    在 Vung Tau 那些拥有 4.8 星评分和 300 条评论的餐厅用餐固然不错。但那位自 1991 年起就在 Cho Vung Tau 后巷盛着 "bun rieu" 的大婶,从未在 Instagram 上被标记过,而她煮的那碗汤却更加美味。以下是如何像当地人一样去寻找美食的方法。

    为什么无名小店通常更好

    Vung Tau (붕따우 / 头顿 / ブンタウ) 是一座周末城市。每逢周五晚上,Saigon 的人潮就会涌出,向东南方行进 125 公里来到海岸。这意味着 Tran Phu 和 Quang Trung 大街上那些显眼的、挂着招牌的餐厅,主要是为那些一个月才来一次的游客准备的。相比之下,巷子里的厨师每天都在为同样的退休渔民、修车师傅和学校老师提供餐点。她绝不能端出一碗糟糕的食物。品质如一就是她唯一的招牌。

    这正是你应该遵循的觅食逻辑。

    Cho Vung Tau — 请在早上 7 点前到达

    Vung Tau 的中心市场大致位于 Nam Ky Khoi Nghia 和 Xo Viet Nghe Tinh 两条街道之间,这是最明显的起点。但大多数游客在上午 9 点后才到达,那时最好的摊位早已卖光并收摊了。

    请在早上 5:30 到 7 点之间到达。穿过农产品区,走向内部的美食广场。寻找那个围着最多人、桌子最小的摊位。那通常就是最好的选择。

    你吃到的东西每天都在变,但常客们通常是为了 "banh canh cha ca" 而来——这是一种在清汤中加入炸鱼饼的乌冬面式粗面。一碗大约 30,000–35,000 VND。这里没有菜单。如果不确定点什么,指指旁边人正在吃的东西即可。

    鱼饼是当地产的——Vung Tau 坐落在一个繁忙的渔湾——这里现做的 cha ca 与游客餐厅里那种像橡胶一样的鱼饼有着天壤之别。

    Lang Ca Ong 后面的巷子

    Lang Ca Ong 是位于 Hoang Hoa Tham 街上的鲸鱼庙,这是一个非常值得一看的文化遗址。“Ca Ong”(鲸鱼先生)崇拜是整个越南南部 (베트남 / 越南 / ベトナム) 的沿海传统;这里的渔民至今仍会举行年度仪式。

    但在庙宇建筑群的后方和侧面,有一片午餐摊位,营业时间大约从上午 10 点到下午 1 点,之后就会消失。没有招牌,只有人行道上的塑料凳。

    这里必点的是 "com tam" ——碎米饭——特别是最靠近庙宇后门的那家摊位。她做的猪排用香茅腌制得非常入味,不仅闻着香,吃起来更是满口留香。配上鸡蛋、腌萝卜和鱼露:45,000 VND。她没有电话号码。只要天气不错,她明天就会在那儿。

    流动的汤面摊

    Vung Tau 街头美食中让游客感到困惑的一类是 "ganh hang rong"——即挑着扁担、两头挂着篮子的流动摊贩。你会在后滩 (Bai Sau) 北部的住宅区,特别是在 Thang Tam 和 Nguyen An Ninh 区域的清晨看到他们。

    这些摊贩通常只卖一样东西:"hu tieu" 或类似 "bun thang" 的汤面,都是用挂在扁担篮子间的木炭炉现煮的。一碗价格在 25,000–30,000 VND 左右。第一次拦下他们可能会觉得尴尬;只需与他们眼神交流并竖起一根手指,他们就会停下来。

    汤底通常是猪骨熬制的,比固定摊位的汤底更清爽、更轻盈,因为摊贩舍不得浪费一滴汤——他们挑着所有的家当。

    去环岛买 Banh Mi,而不是去店里

    Le Loi 街上有一家评价很高的 "banh mi (반미 / 越式法包 / バインミー)" 店,味道确实不错。但工作日的早晨请跳过它,转而寻找 Le Hong Phong 和 Nguyen Truong To 交汇处环岛旁的那位推车大婶,她大约在早上 6 点到 8:30 营业。

    她的面包来自两条街外的面包店,送来时还是热的。肉酱是自家制的。她一小时大约只做 15–20 个三明治,完全没有赶工的压力。价格:20,000–25,000 VND,视配料而定。她没有入驻任何外卖 App,也没有二维码。

    如何亲自找到这些地方

    方法很简单,在越南各地都适用,不仅仅是在 Vung Tau:

    留意脚踝高度的塑料凳。 一般来说,座位越低,当地人就越多。

    跟随体力劳动者。 建筑工人、环卫工人和摩托车修理工吃得早、吃得便宜且吃得好。如果早上 6:30 有五个人蹲在同一个摊位旁,那一定是有原因的。

    询问你的民宿老板,而不是酒店前台。 酒店员工会把你送到有英文菜单的地方。而家庭民宿的主人会告诉你她自己平时在哪里吃早餐。

    学会两句短语: "Cho toi mot to"(给我来一碗)和 "O day co gi ngon?"(这里有什么好吃的?)。发音可能不标准,但你的努力会被注意到,通常会得到真正的推荐,而不是敷衍游客的回答。

    预期心理

    没有英语,没有刷卡支付——请准备小额钞票,如 10,000 和 20,000 VND 面额。不能保证摊位下个月还在;这些非正式的经营方式与个人的健康和日程安排息息相关。吃到什么就吃什么,不要想太多。

    食物的品质偶尔会不稳定,偶尔摊位也会关门。这也是体验的一部分。在二十个这样的摊位中,其平均品质远超任何平台上评分最高的二十家餐厅,而且成本只有后者的三分之一。

    实用提示

    Vung Tau 的街头美食在工作日的清晨 8 点前以及傍晚 5–6 点的晚餐时段最为活跃。周末会有更多来自 Saigon (사이공 / 西贡 / サイゴン) 的游客,一些摊主甚至会周日全天休息。租一辆摩托车(在后滩附近的民宿租金约为每天 120,000–150,000 VND)是能够以这种方式深入觅食的唯一可行手段。
