    什么是Thang Co

    其基础食材是马肉,有时会加入内脏(肝、肠、肺),在铸铁锅中用文火慢炖,并加入通常包含“mac khen”(产自山区的四川花椒)、姜、香茅和干辣椒的香料混合物。在距离Sapa(沙坝)以东约60公里的Bac Ha集市,摊贩们在周日集市日从黎明起就开始从公共大锅中盛出这道菜。它的味道浓郁,带有一丝野味,在海拔1500米的寒冷季节食用非常暖身。

    Sapa的版本则更为温和。大多数针对外国游客的餐厅减少了内脏比例,并增加了汤肉比。这是否会影响您的体验,取决于您追求的是什么。

    关于带孩子用餐

    带孩子旅行并不意味着不能吃Thang co,但这确实限制了您的选择。Bac Ha的周日集市——最正宗的场景——挤满了小巷,可以看到屠宰后的动物,且没有儿童份量。对于好奇食物来源的大孩子来说,这是一种很棒的体验;但如果您的孩子不到七岁或容易感到不安,则不太理想。

    在Sapa镇内,有几家餐厅在舒适的环境中供应Thang co,配有桌椅、英文菜单,并且与备餐区保持足够的距离,用餐氛围相对平静。

    在哪里用餐

    Co May Restaurant

    位于Dong Loi街,从主集市广场步行上坡即可到达。Co May多年来一直为当地Kinh族游客和外国游客供应Thang co。他们使用的马肉内脏极少——您可以要求不加内脏,他们会满足您的需求。两人份的陶锅价格约为120,000–150,000 VND,配有一盘新鲜香草、一小碟辣椒盐以及蒸米饭或玉米饼。餐厅在寒冷月份会封闭并供暖,这在1月份显得尤为重要。

    带小孩的家庭在这里通常用餐愉快,因为工作人员习惯于解释这道菜,且上菜节奏不紧不慢。每天10:00至21:00营业。

    Hmong Sisters

    靠近Cau May街的教堂广场,Hmong Sisters提供精选的北部高地菜肴菜单,包括Thang co以及“banh cuon”和烤玉米。这里的Thang co比Co May的口味略甜——他们添加了更多的八角——且份量十足。每人约100,000 VND。这是一个较小的空间,大约有八张桌子,周末12:30–13:30左右容易坐满,所以建议在中午之前或14:00之后前往。每天09:00–20:00营业。

    周六的集市摊位

    如果您在周六身处Sapa,镇中心附近的下集市区域有一些赫蒙族摊贩,他们从08:00左右开始摆出公共大锅,按碗出售Thang co。您需要坐在矮小的塑料凳上,与陌生人拼桌,每碗价格为40,000–60,000 VND。这更接近Bac Ha的体验。并非所有孩子都能接受,但喜欢冒险的孩子通常会觉得很有趣。如果人多,请多带一点耐心等待。

    关于Bac Ha的建议

    如果您的行程灵活,可以考虑安排周日去Bac Ha集市。从Sapa开车大约需要90分钟,路况蜿蜒——大孩子可以接受,但容易晕车的幼儿可能会感到不适。Bac Ha的Thang co每碗售价50,000–80,000 VND,味道明显不同:香料更重,明火烧烤味更浓,且更接近“全动物”的原始风味。这是它最原本的形态,名副其实。

    配什么饮料

    在当地,Thang co通常搭配“ruou ngo”——玉米酒,酒精度约为40–50%——这纯属成人饮品。对于孩子来说,温绿茶或瓶装水是现实的选择。Sapa的大多数餐厅都会提供这两者。

    实用贴士

    Thang co本质上是一道适合寒冷天气的菜肴;在7月Sapa温暖潮湿时食用虽然也可以,但稍微少了点感觉。10月至次年3月是品尝它的最佳时期。Sapa镇内餐厅的价格虽然比集市摊位高,但按任何标准衡量依然很实惠——每位成人预算100,000–160,000 VND即可享用一份包含配菜的完整炖锅。
