    大多数人都是偶然间“撞见” Banh Khot 的——他们看到一位妇女弯腰守着铸铁模具,往里倒入姜黄色的面糊,于是停下脚步观看。五分钟后,他们便吃上了自己从未想过会如此渴望的美味:拇指大小的米饼,外皮酥脆,内里蒸得软糯,散发着椰奶的香气,顶端点缀着一只卷曲的粉色鲜虾和少许葱油。接着,他们又点了一盘。

    这道菜起源于 Vung Tau,在那里,它几乎是一种城市标志。Saigon 将其引入北方(从地理位置上看是西南方向),并赋予了它独特的本地特色——制作速度更快、更热闹,如果你知道去哪里找,甚至在午夜也能吃得到。

    你吃到的究竟是什么

    面糊由米粉和椰奶混合而成,并用姜黄调色,倒入放在木炭或燃气火炉上的圆形模具中。盖上盖子前,会先放上一只虾。成品米饼底部呈漆状,略带焦脆,顶部则柔软如蛋奶糊。鲜虾傲然立于顶端,在高温下泛着诱人的光泽。

    吃的时候,用芥菜或蒌叶包裹,蘸上“nuoc cham”——即越南几乎万物皆可蘸的鱼露、青柠、糖和辣椒混合酱汁,这种搭配无论何时吃起来都恰到好处。有些店家会在上面加绿豆泥或虾米,有些则保持极简风。Vung Tau 的纯正版本通常倾向于极简。

    根据虾的大小和地段,一盘十个的价格在 40,000 到 70,000 VND 之间。

    晚上 8 点后去哪吃

    Banh Khot Co Ba Vung Tau — 第三郡

    当人们说 Saigon 正宗的 Banh Khot 时,指的就是这家。Co Ba 在第三郡的 Dinh Cong Trang 街经营已久,实际上已成为当地的地标。模具是铸铁的,虾很新鲜,面糊里的椰奶也是货真价实的——你在人行道上就能闻到香味。

    他们大约下午 3 点开始营业,直到面糊卖完为止。工作日通常在晚上 10 点左右关门,周末则接近 11 点。周二晚上 10 点半才到的话,就别指望还有奇迹了。一盘十个配上全套香草篮和 nuoc cham 的价格约为 55,000 VND。排队速度很快。

    Quan Banh Khot 84 — 平盛区 (Binh Thanh)

    平盛区不像第一郡或第三郡那样有那么多美食游客,这意味着这家位于 Ngo Tat To 街的小店即使在周末也相对低调。他们的营业时间比 Co Ba 更晚——通常到晚上 11 点,周五有时会超过午夜。这里的面糊椰香味更浓郁,虾有两种尺寸可选;点大份的(每盘 65,000 VND),你绝对不会后悔。

    店面布置很经典:塑料凳、日光灯,电视里播放着没人看的节目。香草拼盘里配有芥菜和紫苏,这是最地道的吃法。

    夜市摊位 — 滨城市场 (Ben Thanh) 周边

    每天晚上 6 点后,Ben Thanh Market 周围都会摆出摊位,其中至少有两三家 Banh Khot 摊贩,位于 Phan Chu Trinh 和 Thu Khoa Huan 街沿线。这里的质量比专门店波动更大——面糊有时太厚,虾偶尔是冷冻的。但如果你正好在第一郡,又是晚上 10 点,又想吃 Banh Khot,这里是个不错的选择。价格偏向游客价:十个 70,000–80,000 VND。如果点多盘,可以礼貌地砍砍价。

    一些实用建议

    厨师掌握着酥脆度——一盘好菜和绝佳菜肴的区别在于,盖子盖上之前,底部是否在火上加热了足够长的时间。如果你的米饼端上来时底部发白且软塌塌的,说明做得太赶了。这种情况时有发生。无论如何,趁热快吃;Banh Khot 出锅后十分钟内就会变软。

    有些摊贩会提供加一个煎鹌鹑蛋的服务,每个额外收费 5,000–10,000 VND。值得尝试一次。

    如果 Banh Khot 让你对孕育它的更广泛的 Vung Tau 美食传统感到好奇,从 Saigon 开车走高速公路大约需要 130 公里——这是一个合理的短途旅行,回程时还会经过不错的“banh mi”产区。

    实用提示: Saigon 大多数专门的 Banh Khot 店在下午中段营业至晚上 10–11 点;晚上 9 点前到达是稳妥的选择。请带上现金——每盘 50,000–80,000 VND 几乎涵盖了这份名单上的所有店。周末 Dinh Cong Trang 附近的街边停车位很紧张;从侧街走一个街区比绕圈找车位更方便。
