    Saigon 并非一座天生以素食为主的城市,但如果你知道去哪里寻找,这里的早晨其实非常适合享用植物基美食,而且在大多数情况下,比肉食版本更便宜。

    越南的佛教习俗塑造了一种大多数游客往往会直接错过的平行饮食文化。在农历初一和十五,大量当地人会选择“an chay”(全素饮食),此时城里的chay(素食)摊位会进入超负荷运转状态。即便在平时,专门的素食店也会很早开门并供应大量餐点。第3区、第5区和第10区的素食店最为密集,不过你也可以在全市各地找到零星的素食选择。

    素食 Banh Mi

    “Banh mi” chay 比游客预想的要普遍得多。馅料通常包括do chua(腌萝卜和胡萝卜)、黄瓜、香菜,以及肉酱风格的豆腐、素肉,或者仅仅是一层厚厚的Maggi调味黄油和鸡蛋。以下是几家值得一试的地方:

    位于Le Thi Rieng街(第1区)的 Banh Mi Huynh Hoa 可以根据要求制作素食版本——询问“banh mi chay”即可——不过厨房非常忙碌,你需要表达清楚。价格大约在25,000–35,000 VND之间。

    更好的方法是,在早上7点左右漫步到第3区的Ky Dong或Vo Thi Sau街。这里的小型Banh Mi推车通常专门为社区的佛教徒服务,素食选择已经准备就绪,无需额外沟通。

    纯素 Pho

    这一点常常让人感到惊讶。“Pho” chay 是真实存在的,而且在Saigon (西贡) 它绝非随意的应付之作。汤底由烤洋葱、姜、八角以及通常是干香菇和昆布熬制而成——虽然缺乏骨汤的厚重感,但有一种清爽、芬芳的深度,自成一派。

    位于第3区的 Pho Hoa Pasteur 自1970年起就开始供应餐点,并提供chay版本。一碗大约55,000–70,000 VND。如果你想在不用排队的情况下入座,请在上午8点前到达。面条和香草拼盘与标准版本完全相同——豆芽、刺芫荽、青柠、新鲜辣椒——因此体验非常接近原版。

    对于更具社区规模的选择,第5区Nguyen Trai街附近的巷弄市场里有轮换的摊位,其中包括Pho Chay摊贩,在农历斋日尤其繁忙。

    Xoi — 地道的糯米饭

    “Xoi”是城中最被低估的素食早餐选择之一。其基础是糯米,配料从绿豆泥和炸红葱头,到木鳖果(使米饭呈现深橙红色)和椰奶应有尽有。大多数Xoi默认就是素食的——只需确认绿豆层中没有混入虾米(有时会发生这种情况)。

    Xoi摊贩从早上6点左右开始在街角摆摊,通常在上午9点前收摊。寻找那位带着大盖篮和附近一堆塑料小凳子的摊主。价格通常为15,000–25,000 VND,具体取决于配料。第1区的Nguyen Thi Minh Khai路有一个可靠的早间摊位聚集点。

    如果想要更扎实的Xoi,xoi xeo——配有绿豆、炸红葱头和少许姜黄油的糯米饭——足以让你饱腹到午餐时间。

    Com Tam Chay 及其他选择

    “Com tam” chay 出现在专门的素食餐厅和一些市场摊位中。碎米底是一样的;蛋白质换成了烤豆腐、柠檬草素肉或煎蛋。对于早上7点来说,这比大多数人想要的要厚重,但如果你习惯吃丰盛的早餐,它完全可以胜任。在正规的chay com tam店,预计花费40,000–60,000 VND。

    第10区——特别是Nguyen Tri Phuong医院周边地区——有几家多菜式的素食餐厅,它们在早餐时段营业,提供自助餐式的轮换菜品。你可以挑选三四样菜配米饭,价格在30,000–45,000 VND左右。这是食堂风格,但食物新鲜,分量十足,而且没人会强行向你推销。

    越南咖啡,植物基选择

    Saigon的咖啡文化本身并不是对素食者不友好——用炼乳制作的黑咖啡“ca phe sua da (越南冰咖啡)”从技术上讲不是纯素的,但黑色的 越南咖啡 (ca phe den da) 是,而且非常棒。大多数独立咖啡店如果你提出要求,也会用椰奶作为替代品;这已经变得足够普遍,很少会被视为奇怪的要求。

    如果想尝试点不同的,“蛋咖啡”—— ca phe trung ——在Saigon确实存在(这更多是河内的特色,但已传到南方),不过显然它不是纯素的。坚持喝黑咖啡或询问椰奶选项即可。

    关于农历日期的说明

    如果你的旅行恰逢农历初一或十五,请务必体验一下。平时可能在7点开门的素食摊位会在5:30就开始营业,品种会翻倍,甚至平时卖肉食的街头摊位有时也会完全转为素食。这确实是这座城市提供的最有趣的饮食体验之一,而且每个月都会发生。

    实用贴士

    带上现金——大多数早餐摊位只收现金,且每人消费很少超过70,000 VND。Google Maps对于小型素食摊贩的参考价值不稳定;最好的策略是在早上7点左右步行穿过第3区、第5区或第10区的巷弄,跟随人群。单词“chay”(素食)是你进行此类饮食时最实用的越南语词汇。
