    Saigon 的水果冰沙别具一格。这里的“sinh to”并非什么健康食品潮流,而是街头的一种传统——用炼乳搅拌得浓稠,倒入塑料杯中插上吸管,再由那些从你出生前就开始做这门生意的人递到你手中。

    为什么西贡版本与众不同

    越南北部倾向于清淡的果汁类饮品。而西贡的口味更重:加入炼乳或有时是鲜奶,水果更多,糖分更足,口感冰凉刺激。其质地更接近浓郁的奶昔而非冰沙。牛油果 (bo) 被搅拌得几乎像慕斯一样;菠萝蜜 (mit) 则带有淡淡的甜味,纤维感恰到好处;释迦 (na 或 mang cau) 让整杯饮品充满了花香;刺果番荔枝 (mang cau xiem) 则是那种尖锐、浓郁的异类,能完美中和甜腻感。

    大多数摊位允许你以同样的价格混合两种水果。这才是行家点法。

    Sinh To Bo Thanh — 197 Co Giang, 第一郡

    这就是人们提到“口感惊艳”时所指的那家牛油果摊位。这是一个位于 Co Giang 街的狭窄推车摊位,大约从下午 2 点营业到卖完为止——通常在晚上 8 点前。这里的 Sinh to bo 加入了炼乳和少许椰奶,使其口感不会过于甜腻。如果愿意,你可以用勺子挖着吃,不过大多数人直接吸食。

    价格: 25,000–30,000 VND。营业时间: 每天约下午 2 点至晚上 8 点。

    Sinh To Nguyen Thi Nghia — 37 Nguyen Thi Nghia, 第一郡

    在靠近 Ben Thanh Market 的这段路上,聚集了十几家 sinh to 推车。37 号摊位排队最长,展示的水果也最丰富——菠萝蜜、火龙果、人心果、芒果、刺果番荔枝——全都标价清晰。这里的刺果番荔枝冰沙 (mang cau xiem sinh to) 绝对值得专程前往:酸味纯正,没有被过多的炼乳掩盖,而且冰块充足,足够让你在步行 20 分钟内保持冰凉。

    由于靠近 Ben Thanh Market,偶尔会出现游客价格——下单前请务必确认价格牌。

    价格: 20,000–35,000 VND(视水果而定)。营业时间: 每天上午 9 点至晚上 10 点。

    Chi Lan Sinh To — 3 Hoang Dieu, 第四郡

    第四郡就在第一郡过桥的地方,氛围截然不同——没那么精致,但更接地气。Chi Lan 是一个正规的摊位,配有塑料凳和白板手写菜单。这里的释迦冰沙 (sinh to mang cau) 是城中数一数二的:水果成熟且芳香,搅拌程度恰到好处,保留了一定的果肉质感。他们还提供一种菠萝蜜加牛油果的混合口味,听起来违和,喝起来却意外和谐。

    价格: 18,000–25,000 VND。营业时间: 上午 11 点至晚上 9 点,周日休息。

    Sinh To Bui Vien — 多家推车,Bui Vien 步行街,第一郡

    老实说:Bui Vien 嘈杂、拥挤,且完全针对游客。但那些在通往步行街的侧街(特别是 De Tham 街)上摆摊的 sinh to 推车,是由在这里经营了几十年的家庭经营的。这些饮品确实物美价廉:大多数单品水果口味只需 20,000 VND。在晚上 7 点人潮涌入前去品尝吧。

    避雷: 步行街内那些带有霓虹灯招牌和英文菜单的冰沙店。同样的产品,它们要价 60,000–90,000 VND。

    价格(街头推车): 18,000–25,000 VND。营业时间: 约下午 4 点至午夜。

    Sinh To Xom Chieu — Xom Chieu 市场,第四郡

    Xom Chieu 是一个大多数游客完全忽略的本地菜市场。在市场内部,靠近后方的水果区,有两三家摊主用当天最新鲜的水果制作 sinh to。没有固定菜单——你指着什么,他们就给你做什么。在这里,你最有可能喝到人心果 (hong xiem) 和星苹果 (vu sua) 冰沙,这两种水果很少出现在面向游客的菜单上。特别是星苹果 sinh to,口感温和、奶油味十足,带有一点点葡萄的味道。如果看到,一定要试试。

    价格: 15,000–22,000 VND。营业时间: 上午 6 点至中午,上午 9 点前最繁忙。

    值得一试的水果——以及一种需要谨慎尝试的

    • Bo (牛油果): 最稳妥、最受欢迎的选择。几乎总是很好喝。
    • Mit (菠萝蜜): 混合了甜美且略带嚼劲的果肉。味道比听起来好得多。
    • Mang cau xiem (刺果番荔枝): 酸甜且带有花香。评价两极分化,但值得一试。
    • Mang cau (释迦): 花香浓郁且细腻。不要和口味太冲的水果混合。
    • Dua (椰子): 常与菠萝混合。比其他口味更清爽。
    • Sapoche (人心果): 焦糖甜味,质地沙沙的。属于“习得性口味”——值得尝试一次。

    榴莲 sinh to (sau rieng) 也是有的,有些摊位提供。关于它,我只能说这么多。

    价格参考

    街头摊位和市场小贩:每杯 15,000–30,000 VND。这才是真实价格。超过 40,000 VND 的通常是针对游客的溢价——倒也不算坏,只是并非基准价格。西贡的咖啡馆也开始提供升级版的 sinh to,使用鲜奶和更优质的水果,价格在 50,000–80,000 VND,如果在正午时分能坐在空调房里享用,也算物有所值。

    实用提示

    大多数街头 sinh to 使用自来水清洗水果并加入普通冰块——对大多数游客来说没问题。如果你的肠胃还在适应中,市场摊位(尤其是 Xom Chieu)的周转率更高,相对更安全。自带杯子或重复利用塑料杯;大多数摊位不提供替代品。下午去最好,那时水果最新鲜,摊主也有时间补货。
