigon,深植于Cholon地区的饮食习惯中,并由此向外传播。

    汤底是这道菜的灵魂——清澈透亮,因加入了猪骨和干鱿鱼而带有一丝清甜,这种深邃的口感需要数小时的熬制。它比pho(越南河粉)更清淡,也比“bun bo Hue”少了几分浓烈,这让它非常适合作为清晨的第一餐。汤中放入一团晶莹剔透的米粉(必须是新鲜的,口感软糯滑爽,而非干粉),随后铺上配料:猪里脊肉片、猪肉末、一两只整虾、半打鹌鹑蛋,以及一小堆漂浮在表面、让每一勺汤都充满香气的炸蒜末。最后撒上一把葱花,滴入几滴芝麻油,大功告成。

    配菜盘里通常有豆芽、辣椒片、青柠角,有时还有几片刺芫荽。你可以根据口味自行添加。炸蒜末是必须的——一定要全部刮进碗里。

    在Saigon去哪吃?

    最密集的hu tieu Nam Vang店铺位于第5区和第6区,即旧时的Cholon地区,这在历史上是有迹可循的。但你不需要跑那么远——这座城市的各个角落都有美味的店铺。

    Hu Tieu Nam Vang Thanh Xuan — 第5区

    278 Nguyen Trai, District 5。 营业时间通常为早上6点到11点,有时卖完会提前关门。一碗面的价格在45,000–60,000 VND之间,取决于配料。Thanh Xuan的汤底偏甜,鹌鹑蛋煮得火候恰到好处,炸蒜末给得非常大方。座位很拥挤——矮小的塑料凳,每张桌子最多坐四个人——从你到达的那一刻起,就能看到厨房里正全速运转。如果你想不用排队就有位子,请在早上8点前到达。

    Quan Hu Tieu Co Dau — 第10区

    第10区Su Van Hanh的一条小巷内。 这是一家小店,由一位熬制同一种汤底超过二十年的女士经营。没有英文菜单,也没有值得阅读的招牌——跟着炸蒜末的香味走就行。一碗面40,000–50,000 VND。这里的猪肉切得比一般店要厚,老板娘在上菜前会往碗里加一勺猪油,如果你不喜欢,可以提前告诉她。营业时间为早上6点到9点半,周一休息。

    一碗配有酥脆配料的诱人亚洲汤面,装在花纹碗中,是地道美食爱好者的绝佳选择。

    干拌与汤面:了解其中的区别

    有一件事会让初次尝试的人感到惊讶:hu tieu Nam Vang通常有干拌版本(“hu tieu kho”),即将米粉沥干,拌入少许酱油和猪油,汤则作为蘸汤或配汤单独盛放。干拌版本能让米粉吸附更多的蒜香。如果菜单上有两种选择,干拌版本至少值得尝试一次。大多数店主都能听懂,你只要指着碗说“kho”(干拌)或“nuoc”(汤面)即可。

    如何轻松点餐

    Saigon的大多数hu tieu店都采用简单的点餐系统——坐下后,店员会过来,你只需伸出手指示意要几碗。如果你想要额外配料(额外的虾、额外的鹌鹑蛋),指一下厨房附近的配料展示区即可。加料的价格通常为每份5,000–10,000 VND。如果店里不提供饮料,从附近摊位买一杯绿茶或冰“ca phe sua da”搭配食用非常完美。

    汤面要趁热吃,味道最好。别让它放太久——米粉会不断吸收汤汁,很快就会变软。

    为什么早晨很重要?

    严格来说,有些店全天都供应hu tieu Nam Vang,但中午去吃的体验是不一样的。汤底在营业的前两个小时最鲜美,炸蒜末更酥脆,而且早上7点的氛围也完全不同——那是建筑工人、摩托车司机和店主们聚集的时刻。到了早上9点,最好的店铺就已经卖完了优质配料,剩下的只是尾货。

    如果你身在Saigon,发现自己在城市燥热起来之前就醒了,那么这碗面就是你一定要去寻找的美味。

    实用贴士

    带上现金——每碗40,000到65,000 VND足以应付大多数店铺。大多数地方不接受刷卡。Cholon地区(第5区和第6区)拥有最密集的优质选择,但第10区和Tan Binh也有值得向当地人打听的可靠街坊小店。
