    “Lon Cap Nach”——黑腹小猪

    这可以说是 Sapa 最值得寻找的一道菜。“Lon cap nach”指的是赫蒙族(H'Mong)和瑶族(Dao)社区饲养的一种小型土猪品种——这个名字大致翻译为“腋下猪”,源于过去人们将小猪夹在腋下带去集市的习俗。它们是散养的,生长缓慢,肉质精瘦,这是工厂化养殖的猪肉所无法比拟的。

    这种猪通常会被劈开在明火上烘烤,或分段慢烤,配以盐、野胡椒和青柠制成的蘸酱。猪皮酥脆而不油腻,肉质极具层次感。你可以在 Sapa 镇和 Bac Ha 的每周集市上找到它,或者在少数从附近村庄采购食材的餐厅里也能吃到。价格预计在每份 120,000–180,000 VND。如果有人以 60,000 VND 的价格卖给你“lon cap nach”,请务必怀疑你吃到的到底是什么。

    “Thang Co”——并非人人都能接受,但了解它至关重要

    “Thang co”是一种赫蒙族炖菜,由马肉(有时包括马内脏)制成,在大锅中加入八角、草果和当地香草慢炖而成。它是高地集市上的常客,也是几代人以来节日和聚会上的必备佳肴。

    它的味道浓郁且带有野味,汤底浓稠浑浊。这不是一道适合随意尝试的菜,很多游客尝了一口就放弃了。但如果你在周日逛 Bac Ha 集市,看到入口处冒着热气的大铁锅,点上一小碗(约 40,000–60,000 VND)是非常值得的体验,即使你可能不会再吃第二次。它是深入了解高地饮食文化的一扇窗口,这是在 Sapa 镇的餐厅里怎么吃都无法获得的体验。

    “Ga Den”——乌骨鸡

    “Ga den”(乌骨鸡,有时被称为黑丝羽乌鸡)在越南各地的菜单上都很常见,但在 Sapa,这些鸡通常是散养并以山间谷物喂养的,这使得它们的肉质比低地品种更具矿物质风味。最常见的做法是药膳炖乌鸡(在天气较冷时特别受欢迎),或者是简单地用盐和当地香料烤制。

    “Com Lam”——竹筒饭

    “Com lam”是将糯米装入新鲜竹筒中,加入少量水,直接在火上慢烤,直到竹筒烧焦,里面的米饭蒸熟,散发出淡淡的烟熏味和微甜的香气。这是高地版的“快餐”——方便携带、管饱,价格便宜,每根约 15,000–25,000 VND。

    你会在路边、集市和徒步起点看到它。可以搭配烤肉食用,也可以作为晨间散步后的零食单独享用。竹子赋予了米饭一种难以形容的微妙香气,让普通的米饭瞬间变得高级起来。它与 lon cap nach 是绝配。

    去哪儿吃:关于选择的建议

    近年来 Sapa 镇上的餐厅越来越多,其中许多餐厅提供千篇一律的、针对旅游团的越南菜菜单。对于上述美食,你的最佳选择是:

    • 高地集市——周日的 Bac Ha、周二的 Coc Ly、周六的 Can Cau。这些地方的食物最地道,且针对游客的溢价最少。
    • Ta Van 和 Lao Chai 等村庄的家庭旅馆——如果你提前与房东沟通,许多地方提供家常菜。
    • Sapa 镇 Ham Rong 街后面的小巷——那里聚集了一些小型本地餐馆,它们通常不会出现在 Google 地图上,且更替频繁。傍晚时分去逛逛,看看哪里坐满了当地人,而不是游客。

    实用提示

    Sapa 的集市是根据农历运行的,因此在制定行程前请务必确认日期。集市摊位上的食物价格通常是固定的,不要为了买一碗 thang co 而讨价还价。如果你在寒冷的月份(11 月至次年 2 月)到访,高地的寒意会让热食——如 ga den 汤、三文鱼火锅、thang co——比在温暖天气里吃起来更具吸引力。
